Crockpot chicken enchiladas

Wednesdays have pretty much become crockpot day in our house. This is because when I get home from teaching, I want to EAT… and I also want to snuggle with Livi and not be on my feet anymore. As much as I love to cook, it’s one of the last things I feel like doing at the end of a work day. I just want food to magically appear, and then eat it.

Luckily, the crockpot allows that to happen. I come home on my lunch break, throw a couple of things in (usually in 10 minutes or so), press start, and dinner is waiting for all of us when we finish our day.

Winner winner, chicken enchiladas for dinner.

One of things things I love the most about Mexican food is the ability to simplify as needed. There are the types of meals with labor-intensive instructions, a variety of ingredients (and spices!), and then there are the easy peasy enchiladas and tacos of the world. For this meal, I realllyyyyyyy simplified, and outsourced some help from my friend Jose.

I don’t particularly love the salsa verde (it’s kinda salty and not very spicy), but it makes a fantastic enchilada sauce.

Some sauce in the bottom of the slow cooker, then I rolled up enchiladas using shredded chicken (cooked last night along with our dinner chicken, seasoned with olive oil, salt, pepper, garlic and cumin) and some shredded goat gouda.

We had these blue corn tortillas on hand, which are pretty flaky little buggers.

They break apart, even if you heat them up first, so this is where some soft, regular corn tortillas would have come in handy. For now, we’ll just be enjoying some rustic enchiladas 😉

I poured more salsa verde on top, some crumbled goat cheese and set it on low for 4 hours.

A perfect dinner atop salad greens, rice (also cooked last night) and black beans (with garlic, salt and cumin).

Some other things of lately:

It’s been 80* here (supposed to get cold again next week), so Liv and I have been taking advantage of the gorgeous weather.

Lots of outdoor excursions, including a trip to the zoo and a picnic. It feels like spring, and the warm weather always makes me so happy.

See that thing in my shoe? It’s a mic ball. (We each carry our own mic balls for teaching and one somehow ended up in my shoe.) The entire workout, I kept thinking my shoe felt a little funny….. At least I’m always prepared to teach, right? 😉

I tested out another Winter Shape Up workout and CAN’T WAIT for it to begin (January 28th!). I’ll be following along the plan, too.

    I don’t know what “cold” means for Tuscon…but it was -15 here in Buffalo today! So needless to say I am uber jealous of your 80 degree weather! Also, those enchiladas look delicious! I, surprisingly, am a fan of those crumbly blue corn tortillas!

    Yay, thanks for the recommendations on the salsa! Salsa Verde is my favorite but I am super picky becuase my mom’s is so darn good. I can’t wait to give TJ’s version a try!

    I bought that salsa when I visited the US but I haven’t used it yet! I’m definitely going to make enchiladas with it now though. 😀

    That’s funny, we’ve been thinking Wednesday should be a crockpot day in our house too! We play vball Wednesday nights and I just want dinner to be ready when I get home from work so I’m not rushing around like a crazy person and scarfing down dinner right before playing. Yesterday I did a whole chicken in the crockpot, so easy… and now we have chicken leftovers for later in the week. I’m thinking buffalo chicken, nom nom!

    80 degrees?! It’s in the teens here… high in the low 20s and I’m going out into the field for a meeting. SO jealous! Enjoy!

    Glad you have nice weather to take advantage of! I’m hoping we get above freezing today because I wanted to get in an outdoor run (and I’m a cold weather wimp!).
    The crock-pot is the greatest thing ever in the kitchen!!! Those enchiladas sound great!

    Those enchiladas look great- I’ve never seen blue tortillas before actually (although guess that makes sense that they exist — where else would blue tortilla chips derive from?).. I’ll have to try them in the crock pot!

    We usually have at least one Crock Pot day a week in our house. I love the idea of doing enchiladas in it! We LOVE enchiladas over here, so I definitely need to try it out one of these days. I’m so jealous of your 80* weather! It’s been ugly and just frigid here. Spring fever is in overdrive for me!

    I recently discovered that you can cook sweet potatoes in the crockpot and my life has forever changed. The crockpot is a must have kitchen appliance! A couple weeks ago I went shopping with a friend and felt like my right shoe was a little…off. In the dressing room I discovered a large earring in the sole. Felt much better after i took it out- ha!

    I’m so jealous of your beautiful weather. I live very far north and with the wind, we’re about -25 (Celsius). It’s cold.

    Stitch Fix is the BOMB DIGGITY!!!! I received my first box yesterday. Loved the quality of the clothing and almost everything that was sent. Within an hour I had picked two dresses, paid for them, and sent the remaining three items back! I love this way to shop!!!!

    Try getting the tortillas wet and then heating them up. It should prevent the breaking.

    I am so excited about the Winter Shape Up! I’ve been waiting patiently for it to start. I had my 4th (!) baby six months ago and I have about 20 more pounds to lose. Can’t wait to get this last bit of weight off for good!

    and thanks for the enchiladas recipe! I’ve never actually made them at home… but the Boy LOVES them… I should try this recipe!!! I gotta find our crockpot first though… I think the Boy left it with his roomies at his last house 🙁 oh, and anything with blue corn is a win for me! I had a blue corn waffle in NM last week- CRAZY GOOD

    liz is getting so much hair, and growing so fast!! ahhh! She is such a sweetie though! I hope I can meet her someday!

    I know you’ve talked about goat dairy vs cow dairy before – do you have any specific posts about it? I think I remember something about your preference being for goat dairy. Is there a health reason for that, or just personal? I love goat cheese (TJ’s Goat Chevre for the win!), and have been topping toast with goat chevre and avocado for breakfast.
