Easter and weekend

What a weekend  <3

The fam on easter 1 of 1

Hope that you all had a wonderful one, and that those of you who celebrated Easter enjoyed a memorable holiday with those you love. We decided to stay here in San Diego, and even though we missed our Tucson fam, it was nice to get in another weekend of unpacking and settling. Things are still falling into place and normalizing over here. I’m still waiting for that moment to happen when I actually feel like we’ve moved.

A kick of motivation to get rid of boxes and finish putting things together: invite friends over for dinner 🙂

For Friday night’s fiesta, I made a little Mexican feast, with tequila sangria:

beans,

cilantro-lime rice,

enchiladas (cheese, using fresh tortillas from the market and homemade sauce)

guacamole and salsa with chips,

tamales (madre left us a stash in the freezer!)

and dessert: brownie fruit pizza.

Saturday, we were invited to my friend Kelli’s birthday party, which was an absolute blast. Livi had toddler friends to play with, we ate delicious tacos and enjoyed wonderful company, and the party details were seriously amazing. Just one example: sundae bar!

Sundae in a jar

Each guest got a mason jar filled with vanilla ice cream, and there was a topping bar set up with crushed Oreos, nuts, candies, chocolate chips, caramel sauce, and sprinkles. Insane.

Sunday morning, the Easter bunny made a stop at our house:

Livs basket

and we had a little egg hunt in the backyard and patio.

I feel like I say this every holiday, but she makes them so much more fun and magical. She cracked us up looking for the eggs and was so excited to see the Easter bunny had snacked on the spinach and carrots we left out for him.

We had breakfast here at home (sweet potato hash, eggs and bacon.turkey bacon) and went over to Whitney’s family’s party for linner.

It was a lovely weekend, and we’re thankful to our awesome friends here in SD who have adopted us 🙂

Hope you have a happy Monday!

See ya later today with my favorite new salad combo.

xoxo

What’s something fun you did this weekend?

Any awesome workouts? I got to try BodyCombat for the first time, and I LOVED IT. It was very similar to a standard kickboxing workout, but included some international elements (like capoeira). The moves are choreographed to perfectly match the music, so it was an energizing and enjoyable class. I’d definitely take it again!

It sounds like you are settling in just fine! It’s nice to have friends right away when you make such a big move. Your weekend sounds lovely. Your dessert brownie looks beautiful. We did an egg hunt yesterday and my one year old had a blast, I agree the holidays are more magical with kids for me too.

I’ve heard wonderful things about combat! I wish my gym offered it!

Glad you tried another Les Mills class. Have you ever taken BODYATTACK or CXWORX or BODYPUMP? I teach all three. BODYATTACK is probably my favorite because of the plyometrics, cardio and sports moves. You’ve got to try it. 🙂

I love the brownie fruit pizza idea! I made a massive cookie/cookie-pie this weekend and now I feel like all cookies and brownies should be made into pizza and pie formats.

BodyCombat is seriously one of the most fun (and butt-kicking) workouts on the planet. Been doing it for close to a decade and it’s still hands-down my favorite. Give it a few weeks and you will be hooked!

I love that you leave a plate of munched vegetables to symbolize that the easter bunny has been to your home! That is adorable, I’m so going to use that when I have kids!!

    • Fitnessista on April 21, 2014 at 6:09 pm

it was really fun to set them out for him with liv. she loved it!

  24. Angela @ Eat Spin Run Repeat on April 21, 2014 at 4:34 pm

Sounds like a great Easter! I love your dress, the looks of that fruit pizza, AND BodyCombat! It’s one of my fave LMI programs (aside from RPM which I’m certified in, so I guess I’m biased!) and I’m so glad you enjoyed it too. BodyPump always seems to get all the attention but the other programs are just as good in my opinion. 🙂

I’m a BodyAttack girl, but took Combat yesterday for the first time too and woke up deliciously sore all over today, especially back and glutes. I’ll definitely be taking again!

I love your dress! It looks great on you!

Fruit pizza is a favorite dessert of mine, but I’ve only had it on sugar cookie crust. Brownie sounds like a great idea!

  33. Stephanie @ Whole Health Dork on April 22, 2014 at 1:00 pm

So many good eats! I want to invite myself to your house for dinner. Of course, I’d have to come all the way from the East coast, but I think it would be worth it. 😉

Went on a lovely run Friday night that I thoroughly enjoyed. The weather in Massachusetts is finally feeling more spring-like (most days are finally 45 degrees+) and I am loving it!
