‘Cado love

Brought back something I haven’t had consistently in quite a while:

coffee

the morning cup o’ Joe.

Since I’ve been breastfeeding, I was worried that caffeine would give Liv an extra dose of energy -a scary thought when you’re already partying all night and sleep-deprived- but when I found out that it’s processed the same as alcohol (a glass is totally fine), I was pretty excited. Even though we’ve all been snoozing well for the past couple of months (knock.on.wood), I still love having a cup of coffee in the morning.

I also miss my morning glass of green juice for energy, but it’s way easier to pop a half-caf pod in the K-cup maker and press “brew” 😉

Breakfast of champions:

egg, fruit and muffin

2 eggs over hard, berries and a banana-almond muffin from the freezer

egg, fruit muffin

This morning, I’m going to start a baby meal to take over to some friends tomorrow, then TurboFire and swimming with friends this afternoon.

Today’s #smoothie a day will feature new-to-me coconut milk from Trader Joe’s:

coconut milk

love that it’s fortified with extra nutrients (on top of all of the amazing benefits of the coconut) and it has the same amount of calories as our usual almond milk.

Also grabbed some Avocado’s Number Guacamole, which is like the TJs version of Wholly Guacamole (which I LOVE on zucchini chips and salad):

avocado

I love anything avocado and am always looking for new ways to enjoy one of my favorite healthy fats. Ever since I start emphasizing healthy fats and protein, I’ve noticed a huge difference in my skin and hair. While I’ve always had super thick hair, it used to look pretty dull to me –especially before I got into raw foods. Since then, it’s actually been shiny.

Besides the usual salad toppings and wrap/sandwich fillers, here are some of my favorite ways to enjoy avocado:

Chocolate-avocado pudding

pudding1

With honey and sunflower seeds

cado

Guacamole

guac

For texture (instead of a banana) in a smoothie

smoothie a dat2

And some new things I’m excited to try:

Guacamole hummus dip

Green Goddess grilled cheese sandwich

Lemon-dill avocado dressing

Smashed chickpea and avocado salad sandwich

Cucumber and avocado summer rolls

Avocado pita pizzas with cilantro sauce

Are you crazy for ‘cados? What’s your favorite way to enjoy them?

chicken, kale and cado

Hope you all have a happy Monday <3

xoxo

Gina

Just for fun:

I am brand new to avocados… they always looked weird to me so I avoided them, but I bought one a couple of weeks ago to experiment with. I made this dressing: http://www.yumsugar.com/Green-Goddess-Dressing-Recipe-13019032 I loved it! I am going to make it again this week to have on salads instead of dipping vegetables into it, which is how I used it last time.

I’m not sure about mixing it with chocolate… I will have to muster up the courage to try that. I’ll definitely give putting avocado in a smoothie a shot though – I don’t ever put bananas in mine since I don’t like them, but it’d be nice to get the creaminess in other ways.

I really like diced avocado, halved cherry tomatoes, a little red onion and lime juice tossed together as a potato topping!

  3. AJ on May 21, 2012 at 12:14 pm

I am moderately to completely obsessed with avocados at the moment. Love them! My new favorite way to enjoy them currently is in dressing form on this salad: http://veganyumyum.com/2010/01/avocado-wasabi-salad/

    So tasty!

I love putting avocado on my sandwiches and of course in guacamole! 🙂

  5. Kerry @ Totes My Oats on May 21, 2012 at 12:15 pm

Lately I am loving egg and avocado sandwiches! They’re such an amazing food!

  6. Julie @ Running and Riley on May 21, 2012 at 12:16 pm

‘Cados on burgers are one of my all-time fav’s!!! And the little comic at the end of your post is HILARIOUS! hahaha

  7. Sarah on May 21, 2012 at 12:17 pm

I love a raw soup with avocado. Just put some fresh carrot juice in the blender with an avocado, add some indian spices, and blend it up! My little baberoni enjoys it too, so I don’t add salt to it.

Also, I totally laughed about the coffee vs green juice. Ideally, I start my day with a green juice, but sometimes with a baby… you just go for the quick way! Feel ya!

  8. Amber @ Busy, Bold, Blessed on May 21, 2012 at 12:18 pm

I’m obsessed with guacamole!!!! I’ve never put avocados in a smoothie… maybe something to try this week! Think I’m headed to TJ’s tonight!

  9. Liz @ Southern Charm on May 21, 2012 at 12:25 pm

I’m torn!! I love avocado as a dressing, but I also love them fresh with my eggs in the morning … and now I’m craving some! haha.

  10. Faith @ For the Health of It on May 21, 2012 at 12:25 pm

I love them on California-style eggs benedict instead of Canadian bacon. Of course, they’re always a welcome addition to my salads as well!

