Homemade Sous Vide Egg Bites (without the sous vide machine)

Word to the world: we have a sous vide egg bites problem.

Homemade healthy starbucks sous vide egg bites without the sous vide machine. This is a delicious and healthy low-carb, protein-packed snack. fitnessista.com

When I first heard about these things months ago, I got myself to a Starbucks ASAP. Eggs are my favorite food on the planet, and I was so pumped to get a protein-y egg bite with my morning latte. Until, I couldn’t find them in San Diego. Anywhere. Sometimes, I would just ask for them when we’d go to different locations, and every single time I was turned down by the barista.

Once I asked why they didn’t have them, and the girl told me that it was because they were too popular and they couldn’t keep up with demand.

Get rid of something because it’s too popular?? #thingsthatmakezerosense.

Wiping a silent tear off my cheek, I vowed to myself that I would find them.

The same thing happened in Tucson. The mysterious egg bites were nowhere to be found.

When we drove into Valdosta, I decided to casually ask at the Drive-Thru if they had sous vide egg bites even though I didn’t see them on the menu. It was more out of habit than anything at that point.

“Yeah, what flavor would you like?”

“WHAT FLAVOR WOULD I LIKE?! Do you know what this means?!?”

I jumped out of the window and hugged the giant glass menu, then did a victory dance.

Ok, no I didn’t. I ordered roasted red pepper and went on my merry way, even though I was smiling like a creeper when I paid for my order.

They were everything I dreamed of. And since that day… I’ve had them a lot. Like, an embarrassing amount.

Homemade sous vide egg bites

After Googling the ingredients online, I decided to try and make a slightly healthier version.

One major change: I don’t own a sous vide machine, and don’t really have a desire to purchase one. #notarealchef

Instead, I used egg poaching cups in boiling water, and they cooked beautifully.

Egg poach cups

(The cups are here on Amazon)

They were SO easy to make, and while they definitely won’t totally replace my Drive-Thru habit (oops), they’re an awesome substitute.

A healthier version of the popular Starbucks protein-packed snack

  • Prep Time: 10
  • Total Time: 10 minutes
  • Yield: 6 1x

Ingredients

Scale
  • 9 tablespoons egg whites (from the carton; you could also use 34 large fresh egg whites)
  • 2 eggs
  • 1 tablespoon brown rice flour
  • 2 oz feta cheese
  • 1 tablespoon almond milk
  • 1/2 scallion, diced
  • 2/3 roasted red bell pepper, chopped
  • Salt and pepper

Instructions

  1. Start 1-2 inches of water to boil on the stovetop in a large pot.
  2. In a large bowl, whisk the eggs and egg whites together. Stir in the remaining ingredients, and season well with salt and pepper.
  3. Distribute the poaching cups into the water, and then carefully add your egg mixture into the cups. (I used an ice cream scoop to distribute the egg mixture.)
  4. Cover the pot, and poach for 8-10 minutes, until the middle is set.
  5. Remove the poaching cups and cool for 1 minute before gently removing each one with a spoon.

Notes

  • Feel free to use any cheese you love, and add in fresh herbs!
  • Store in the freezer or fridge to quickly reheat and eat.

cute! i think you’ll love these things. they made it so easy and the texture was awesome

Yum, those look great. Is your recipe for 4 ‘bites’? I have a 6-dish poaching pan, I think I’ll gross it up and keep the yolks. I can’t bring myself to throw them out. I still believe they’re good for me. My diet is too low-fat as it is.

I bet you could add some cottage cheese and cheddar and they’d be like your Nana’s egg dish.

    • Fitnessista on May 3, 2017 at 9:50 am

the recipe made 6 bites. 🙂 if i use carton whites, i have no prob with adding whites for extra protein but otherwise i’ll use the whole egg
you’re totally right. i think that needs to happen next.

I have to be honest, I didn’t know what sous vide was. Hahahah! And I’ve also never seen these at Starbucks. But I like everything about eggs, so I’m intrigued! Nice job recreating! 🙂

    • Fitnessista on May 3, 2017 at 9:48 am

you’re not missing out lol. i guess you can use it to make sure flavorful meats and veggies, but i’m good with kitchen appliances for a while. 😉
      you would love these things!

I am all about overnight oats for breakfast, but would totally make these for easy lunches/for the baby. Do you have a preferred brand of egg whites from the carton?

