Acupuncture, Workouts and a Green Smoothie

Thank you again for all of the kind words and heartfelt comments. You’re too good to this girl. <3 It’s going to be a great morning because I have acupuncture on the menu. I’m trying out a new spot that came highly recommended by my chiropractor (and is less expensive that my other guy here, whom I adore but he was $$$$), so I will report back. If I get to lightly snooze in a comfy chair, I’ll call that a win haha. 

Yesterday started off with a bit of a fail on my part. Liv and I were dressed and ready to head to the gym, when I realized that I’d left the keys to my car in the Pilot’s car. We had gone on a date the previously night, and I got into his car with my keys in hand. (Habit? I don’t even know.) I never grabbed them to put back in my purse and the spare key has seemingly disappeared forever. The Pilot drove all the way home from work to save us and we still had time to head to the gym before childcare closed. Fail turned win!

I got in a great cardio and TRX workout,

and then Liv and I spent the rest of the morning playing at the park before some more Monday funday stuff: a trip to the dentist for her, quiet time in the afternoon and her yoga class.

Lunchtime green smoothie:

(1 pack of Vega vanilla, 1 banana, a handful of spinach, a drizzle of coconut oil, frozen mango and a cup of almond milk)

Workout-wise, I’m teaching barre today and also doing my first PiYo workout (a 25-minute leg workout, which will complement the pieces I do along with class. I coach most of the time, especially now.). Chalene is basically my fitness celebrity idol who can do no wrong, so chances are that I will love it. I’ll do a Focus On post after I complete the workouts in the set.

Grain-Free, Dairy-Free Mug Cake

This morning’s recipe is a special one because it’s been over a week in process. I really wanted to create a grain-free, healthier mug cake (perfect for when the nighttime sweet tooth hits), and for the life of me, I could not.get.it.right. I usually have fairly good luck with recipes (and have made gluten-free mug cakes before), and it will only take me a time or two before I feel satisfied with the end result. This one took multiple attempts, so this meant I had to eat a lot of cake.

The struggle was real.

And this one was juuuuust right: soft, chocolaty, lightly sweet and light. Also, it has pretty awesome nutritional stats!

A single serving of dessert! Perfect for when the sweet tooth hits, and is a great combo of protein and healthy fats.

  • Total Time: 6 minutes

Ingredients

Scale
  • 1/4 cup almond meal
  • 1 teaspoon coconut oil
  • 1 tablespoon mini chocolate chips
  • 1 tablespoon pure maple syrup
  • 2/3 an egg white (sorry this is not more precise! Separate the egg from the white, but not entirely. Leave some white with the yolk, and I would scramble these together as a snack. Just add *most* of the white to your mug cake)
  • 1/8 teaspoon baking powder
  • Pinch of sea salt
  • 1/8 teaspoon cinnamon

Instructions

  1. 1. Combine all ingredients in a standard ramekin. Be sure to stir really well so there are no obvious egg white portions.
  2. 2. Microwave for 45 seconds to 1 minute, until set.

Notes

  • For extra credit, top with some banana soft serve ice cream.

    I was at a friend’s house for the Bachelorette the other week, and she made the most amazing dessert that has been occupying my post-dinner cravings ever since – a banana sliced down the middle with chocolate chips inside, wrapped in tin foil and baked for a few minutes and then sprinkled with graham cracker (she added marshmallows in too, but I’m not wild about them).

    Drool.

    Oh I admire your persistence to get the perfect mug cake! LOL! I’m not even prego and nighttime sweet cravings hit me all the time.     I like to have a spoonful of almond butter and mini dairy free chocolate chips. You can’t beat chocolate and nut butter. But this recipe, I’ll definitely need to try.

    Sounds delicious! Can’t wait to try–and good idea about keeping the extra egg! Thanks for trying so hard to get it right just to share with us.
    I usually go for a small mug of plain full-fat yogurt, a heaping tsp of peanut butter, a small handful of oats, and a heaping tsp of chocolate chips, all mixed together. It tastes like cookie dough, is overall pretty good for you, and is filling. I know it sounds strange to mix PB with yogurt, but trust me on this one. It’s really good!

    I love a Ghiradelli square in the evenings – specifically the dark chocolate & sea salt caramel. Soooo delish! Other times, I’ll just melt a few chocolate chips and eat them with a spoon. It tastes really decadent.

    haha! The cake eating struggle is REAL! Thanks for taking one for the team to come up with this 🙂 I’ll have to give this one a whirl! My go-to for night time sweet tooth is TEA! Republic of tea makes a coconut almond tea and I add a little Califia Farms toasted coconut almond milk to it- so good. Complimented with a few squares of good dark chocolate and its perfection 🙂

    And Chalene is my celebrity fitness idol too! I teach turbokick, that’s how I learned about her. She’s incredible!! Do you listen to her podcasts? RE: Piyo interested to see what you think. No one teaches Piyo at the gym I work where I teach or the gym where I’m a member, so I look forward to your thoughts. I keep toying with the idea of buying it, so I’ll wait patiently for your review 🙂

    This looks yummy! When I want something sweet, I usually mix a scoop of peanut butter with cocoa powder and maple syrup. Tastes like chocolate frosting!

    Yahoo, I made this tonight when I got home. I don’t have any ramekins, so I used the egg whites of an XL egg and then double the rest of the recipe and put in a small corningware bowl and newked for about 2 minutes and maybe another 15 seconds. Personally, I HATE to use my microwave, but had to try this. I hope you or we can figure out how to make in oven. THANK YOU!!!! Oh, and YUMMY it is!!!

    We made two of these last night. YUM. I always freak out over the calories in stuff made with almond meal but I have to admit the fat content in this kept me satisfied for hours.

    Though I should admit we smeared a little Nutella on it.