  11. Lissa on May 21, 2012 at 12:28 pm

My husband teaches middle school. “Does it smell like up-dog in here?” is his favorite joke! 🙂

  12. Liana on May 21, 2012 at 12:34 pm

love avocados!!! … guacamole, sandwich, salad … my only problem is that here in Italy it’s difficult to find tasty ones just unripe or too ripe !!!! 🙁

  13. Laura @ She Eats Well on May 21, 2012 at 12:37 pm

Mmm I love avocado. My mom is a chef and it is the one food she doesn’t like. I do not understand!! I love eating it plain with some salt :). I am curious about the chocolate pudding!

Did you ever do a “focus-on” Turbo Fire? If yes, can you point me in the right direction? Thinking about buying it…

  16. Katie on May 21, 2012 at 12:59 pm

I’m obsessed with avocado! I just had one on a home-made burrito for lunch today. 🙂 That’s funny you mention your skin and hair benefiting from it. I didn’t make that connection this morning when I thought my hair looked really full and shiny (compared to the fine and oily it usually is). I love healthy fats! 🙂

  17. Brigid on May 21, 2012 at 1:01 pm

I’m an avocado fiend! I especially love them in a wrap or as guacamole. I would eat an entire one every day if that weren’t a little unreasonable. 🙂

  18. Meredith on May 21, 2012 at 1:08 pm

Avocado favorite? In my belly! 😉 Super-ripe, smashed and with smoked sea salt and nutritional yeast is a favorite right now. Especially yummy in a brown rice wrap with lots of sprouts/sprouted lentils, some yellow mustard, and some chickpeas. Cold or heated (heated with melt-y cheddar Daiya is amazing). In my lunch today: mixed together avocado, heirloom tomatoes from the farmers market, balsamic, cracked pepper, sea salt, nutritional yeast. Also loving avo + roasted beets.

  19. katie on May 21, 2012 at 1:11 pm

I eat 1/2 – 1 avocado a day. My favorite is usually 2 eggs with hummus and avocado and brown rice tortilla wrap.

  20. Rachel on May 21, 2012 at 1:16 pm

    LOL! Updog! Awesome.

Why don’t you still have green juice?

    • Fitnessista on May 21, 2012 at 1:17 pm

i do, when whole foods makes it for me and i don’t have to clean the juicer 😉

  21. Madison @ Pilates Makes You Happy on May 21, 2012 at 1:16 pm

I am always so impressed with momma’s who stay away from coffee and caffeine, yet another one of the amazing sacrifices that mom’s make for their babies! I hope you enjoyed your first cup of coffee!

    • Fitnessista on May 21, 2012 at 1:17 pm

it was SO good. it was hard to skip out on it before i got pregnant and during pregnancy.. i love coffee in the am 🙂

  22. Jenn on May 21, 2012 at 1:28 pm

i love anything with avocado, but, my favourite way is: sliced avocado, a steaming bowl of brown rice, couple drops of soy sauce and sesame seed oil! when im feeling extra fancy, ill top it with 1 egg with runny yolk and extra protein :)) YUMM!!!!

  23. Deanna on May 21, 2012 at 1:40 pm

I love avocados. I eat at least 1/2 an avocado everyday. My favorite is in an egg sandwich. Sourdough toast with 1/2 an avocado mashed onto it, salt, fried egg, and lots of chipotle hot sauce (there’s a garlic chipotle sauce that I’m particularly in love with. In fact, I’m making a trek over to Whole Foods today because my bottle is almost out.

  24. Jessica@Fruit and Veggie Tales on May 21, 2012 at 1:41 pm

We love avocado around here! My kids eat it with sea salt and call it a day! I like it that way as well and we always add it to a green smoothie with lots of greens, half an avocado, mango, pineapple, blueberries and coconut water which is my son’s favorite smoothie ~he’s 19 months! 🙂

  25. Talia @ Bite Size Wellness on May 21, 2012 at 1:54 pm

I have an extreme ‘cado obsession! When they are at their freshest…melt in your mouth good. I love to use avocados as a spread to replace mayo on my sandwiches or turkey burgers.

  26. Jocelyn @ Peace Love Nutrition on May 21, 2012 at 2:00 pm

I’m trying to reduce my coffee intake. I’m in such a routine with it and I love the taste right now that it’s hard to break. I almost need a baby to force this ; )

    Enjoy it!

  27. tanya on May 21, 2012 at 2:07 pm

I love a mashed up avocado mixed in with my tuna instead of the usually mayo. I also add a little cracked black pepper!

  28. Tamara on May 21, 2012 at 2:11 pm

Goodness, all of those avocado recipes look lovely! I keep forgetting to pick some up to try in a smoothie. I’ll have to remember to do that soon. That and the smashed chickpea and avocado salad sandwich will be in my near future… Thanks!

  29. Danielle on May 21, 2012 at 2:12 pm

Love Avocados!!!! My favorite is with eggs, or as a snack sprinkled with sunflower seeds!

  30. Nellie on May 21, 2012 at 2:26 pm

I can’t help but notice that the ingredient list for the Coconut Milk is nine lines long. Shouldn’t coconut milk contain just coconut and water?