    • Fitnessista on May 3, 2017 at 9:48 am

P has been going crazy for them. i’ve been using the pete and gerry’s brand and really like them

  6. Julie on May 3, 2017 at 10:06 am

Who woulda thought you’d have to go to Valdosta to find something you couldn’t find in SD?! 😉

    • Fitnessista on May 3, 2017 at 10:11 am

      right?! hilarious.

I am ADDICTED to the bacon gouda sandwich from Starbucks, but it’s stupid expensive and TINY so I started making my own. However that bad-boy packs some serious calories so it’s more of a treat than an every day thing. These are a great idea for an easy and healthy breakfast that I could prep ahead and freeze to grab on the go, as you mentioned in your recipe. Thank you!

    • Fitnessista on May 3, 2017 at 7:07 pm

      that’s so cute- that’s liv’s favorite too 🙂

What an awesome idea! I will have to order some of those cups asap, I see this happening for breakfast/snack A LOT in the near future.

We are definitely not real chefs either, but bought an sous vide after having the most amazing steaks ever! We cook steaks and veggie stuffed chicken in it and then toss them on the grill for a minute. The meat is so tender and juicy every time! It’s a guaranteed way to trick your friends into thinking you’re a gourmet chef with little effort!

I am excited to try these! I made my own version for similar reasons haha but it did not turn out well. Haven’t had any problems finding them in Alaska, though! So funny that the least likely places are well stocked.

I’m always looking for a good protein packed snack that I can make at home! Yum! Also, your dishes are so elegant looking!

  12. kelli @ hungry hobby on May 4, 2017 at 6:10 am

I think the fact that you poached anything makes you a real chef… I’m too scared! ha ha

  13. averie @ averie cooks on May 4, 2017 at 8:27 am

The Starbucks in Bankers Hill at 5th & Laurel as you’re about to go over the bridge into Balboa Park almost always has them, not that you’re right around the corner or anything anymore 🙂 Glad you came up with your own version!

  14. melodie on May 4, 2017 at 5:11 pm

Im curious…what’s your typical latte at Starbucks? I typically just order coffee with a bit of cream and sugar free vanilla. Only because of calories and sugar though.

    • Fitnessista on May 4, 2017 at 8:18 pm

tall almond milk latte with one pump of vanilla 🙂

  15. Lisa on May 5, 2017 at 12:06 pm

Sounds yum! I’ll have to try this version. I’ve made the muffin tin ones but these look so fluffy!

I lurve the Starbucks egg bites, so I am eager to try these! I’ve been trying, and failing, to keep to a keto diet, so hopefully this will inspire me. I really enjoy cooking and eating and don’t like giving up on taste.

  18. Lynl on May 29, 2017 at 11:13 am

    How do you reheat them?

    • Fitnessista on May 29, 2017 at 6:51 pm

i put them on a glass plate and microwave

  19. Laura on June 11, 2017 at 2:08 pm

Oh, don’t play with my emotions! The Starbucks egg white egg bites are my obsession! Is the taste and texture similar?

    • Fitnessista on June 11, 2017 at 7:58 pm

      it’s THE SAME 🙂

      • Laura on June 11, 2017 at 10:04 pm

        Yay!
        Thank you!

  20. LeAnna on June 18, 2017 at 12:50 pm

So excited to try these!! I’ve gone through a dozen recipes looking for one that had a dairy free option and didn’t require buying a fancy sous vide machine. Can’t wait to try these!!

    • Fitnessista on June 18, 2017 at 8:46 pm

please let me know what you think!

  21. Laura on June 29, 2017 at 9:41 pm

I’ve tried making them twice. First time I didn’t cook them long enough. Just tried again and I’m getting closer. They have a nice taste and the texture is close, but I’m not sure what I’m doing wrong. They still lack that velvety smooth texture that the Starbucks ones have. I followed your recipe exactly. Any ideas?
    Thank you! 🙂

  22. Lee H on August 12, 2017 at 11:22 am

I would like to make 24 of these and take to a brunch party. Do you know if I could make them in cupcake tins with cupcake paper cups, or would that change the end result? Thanks for the recipe!

    • Fitnessista on August 12, 2017 at 12:02 pm

yes you could probably bake them like that, but they might get soggy in the paper. i would make them in advance, freeze, then reheat and put on a serving tray 🙂

  23. Lee H on August 12, 2017 at 12:06 pm

Oh! The tricks of the trade! Great tip! Thanks Sista!

