Dijon chicken with sundried tomatoes and quinoa

Ahhhh, Sunday <3 It feels so nice to take it easy after a long day of teaching, and my favorite night owl decided to sleep in with me.

We woke up to see our favorite woodpecker, snacking out of the hummingbird feeder.

(oats with Sun Warrior, defrosted cherries and almond butter + tea)

and for dinner last night, I feasted my eyes on Richard Gere in Pretty Woman (silver fox)

enjoyed almost an entire bag of these chips

(Great post-Zumba snack. I shared with the madre, but really, it was almost all me)

and actually made a real dinner- I think the Pilot was surprised.

(I have a new hair routine! Wash, braid it while it’s wet, remove braid and blow dry so I don’t go to sleep with wet hair –my aunt says if you go to bed with wet hair, you die- and wake up with afro. Repeat)

Dijon Chicken with Sundried Tomatoes and Quinoa

All I did was chop up two local chicken breasts and brown in a skillet over medium with garlic, oregano, thyme, sea salt and pepper.

After the chicken was browned, added a diced shallot, 1/3 C sundried tomatoes, 1/2 T Dijon, 1 t honey and a squeeze of lemon juice.

Served over quinoa with roasted asparagus.

A robust little feast, and only took about 20 minutes from start to finish.

This morning, it’s just the girls over here –the Pilot is doing air show stuff all day- so when Livi wakes up from her nap, we’ll take off for some adventures.

Until then, I’m going to get the grocery list together, meal plan

    I neverrrr sleep with wet hair, I am convinced I will get sick. And I don’t go outside with wet hair when it’s below 70.

    i shower and go to bed every week night with wet hair. I am too rushed in the morning to shower, so its always before bed. it’s always worked for me!
    We got snow here today, again… so my run has been postposed until tomorrow. Might do a Bob Harper workout instead!

    I have long, super thick curly hair. If I leave it down and air dry it I think it takes around 5 hours to dry. I got to sleep with wet hair a LOT! haha

    Too funny, ill sleep with wet hair and go outside but I always look like the crazy women when it dry’s. It’s a must that I blow dry my hair unless I am being totally lazy or sick.

    My hairdresser said sleeping with your hair down/wet damages your hair (breaks it, etc.).

    Love the addition of sun fried tomatoes, I am such a big fan, too bad my husband doesn’t like them!! I go to sleep with wet hair every time and I am still alive 🙂

    If I went to bed with wet hair, I would wake up with a rat’s nest! I have started braiding it when wet also! Then I take it out and it’s wavy and cute (but I do this in the mornings). So funny. I don’t have time to blowdry my hair with a toddler running around! Your dinner looks amazing.

      sometimes she’ll let me blowdry my hair, but usually if i get a shower, it’s a good day 😉

    I’m so lazy with my hair unless I have to go somewhere! I tell myself I’m “saving” it by not putting any heat on it and blow drying it haha.

    I’m opposite- I ALWAYS sleep with wet hair! If I let it air dry regularly, then I get a fro! Sleeping on it makes it perfectly wavy 🙂

    I fell asleep watching pretty womn as well! I tried to stay up for when she goes on her mad shopping spree nd sticks it to th stuck up ladies, but alas missed it. I dunno why but pretty woman is on of this movies I lov it watch on Tv when it’s on even tho. I have it on video. Same with Romy and Michele. The chicken dish loos yummy. I hav been sooooooo tired from moving and painting this last week that I haven’t cooked a singl thing except eggs. 🙁

    I made this chicken last night and it was fantastic! I plated it with red quinoa and sauteed spinach and it looked so gourmet for only taking 1/2 hour. I’m going to keep this recipe in mind for future dinner parties.