    • Fitnessista on May 21, 2012 at 2:34 pm

yeah, it should be- almond milk should also just be almonds and water (maybe vanilla, lecithin and a little sea salt) but that’s if you’re going to drink it within 3 days of making it
they have to add in additional ingredients to preserve it and while they aren’t ideal, i’d rather drink that than hack up a brown coconut (which is pretty tough!)

  31. Whitney @ Whit Likes Fit on May 21, 2012 at 2:29 pm

Guacamole by far is my favorite way to enjoy avocados but I also love them sliced up on turkey burgers. And lately, I’ve tossed frozen avocados into my protein smoothies. You get the good fat and a super creamy drink.

  32. Amanda Perry @ Sistas of Strength on May 21, 2012 at 3:01 pm

I am obsessed w/ avocados too! Usually I cut them up for salads or use guac on my salad or eaten with chips and veggies. The cocoa pudding is definitely on my to-try list though.

  33. Lisa on May 21, 2012 at 3:31 pm

Yay for coffee in the morning! Hopefully it won’t keep Liv up later on. I love avocados! I definitely love to freeze them when they are ripe and use them for creaminess in smoothies as well. It’s extra creamy when a banana is included as well. And also guacamole, of course. Going to check out those recipes, I just bought 12 avocados…and I live alone…oopsy

    • Kristen on May 21, 2012 at 4:02 pm

How do you freeze them? Do you peel them and just put them in a freezer bag?

  34. Kristen on May 21, 2012 at 3:59 pm

I think I hear that avacodo hummus dip and the summer rolls calling my name! Can’t wait to try those.

  35. Molly Petsch on May 21, 2012 at 4:10 pm

This is random and my husband absolutely hates it but I LOVE shrimp mixed with 1000 island dressing, served over avocado halves. SO yummy!

  36. Colleen on May 21, 2012 at 4:14 pm

I like mixing chopped avocado with brown rice, TJ’s cooked shrimp, cilantro, and a little lime juice. Easiest and tastiest lunch to pack!

  37. Ashley @ My Food 'N' Fitness Diaries on May 21, 2012 at 4:48 pm

i LOVE avocados too. i’ve been putting them on anything and everything i can think of! from sandwiches to salads to quesadillas to just eating them raw with a little salt. i just tried part of one in a smoothie last week and i loved it. it made the smoothie super creamy and thick. yumm!

  38. kelly on May 21, 2012 at 4:59 pm

I love avocado smashed on toast along with eggs for breakfast. Best food ever!

  39. Ashley on May 21, 2012 at 5:37 pm

I went from hating avocado, to liking guacamole, to being full-on obsessed. You can catch me eating mashed avo with salt on toast multiple times a week. Topped with goat cheese, of course! Thanks for the shout. 🙂

    • Fitnessista on May 21, 2012 at 10:30 pm

      of course! miss you, friend

  40. Lindsey on May 21, 2012 at 6:07 pm

I am avocado obsessed! I love eating them on their own, on sandwiches or wraps, spread on toast, in salads, really any way. I still have not tried avocado pudding but really need to!

  41. JennP on May 21, 2012 at 6:33 pm

I’m obsessed with ‘cados! It’s funny that you called them that, because that’s what I started calling them for some strange reason when I began feeding them to my daughter (“It’s CADO time!”).

I like to dice them up with some halved cherry tomatoes and a little crumbled feta and toss them with lemon juice and olive oil. I also like them mashed on top of chicken burgers. Or in guacamole. Or by themselves. Ha.

  42. Maura @ My Healthy 'Ohana on May 21, 2012 at 6:36 pm

We really like the avocado’s number guacamole and those blue corn tortilla chips from TJ’s! I love avocado in guacamole, or just sliced as a topping for turkey burgers with some melted pepperjack cheese 🙂

  43. Averie @ Averie Cooks on May 21, 2012 at 6:52 pm

I’ve had a free sample of that coconut milk in the store but didn’t need a half gallon of it the day I tried it…but I need to pick some up. I love coconut milk, so much.

  44. Amanda Van on May 21, 2012 at 6:57 pm

I love to slice an avocado in half and pour a little soy sauce in the center and eat with a spoon :). Sometimes with a little ginger on the side. Satisfies my craving for california rolls.

      oh i love that idea!

I have been reading some of your past posts and saw this today. You have to try the Spinach Avocado Caesar Salad. It is so good and my kids ask me to make it all the time. Here is the link – http://recipes.prevention.com/Recipe/spinach-avocado-caesar-salad.aspx

  49. Jessica on May 21, 2012 at 9:31 pm

I love this avocado corn chowder recipe from Busybee Lauren’s blog… It’s basically 2 avocados, corn, salt, pepper, cumin and lime juice all blended up together. It’s a great raw food recipe for summer!

  50. Kate on May 21, 2012 at 9:39 pm

Two of my favorite things- coffee & avocados! Avocado is always a welcome addition to my plate or cup, but I have a special place in my heart for turkey and avocado combos. Yum!
