What an AWESOME night in Jacksonville.

First, my mall radar went off:

Somehow, after I picked up my rental car, it automatically drove me to St. John’s Town Centre—funny how that happens, huh? Winking smile

I did a little damage and met up with Lindsey for lunch at California Pizza Kitchen.

We were originally supposed to go to Healthy Way Café, but were super sad to discover that they had closed down :/ CPK was a good replacement and we each had delicious salads. Mine had roasted veggies (eggplant, tomatoes, peppers, onion) and sundried tomatoes with a dijon vinaigrette.

After feasting and shopping, it was time for some of THIS:

The national headquarters are in Jacksonville, so I took their “Year In Review” class, highlighting the dances from 2010. I love every second and as I left, it made me realize that I know what I’m supposed to be doing right now: blog and dance  Smile 

After getting my booty shake on, this lovely lady and I made dinner together:

A veggie stir fry with:

-peppers

-zucchini

-carrots

-grape tomatoes

-kale

-black beans

-Garlic, coconut oil, sea salt, pepper, soy sauce, lemon juice

It was scrumptious—far better than anything we would have gotten at a restaurant.

This morning, I’m going to make some b-fast and then drive to Valdosta for Jeni’s baby shower. I’ll see ya this afternoon from Valdizzy!

    The Roasted Veggie Salad at CPK is my favorite!! Now I’m craving it, I may have to make a trip to the mall w/ CPK for lunch today 😀

    I WISH there was a Dance Trance close to me in NY! It sounds like such a blast. Your meal looks lovely! I love cooking at home because you are in control of the ingredients and the preparation!

    I love CPK salads. So funny a pizza place has such amazing salads, but I don’t complain 😉

    Thank you for the CPK suggestion! I am on a month long wellness plan, sort of like yours: no gluten, eggs, dairy, soy, etc. and I was stressing about where hubby and I could go for Saturday night date night dinner. I love how their menu breaks all items down by allergin information.

    I looovveee St. John’s! When I went to school in Tallahassee, Jax was the midway point between me and my parents so my mom and I used to get a room and spend the weekend shopping and eating… it’s a wonderful place!

    Thank you for opening my mind up to CPK. I was set to NEVER go there because I figured miss gluten free would be SOL there. That salad looks fantastic, so fantastic I might have to swing in for one at the Tucson mall this weekend. While doing massive damage to my debit card! 🙂
    I am so happy you had a good time at the Dance Trance Review. Shake that thang & shake it up girlie!!

    Hope you don’t have to play the “guess what candy bar is mashed in this diaper?” game at the baby shower. It’s a little too close to reality for me 🙂 All time favorite baby shower game? At a co-ed shower, the men had a contest to see who could chug beer from a baby bottle the fastest. So funny 🙂

    You were only 30 minutes from me!!! And i am always a little peeved that i have to drive 30 minutes to the town center for decent shopping lol you would think that since St. Augustine is so popular with tourists they would have a few more stores….

    I was reading an article about the Jacksonville dance trance the other day and i had thought it was just an orlando thing but i definitely want to go now that there is one so close!

    I felt like I was channeling you today…my lunch salad was a big pile of spinach, smoked salmon, dill, GOAT CHEESE, carrots (cooked in maple syrup in microwave), artichokes, and drizzled with balsamic vinegar…so good!

    I love that salad!! Theres a CPK across the street from my work, so it used to be my favorite work lunch! I wish they had DT in Los Angeles!!

    Grew up in Jax as a Navy Brat. I miss it!

    Love St. Johns best when it is all dressed up for Christmas.

    When you are in the area I also loooove St. Augustine.

    OMG. I made the chococado pudding last nite (tweeked it a bit and put carob powder instead, no coconut oil and vanilla)… out of this world good!!! have fun at the baby shower!
