Grain-Free Apricot Tartlets

Grain-Free Apricot tartlets

The night before last was officially pizza night. We still hadn’t made our weekly Trader Joe’s and Costco runs, and when I stared in the fridge trying to mentally assemble components into a decent dinner option, the dessert radar kept going off.

Ingredients

So, I took the apricots that we’ve had for a few days (with only the dehydrator in sight as a future destination), and they quickly became the star of these awesome grain-free tartlets.

Muffin pan

Grain-Free Apricot Tartlets

A fluffly layer of crust with almond meal, applesauce, coconut oil and chopped dates,

+ a row of sliced apricots, soaked in lemon juice and drizzled with honey

baked to perfection in 30 minutes.

Assembling

We may have made a Pizza Port run for our entrees, but at least dessert was homemade. 😉 (And let’s be real, Pizza Port is always a wise choice.)

These little tartlets are whimsical and pretty to look at, but also perfectly sweet with the slightest tartness from the apricots.

Ready to bake

We each had a few, and I froze the rest to enjoy throughout the week. They’d be wonderful out of the oven with a scoop of coconut milk ice cream, too.

Let me know if you give them a try! 🙂

What’s your favorite summer fruit? Any awesome summer desserts you’ve tried lately?

On a semi-related note, I heard Tucson is getting an ice cream shop with CASHEW ICE CREAM. We’ll definitely need to make a stop on our next visit!

Dates are awesome additions to baked goods and smoothies. I have been on a big kick and love that you use them as a sweetener in these tartlets. They look delicious!

I love all fruits at anytime of the year! I have childhood memories of sitting on our porch eating slices of watermelon and seeing who can spit the seeds the furthest!

Growing up, apricots were always the the weird fruit. I remember my grandma’s apricot jam… Peaches have always been my run-to, but this recipe looks amazing! Thanks!

I just tried star fruit for the first time over the weekend, that was interesting. My favorite fruit would have to be pineapple, but I have yet to purchase a whole one!

Random question: I bought a bottle of kombucha from the grocery store… forgot to put in the fridge overnight… found it in the morning. Is it trash? 🙁

    • Fitnessista on July 29, 2014 at 10:47 am

yeah i would trash it :/ bummer!

These look amazing! I’ve recently started using coconut oil when I bake and I love how light it tastes. Definitely need to try these – I could probably customize with whatever fruit I can find locally, right?

  11. Erin @ Her Heartland Soul on July 29, 2014 at 9:42 am

My favorite summer fruit is pineapple!

I can’t imagine what cashew ice cream would taste like – but I’m sure it’s delicious!

Thanks. I have an apricot tree. I have been dehydrating and tring to think of some other way to use them. I am going to make this. They look so good .

  13. Domi @ Eat, Pray, Lift on July 29, 2014 at 10:25 am

These look perfect because they’re teeny, which means you get to eat more, which means my lack of portion control will look perfectly acceptable. 😉

Favorite summer fruit is watermelon, hands down. Just give me a spoon and get out of the way!

  14. Megan @ Skinny Fitalicious on July 29, 2014 at 10:56 am

    This looks seriously delicious!

Yesterday and today I ate the peaches we bought at the OB farmers market last week. Some of the best I’ve ever had!! 🙂 I usually try to buy local fruit but I figure since they were local to California and the plane used to transport them was transporting me anyway, it’s all good. lol.

  16. Laura @ She Eats Well on July 29, 2014 at 11:29 am

I feel like apricots are a forgotten Summer fruit, at least for me :/. I am going to pick some of these up at the Farmers Market this weekend and make these little tartlets! Thanks for the inspiration!

  17. april on July 29, 2014 at 11:53 am

my favorite summer fruit is ALL OF THEM 🙂 seriously, i can’t get enough… i’m currently on a cantaloupe and blueberry kick right now!

  18. Tracy on July 29, 2014 at 1:38 pm

Favorite summer fruit: Blueberries!!!!! I’ve been going through the large tubs of organic bloobs from TJ’s like crazy. I just bought 2 more this morning to freeze. Yum!

  19. Robin on July 29, 2014 at 2:44 pm

We did a Pizza Port run this week too and for similar reasons. Sometimes you just have to, am I right? And I can’t pick a favorite summer fruit…it would be like picking my favorite child or dog or squash (I can’t.stop.eating.squash.).

  20. Polly @ Tasty Food Project on July 29, 2014 at 2:53 pm

Yum! My in-laws have an apricot tree in their yard and gave us a bunch. I was planning to just make smoothies out of them but these tartlets look delicious!

  21. Tammy on July 29, 2014 at 8:54 pm

These are going to the top of my weekend food prep list! Thanks so much for the recipe.

I tried a muffin recipe from a magazine a couple days ago. The flavor was a bit bland, which is easy enough to fix. However, the muffins were pretty dense, not light and fluffy. The base was oat flour and whole wheat flour. Do you think swapping some of the oat flour for almond flour would help? I’m also planning on adding either banana or applesauce for moisture, as they were a bit dry.

    Thanks!

  22. Kate @ Babaganosh on July 30, 2014 at 9:49 pm

Those look amazing. A dessert that has essentially NO UNHEALTHY INGREDIENTS. Unfortunately no one I know shares my love for apricots and wouldn’t understand why I am so excited about these. Whatever. More for me when I make these!

    • Fitnessista on July 31, 2014 at 7:32 pm

      haha amen. enjoy!

I love stone fruit during the summer! I actually don’t eat it any other time of the year. Just so good during this time of year it’s not comparable when it’s out of season. These sound great!
