Chicken Cordon Bleu-ish

(More like “chicken cordon goat” but that just sounds weird)

Hiiii 🙂 Thank you for all of your wonderful feedback on our new YouTube channel! Thank you to all of our new subscribers — I’m excited to see the channel grow and post more videos.

My legs are STILL sore from Saturday night’s dance party… guess it had been a while since I got low haha. The best part was that nerdy dancing was ok, and I appreciate that.

Everyone called me into the circle to dance and I could not tell you what I did. Pictures will tell, I guess 😉 Those prickly pear margaritas were very nice.

So far this week, Liv and I had just been hanging out with the pups – it’s been relaxing and wonderful.

Yesterday morning, we went to an eye doctor appointment (which could have been a disaster, but she was super patient and awesome), have been chilling outside playing soccer when the sun starts to go down,

and we had some delicious chicken for dinner.

I wanted to experiment with a quick and healthy version of chicken cordon bleu, and when I looked in the fridge, we had all of the ingredients ready to go. I cut slits down the sides of the chicken breasts, stuffed with rolled maple turkey, goat cheese, and topped with olive oil, sea salt, pepper, garlic powder and smoked paprika. I baked them, along with some red potatoes, and served with salads. It was a super satisfying meal -the Pilot loved it, too- and it only took about 10 minutes to put everything together.

The Pilot did the bedtime routine with Oliv while I went to yoga hour, and during class, the instructor read an awesome quote.

The word of the day was “peace” and the fact that it’s something you have to seek out and make time for. It’s so easy to rush around, pack your plate full of to-dos and forget to enjoy stillness in your daily life. Creating time for peace is something that’s become one of my goals this past year, and while it’s definitely a work in progress, I can already notice a huge difference on the days I take time to just slooooowwwww down and enjoy.

Every time I practice yoga, I can’t help but wonder what it would be like to teach. It’s something that I love so much, but selfishly, it’s something I want to have that’s just for me. When you teach a class format, a lot of construction and planning goes into the class, which gives a very different experience than just doing and enjoying. At the same time, I feel like by going through teacher training, it would depend my personal practice, even if I don’t have the intention of actually teaching. Maybe it can be a goal for the very distant future.

If you could teach any class, what would you choose? Is there something you love to do that you’d never want to teach?

    I must be in one of those moods because I read your entire post and for whatever reason am still smirking/giggling over “chicken cordon goat”. That sounds soooo terrible in print – ha ha 🙂

    What a great backyard for Liv to play in. Looks like her ball is bigger than she is!

    I would highly recommend a yoga teacher training program 🙂 Even if you never actually teach, it will change your life. My yoga teacher training is still one of my most cherished memories, and it really did change my life in so many ways. If you are thinking about it, I say go for it! I have never met a single person who regrets doing their training 🙂

    I am just wrapping up my own yoga teacher training journey – I “graduate” this weekend, and I can honestly say that it’s been one of my best decisions to date. I have learned so much about yoga and about myself, I have deepened my practice, and I have made such amazing connections with others. I know that as I progress forward and begin to teach, I will keep up my own practice, as well. Just know that it was extremely time consuming (every other weekend on Friday night, full days Saturday and Sunday for 8 full weekends, along with homework/reading outside of class and a requirements of taking 60 classes during that time period). So worth it, though!

      Love hearing this! I’ve toyed with the idea of doing this myself. But the financial investment is huge…The location that I would do my class through the investment is about $1300. Do you know if that average?

        I think that is definitely the norm. Mine was $2,000 but they had payment plans available to make it more manageable. We also got free unlimited yoga at the studio during that time, which helped a bit. I’ve just been a bit more conscious about what I’m spending these days and I figure if I actually start to teach, I will make it back at some point! Definitely an investment in yourself, but like I said … it’s really wonderful!

    That chicken looks superb! And it’s hard to make chicken look good.
    Well, just last weekend I became a pilates instructor, which I’ve been wanting for a really long time now – so for now I’d go with that!! It was such an amazing program! Can’t recommend it enough to anyone!
    I also want to take a barre course too now, but I can’t find any in my area, so I may need to travel to take it, but I think that would be awesome.

    Yummy!! Goat cheese is my fave so I will be trying this out for sure!
    I’ve always wanted to get certified to teach Body Pump but no where in my area offers the class so its kind of a pain! I’d also love to teach Barre!

    Yesterday in yoga my instructor (Larry at THRiVE here in Houston) said that for one hour a day, in your yoga class, it’s okay to be selfish. To put everyone and everything on the back burner and focus on YOU. When you leave class you’ll be energized and open to responding to everyone else and their needs in a whole new light. His words hit home — I realized if you don’t make time for yourself, you end up resenting.

    I actually think pilates reformer would be a class I’d both love to teach and be scared to teach. It’s by far my favorite workout so I’d love to teach other people and help them love it as much as I do but it’s so much about form and alignment that I’d get nervous I wouldn’t catch something or tell something to do something wrong. So much pressure.

    I’m a yoga instructor and there is a lot of planning that goes into those sequences! When I was doing my training, my personal practice grew SO much. I was doing yoga 7 days a week for 3 hours everyday, but loved every minute of it. The one thing I’ve noticed when I practice at home I avoid the most challenging poses for me. So I like to take classes so I can always improve.

