Hi friends! How are you?? So sorry for the lack of bloggage last night- it was one of those nights when I came home from work, made macaroons to take to Foodbuzz,

crawled into bed and read before calling it an early night.

It’s been a little hectic around here trying to get ready to leave, and I still have no idea what I’m bringing or wearing. Good times haha 🙂

This morning, I woke up early for a weights and cardio sesh, but took it easy because I’m a lil sore from Bikram yesterday.

Then I made a REAL breakfast 😀
breakfast (2)

An egg scramble with:

-1/8 onion and 1/2 sweet potato, sautéed

sp

-1 organic egg + 1 egg white

-arugula and spinach

Garlic Gold (every time I pour it on something, I may or may not say “I love goooooooooold” in my terrible Goldmember voice)

With a gluten-free Food for Life english muffin with earth balance and cinnamon

+ peppermint tea steeped in almond milk

breakfast

Redonk. This is the b-fast dreams are made of 🙂

I haven’t had eggs in quite a while, and they taste SO good! It’s also nice to be sitting enjoying breakfast instead of cramming it in my face before rushing out the door 😉

Plan for the day:

-Made my vegan chocolate chip cookies (I promised work friends I’d bring them again before leaving on my trip)

-PACK! Laundry!

-Work

    I love the peppermint tea in almond milk idea! must try tonight. thinking unsweetened chocolate milk though (love the combo of mint + chocolate!) also how are those GF muffins? I’ve been meaning to try but wasn’t sure if I would like them. Breakfast looks delish girl- have fun packing, i am queen of overpacking because well you never know what you might need!

      that sounds delicious!
      the muffins are pretty good. the regular ones are better though :/
      i’m also a notorious overpacker- like you said, you never know!

    I’ve never added sweet potato to my egg scrambles — looks tasty. And yes, any time I can sit down to breakfast is way better than cramming my face before I get to work!

    You are going to LOVE San Francisco. Be sure to go by the Ferry Building–it is an organic, local produce heaven. They have…everything. Fruits I’ve never heard of!

    And if you get a chance, try the hippy dippy vegan joint Cafe Gratitude. The food is amazing, and you will get a kick out of their over-the-top bohemian vibe.

    ooh love the boots. also, i had indian yesterday (amy’s palaak paneer), and i hated it 🙁 i hate curry and indian food offish! (except garam masala on roasted veggies). any suggestions???

    Eggs is one of my fav go-to’s for breakfast. There is nothing like taking a few extra minutes to make a proper egg breakfast!

    It’s always cool/windy in sanfran. If you’re at the Ferry Building; the Slanted Door is awesome modern Vietnamese food. It’s open for lunch too.

    yay for san francisco! the weather is BEAUTIFUL right now – so sunny and clear. The Giants just won the world series and the town has been orange and black crazy! Be sure to bring some orange 🙂 Stop by the lululemon on grant avenue if you have time – would love to see you!

    I’ve never thought of steeping tea in milk before… must try. Do you just heat up the almond milk in the microwave or in a saucepan? Saucepan might be too much work for me, lol.

    My mom JUST got back from San Fran and said she ended up wearing her black workout pants everyday because she wanted to wear her tennis shoes! She had forgotten how hilly it was, and did NOT pack comfy shoes. So hopefully you’re new black boots will be perfect!

    Hey I was just in SF and I did NOT bring the right clothes!! It’s chillier than Florida for sure. I loved it but bring something cute for rain and be ready for a chill! No humidty to keep you warm! I rocked a lot of scarves and loved every minute of it!! I am going to Orlando this weekend…any good places that are a must see that are not touristy? Thanks!!

    tea steeped in almond milk? intriguing…do you boil/nearly boil the almond milk first and then pour it over the tea bag just like you would with water? (i’m kind of obsessed with tea…that’s why that stuck out to me, haha. i rarely comment but i read your blog regularly & love it and your sunny outlook. just btw.)

    I love the boots and you have no idea what you’re bringing and not bringing? ME TOO!!!

    That is this afternoon’s project to just put stuff in my suitcase, be happy I’m going, and just realize that I tried my best to plan for events, the weather, the level of dressiness vs. casual-ness of it all…yeah, it’s hard and I feel your pain 🙂

    I can’t believe at a time like this, leaving for a trip and trying to pack, etc etc…that you’re whipping up batches of cookies for your coworkers..I hope they pay you overtime for that!!
