Enchi’s and Jokers

Hi guys! How’s your day been? Mine has been pretty bueno- just finished a Turbofire sesh (Fire 45) and am getting ready to head back to work.

Snacks today have been random:

enchi

The last enchi (recipe at the end of this post) with spinach and pico

A giant apple, microwaved for 2 minutes with cinnamon and topped with some vegan chocolate chips

apple

Chocolate Gluten-free Koala Crisps with almond milk and 1/2 scoop Sun Warrior

cereal

My sweet tooth has been RAGING today! 😀

I loved reading your comments this morning about whether you prefer a male or female doctor. For the most part, ya’ll agreed that it didn’t matter as long as said doc was knowledgeable and caring, unless is was the hoo hoo dilly doc, in which case most would prefer a girl. 🙂

Well, this morning I had that appointment to get some blood work done and ask the doc some questions (a male), and I’ll go ahead and say I’ll probably ask to see another doc next time. Not much ranting goes down on this bloggy (it’s a positive place!), but when I mentioned that I practice Fertility Awareness Method and chart my temperature and other signs each day, he said that Fertility Awareness Method is very inconvenient and time-consuming and he doesn’t recommend it to anyone. Also, everyone ovulates on day 14 of their cycle anyway. Ummm, for real? What a joker. #1: Sticking a thermometer in your mouth for 60 seconds upon waking is not that inconvenient and #2, not everyone ovulates on day 14. Instead of arguing with him, I got robbed of blood (get the results tomorrow) and peaced out of there. (Note: If you have any questions about Fertility Awareness Method, check out *this post* and the book Taking Charge of Your Fertility, which I truly believe that every woman/girl should read)

Well I’m heading back to work, then going to dinner with Jeni –the pilot is doing the flying thang.

Enjoy the rest of your day <3

Gina

Something to do: Make some veggie and goat cheese enchiladas! These are ridiculously easy to make, and so delicious 😀

my plate

Veggies of choice (I used zucchini, tomatoes, onion, garlic, mushrooms would be lovely, too)

-6 tortillas of choice (I used small Ezekiel tortillas)

-2 chipotle chile peppers in adobo, diced (use 4 if you like it supah spicy, like me)

-1/2 t cumin

-1/4 t garlic powder

– sea salt and pepper

-pinch of cayenne

-1/4 C shredded goat gouda

-1 can enchilada sauce (Whole Foods has an awesome one in the Ethnic foods aisle)

1) Pre-heat oven to 350

2) Sauté veggies in a large skillet and season with cumin, garlic, cayenne, salt and pepper. Add the chipotle peppers, heat through and taste for seasoning.

3) Heat tortillas in the microwave for 30 seconds until soft- this will keep them from breaking

4) Pour 1/4 can of enchilada sauce in a 9×9 baking dish and spread around to keep the enchi’s from sticking to the dish

5) Coat one tortilla in sauce, fill with 1/6 of the veggies, and place seam-side down in the baking dish. Repeat with remaining tortillas.

6) Top with additional enchilada sauce so all tortillas are fully coated, sprinkle with goat cheese and baking for 15 minutes until warm and bubbly.

7) Feast

enchiladas (2)

I had a similiar unsettling visit with an on-base doc (she was female) when I actually brought up being uncomfortable with hormonal birth control methods due to my past migraine history she actually furrowed her brow, made a face, and said she’d never heard of such an interaction. She then refused to write me any hormonal prescription if I wasn’t serious about taking it. I had never experienced that kind of unprofessionalism by a doctor before and was so upset/angry I filed a complaint. Thinking every woman ovulates on the 14th day is why I see 4-5 kids per family at every commissary excursion I go on. Okay, stepping off soap box 🙂

Or…maybe some of those families wanted 4 to 5 kids.

Ooh ooh! I read Taking Charge of Your Fertility, loved it, and got prego two months later. Wonderful book with extremely useful info.

PS – Love the microwaved apple idea. Do you leave the peel on? From the pic I’m thinking yeah. Yum!

Taking Charge of Your Fertility is such a great book. I have recommended it many times – it is a wealth of information. Good for you for using it. It totally works!

Hoo hoo dilly doc…love it. I say….BOO BOO, silly doc! Girls are smarter and more savvy than you think.