  24. Ronda on August 15, 2017 at 2:10 am

Curious if I could try these without the cheese? I don’t want to ruin the flavor but the cheese is a no no in my eating regiment. Or could you suggest any other option? I am so anxious to try this recipe, no matter what! Thank you for your sharing my favorite egg bites as a copy cat recipe!!

    • Fitnessista on August 15, 2017 at 8:38 am

is there a dairy free cheese that works for you? like daiya crumbles?

  25. Jodi on September 22, 2017 at 11:26 am

I love these! 🙂 I am addicted to Starbucks egg bites and this is a perfect way to make a healthier and less expensive substitute. Thank you!

  26. Tamar on March 13, 2018 at 1:48 pm

Can you give me a little more detailed instructions on how to poach the eggs, for the cooking challenged? Do you leave the water boiling? Turn it down to simmer? I’ve never poached eggs before! Tried this recipe and 2/3 of them spilled into the water and made a mess, I’m sure I was doing something wrong

    • Fitnessista on March 13, 2018 at 9:42 pm

es! just make sure you don’t fill the cups completely and that the water is at a slow boil (more like a simmer than bubbling like crazy)

  27. Kiva on April 6, 2018 at 11:14 pm

Hi! I added the tablespoon of flour and it clumped into tiny flour balls. Do you gradually add it or how can I prevent this from happening? TIA!

    • Fitnessista on April 8, 2018 at 5:59 pm

      did you whisk it in??

  28. Katie on April 21, 2018 at 9:03 pm

I am highly addicted to the Starbucks version so I was excited to give these a whirl. They turned out great! I used my poaching pan and they did take a bit longer to cook in the middle. I might try in the oven in muffin tins next time to get that crispy texture like Starbucks but I wouldn’t change the recipe- I would also chop the red peppers more finely next time. Thanks so much these were fantastic!

  29. Kay on June 8, 2018 at 8:51 pm

I just recently discovered the Starbucks Sous vide bite addiction (after a friend was talking about making them in her instapot so I had to find out what she was raving about)….
And then I found your recipe …. used my silicone cupcake liners …. bought a 6 pack of egg whites cartons at Costco ….and now I can stop buying these at Starbucks . THANK YOU!

    • Fitnessista on June 10, 2018 at 11:40 pm

yay, i’m so happy to hear you liked them!! 🙂 the addiction is real.. and expensive haha.. so it’s amazing to make them at home

  30. KLS on September 18, 2018 at 4:40 pm

Mine all bubbles over:( What did I do wrong?

    • Fitnessista on September 18, 2018 at 9:00 pm

that’s so strange! what type of egg whites did you use? did you skip any ingredients?

  31. KLS on September 18, 2018 at 9:08 pm

I think maybe I filled them too much! Flavor was delicious!

  32. Fitnessista on June 13, 2019 at 2:08 pm

i’m sure there’s a way to do it!

  33. M on August 14, 2019 at 11:36 pm

Do you have to grease the cups before putting in the eggs? Sorry, I’ve never poached eggs before.

    • Fitnessista on August 14, 2019 at 11:54 pm

i don’t think i did with the silicone cups – they slid right out

  34. Jay daniels on January 27, 2020 at 2:31 pm

If these are egg WHITE sous bide why would I use two whole eggs?

    • Fitnessista on January 27, 2020 at 2:42 pm

you can absolutely just use whites!

  35. Mathilde Kohler on July 5, 2020 at 2:27 pm

I thought, there has to be an easier way! I headed over to amazon, quickly found this cute egg bites silicone pan and realized it’s perfect for my homemade egg bites.

  36. Susan on June 3, 2021 at 12:00 pm

Could you use regular muffin silicone cups instead of the poaching cups?

    • Fitnessista on June 5, 2021 at 7:05 pm

      yes, i think so!

      • Grace on August 30, 2021 at 12:38 am

I excited to try out this recipe!

I have some silicone muffin cups, but no egg poaching cups… I might try using those.

Cam you tell me what is the purpose of the rice flour?
Can you recommend any substitutions for this? (This is not something that’s in my pantry and don’t feel like it’s something I want to buy specifically for this recipe).

        Thanks!

        • Fitnessista on August 30, 2021 at 3:08 pm

you could absolutely use all-purpose instead. i just included it so they would be gluten-free 🙂 please let me know if you give them a try!