    Do you have a favorite goat cheese brand? Since I’ve found out that I am allergic to cow’s milk I have been eating a lot more goat cheese, but I’ve found that I either love the taste or hate it. Unfortunately I didn’t write down the brand that I loved and there seems to be a lot more misses then hits lately…

    I make a similar version with havarti cheese – I actually forgot to bread the roll ups before baking them once and ended up liking it even more! I would teach yoga – I’ve actually been thinking about recently.

    I would love to teach barre and cardio dance/Zumba! I used to teach Les Mills’ BodyJam but there are no classes in my area. I actually love yoga but wouldn’t really want to teach it!

    Oh that chicken looks and sounds so good! What a great combo idea. I also work on my daily peace by doing a morning meditation. It is hard in the beginning but today it is a routine that just happens every day.
    I would love to teach any kind of dance class or a good old aerobic class! And I too, would love to do a Yoga teacher training without teaching.

    I love this post! I don’t even know where to start!

    I love that you wrote down that stillness is essential to peace. I am shocked every day that I take time during the day to just be. It’s even better when I can just sit outside on a beautiful day and soak it all in.

    I have definately toyed with the idea of becoming a yoga instructor. I am currently a Math teacher so yoga would be a far leap for me, but I’ve thought about it because I love it so much.

    I will have to try this chicken cordon bleu! Sounds delicious. Evening yoga is the best. Talk about ending your day on a positive and relaxing note! Planning to head to a class later tonight!

    I agree that it is so important to take time to breathe, recharge, and find your inner peace. Yoga classes that involve aspects of meditation and focusing on inner harmony are great for that! So I suppose I would want to teach a class like those 🙂

    i actually really love science but i’d hate to teach it. a year before i graduated i made the decision to forgo my education masters bc i would just get so frustrated trying to teach high schoolers. i’m locked into research and for me it’s the perfect choice!

    I’m getting my certification to teach spin here in a few weeks and after that I was considering taking on a yoga certification. I have a full-time job, but I am already at the gym every night and enjoy spin/yoga SO much more than any other group ex classes that I’ve attended, that I figure being able to teach is just the next step in my fitness journey! (And it doesn’t hurt to get paid to get your workout on :)!)

    My friend is in teacher training for Yoga currently and she doesn’t even know that she will teach, but she did it more for herself. I think it’s a great idea if that’s how you feel :).

    I love all the discussion about teacher training. For me it was life and career changing. I do feel like there is a missed step in our yoga offerings though. One should be able to go to an offering to deepen their practice and one should be able to seek training to lean to teach. In my experience teacher trainings scrape the surface of so many facets of yoga and thats why people attend to deepen their yoga experience, but students should be able to do that as a separate from learning to lead others.

    I love Pilates and think I would like to teach it. I’m not currently working, but as I consider going back to work part-time, I think I would really enjoy doing something in health and fitness, since I’m so into it. I also love encouraging people to get fit. I’m not sure where to start, though, any recommendations?

    I teach yoga and initially when I began yoga teacher training I had major reservations about losing/ giving up some of the more abstract and healing aspects of it that I loved so much as a student. I was so delighted that teaching yoga turned out to be just as moving and gratifying an experience – just in a different way. The teacher training process is so focused on self-exploration and development that I think its worthwhile for anyone and everyone to take, even if they have no desire to ever teach. Highly recommend it!

    BIKRAM! I wanted to teach for the longest time, but now that I have Tripp, no way. I know that between spending time with him and teach the classes, I’d never practice. You couldn’t pay me enough money to stop practicing Bikram. 🙂

    In my experience teaching yoga, it becomes its own practice that is just as glorious. At first it was difficult and uncomfortable but then I stopped having to think about it. Now when I am calling out the flow I am in the moment and it’s almost like the energy in the room dictates the next pose. That may all sound crazy and weird, but if it’s something you’re interested in I would totally go for it. Your practice is still you own, teaching is just an additional practice that also leaves you feeling amazing afterwards.

    I think I said a while back that I thought you would make an amazing yoga instructor! I can tell you would have that perfect mix and calm insight and playfullness that makes a great teacher. But I completely understand about wanting it to be your thing, almost like an escape. If you make it work, will it change? I don’t know, I feel like so many yoga teachers really love and cherish teaching. You should keep it in mind, for sure!

    Also, that chicken looks killer. Yum!

    If you’re even thinking about it, do yoga TT. I know tons of people who have done it with no intention to teach… It’s a great chance to deepen your own practice. With the little princess still so little, maybe this isn’t the time for you, but you’ll know when it feels right. I loved my primary teacher training and every advanced one I’ve done since.. It’s a whole other world of crazy amazing.

    You should definitely teach! Think of how much you could help people, its such a portable skill! Plus, Military bases and posts are having soldiers/airmen take yoga classes during their R&R and those struggling with PTSD. I taught at our last base and loved watching the transformation of the service members. 🙂

      wow, that’s amazing. and you’re definitely right about it being a portable skill. it’s not in the budget for us right now, but definitely something to think for the future, maybe when liv is in school

    This post was great in two ways for me – I just happen to have some goat cheese (which I love) and some chicken in the fridge to make the recipe you mentioned – which just happens to be my husband’s favorite recipe.

    Also, I teach and love to take bootcamps. The more intense and high energy it is the better in my book. However, as a trainer I also see the benefit in yoga/pilates to focus on stretching and calming the mind/body. I find that calming my mind and sitting still and quiet in a yoga class very challenging for me. Like I said I like the intense and fast-paced workouts. I am training myself to slow down – however, I guess I have a long way to go before I would be a good yoga instructor. I think I will keep that for myself right now as well.