Oh, YUMMY! Thank you Gina for sharing your recipe 🙂 Can’t wait to make them!!

I just realized that “hoo hoo dilly” is part of a man’s anatomy and “cha cha” is the ladies part! 🙂

    Have a great night!

Too bad about that doctor experience! Sounds like he’s NOT a keeper!

I just bought “Taking Charge of Your Fertility”– though I was surprised at how thick the book was!! I feel like I’m in college again with a text book. 🙂 I’m excited to dig in, though, and start tracking my temperature, too! No way every woman ovulates on the 14th day of her cycle… just like not every woman gets her period every 28 days!

I love random snack days… haha that’s like everyday for me!

  11. Mimi on July 27, 2010 at 1:40 am

Bookmarked that recipe in 2 seconds flat…
The whole “Fertility Awareness Method” is an interesting concept. That doctor seems like he may want to freshen up on med. school ideas.

UGH! I’m sorry that you had such a crappy experience. I can’t even describe how much I hate when doctor’s are uneducated and say just plain wrongs things like everyone ovulates on day 14! I hope you find a doctor that works for you soon!

I read Taking Charge of Your Fertility and absolutely loved it. I had given up the pill previously and that just confirmed my choice.

  13. Tina on July 27, 2010 at 8:09 am

I want to beat that doc upside the head and I am NOT a violent person. That pisses me off. I know for a fact that I always ovulate on day 18 when my cycles are normal. I found that out through tracking. If I never tracked and believed that day 14 always crap I would not have my beautiful daughter and be pregnant with my second at this moment. Asshole.

  14. Brigid on July 27, 2010 at 9:09 am

I read TCOYF earlier this year and found it really helpful. All women ovulate on day 14? Yeah right! I’ve never had a 28-day cycle in my 13 years of ovulation. You should definitely ask to see a different doctor. That’s just nuts!

  15. Christina on July 27, 2010 at 9:14 am

This makes me so angry! I hate when doctors think they always know better than you and make you feel like you’re the one that is uninformed. What a jackass.

Those enchiladas look AWESOME! I just went out yesterday for lunch and had some veggie ones because your posts gave me such a craving lol I definitely should try making them myself though. Thanks for the recipe! 🙂

  17. Therese on July 27, 2010 at 9:49 am

Geez. I hate it when doctors do that, “complicated” or not it’s YOUR decision and apparently it’s doing you two just fine!

Thanks for the enchi recipe! Can’t wait to try it! YUM!

  18. Kat @ My Fruity Life on July 27, 2010 at 10:28 am

I am going to definetly read that book, I would love to get off the pill…thanks for the recommendation.

  19. Becky on July 27, 2010 at 12:56 pm

I read TCOYF because of your recommendation. I chose not to buy, read or start using the method until my husband and I married last March to avoid any surprises or accidents. I actually wish I would have started much sooner and have every confidence that nothing would have happened we didn’t want to. Probably would have saved a trip to Wal-Mart during the honeymoon. Haha I stopped taking hormonal birth control because I didn’t like the side effects and my husband was very supportive. I had a lot of stress around the time of the wedding so my cycles got a little irregular afterwards; enough to cause alarm with my husband and he made me go see my lady doctor (I admit I prefer women). When I told her I had started charting my temp and was following the Fertility Awareness Method she did not shun the method and was supportive of it, but it bothered me that she referred to it as the “rhythm method”. It reminded me of the story the author told of her own collegue making the same assumption.

When I told my former doctor that I wanted to do FAM, she said “are you trying to get pregnant?!” I stopped going to her. My new doctor fully supported it.

We successfully used FAM to avoid pregnancy for 15 months and then used it to conceive (within 3 months). Good luck to you! 🙂

  21. Lisa on July 27, 2010 at 2:39 pm

I used to FAM and successfully avoided pregnancy for years after getting married. When we decided to start trying to have kids, I got pregnant first try with both of my sons. I am a firm believer in this method!

  22. Jessi on July 28, 2010 at 3:51 pm

Little late to the game but 1) love your blog and 2) LOVE that book! That doctor sounds like he either doesn’t know what he’s talking about or he has a problem with patients empowering themselves — both kind of equally scary. Best of luck with the new doc!
