Chili Lime Pumpkin Seeds

Last night was pumpkin carving at our house,

In a skeleton shirt with a pumpkin

fabulous company

and quite possibly the most random and festive snacks.

I actually ate corn last night, too. It’s never been one of my faves, but there’s something to be said about fresh corn, hot off the grill, and seasoned with lime juice, chili powder, jalapeno marinade, a little butter, and lots of cayenne.

It made me feel like I was walking around the street fair 🙂

After our random meal of justice, it was pumpkin carving time along with the Halloween station on Pandora.

Of course, we roasted the seeds, and munched them while we watched a movie.

Chili Lime Pumpkin Seeds

Ingredients

Scale
  • 2 T melted butter
  • chili powder
  • garlic powder
  • sea salt
  • cayenne
  • lime zest + juice from 1 lime
  • pumpkin seeds, removed from pumpkin guts, NOT rinsed

Instructions

  1. Preheat oven to 350.
  2. Toss the seeds in the butter to coat and spread evenly across cookie sheets.
  3. Season well and bake for 10 minutes.
  4. Flip, re-season and bake for 10 minutes more. [<---ours slightly burned, so I’d prob bring the temp down a little, unless you like them like that!]

    omg that SHIRT!!! love it. and that corn – sounds amazing! there’s a mexican place in philly that serves corn like that but tops it with chihuahua cheese. sooooo good

    I love your shirt!!!! I had my little guy in a zebra costume and it took about 8 smarties to get a good picture before he screamed loud enough to take the head off… ha. Happy Halloween!!

      that’s the part bella hates, too- she could wear the dress all day, but the hat with antennae is not her fave

    Oh my gosh your shirt is so cute and so is Bella’s costume!
    My sister crocheted her cat a candy corn costume (she’s an all black cat so she looks funny wearing a sweater). However her cat has found a way to wriggle out of it.

    that corn combo sounds awesome. gonna have to try that soon. i’ve been craving corn on the cob but haven’t gone for it yet and usually just do salt + butter. this’ll be in the back of my mind till i do it!!

    Gina, Bella looks so adorable! And like she may hate her life a little bit 🙂 I used to stick my boston terrier pups in cute little boker jackets, and they’d refuse to move! Don’t know why dressing the dogs is so much fun… Love your shirt!

    Love your short and Bella’s costume! My dog is pretty tolerant of her coats and sweaters, but she will NOT wear anything on her head. I suppose you can only ask so much of them. haha

    Bella is an ADORABLE butterfly! Made me laugh and cry at the same time. I remember you saying that Bells hates the antennaes. (Chubby would paw them off after a minute!).
