Late night snackin’

Hey everyone! Hope you’re having a wonderful weekend 🙂

I had to work pretty late last night, so by the time we got all of the ingredients for tonight’s dinner party, it was late.

So I got to work on both of the lasagnas and made some midnight gluten-free vegan cookie dough for the pizookies, using my almond butter chocolate chip recipe. For the boys’ pizookies, I bought the dough. They won’t know the difference 😉

It was my first time using Bob’s Red Mill Gluten-free baking mix. I pressed most of the dough into tart pans and put them into the freezer, then baked the rest as cookies.

Some tasting occurred, for quality control purposes 😉

Crazy Gina, late-night snacking 😀

I was way impressed with the dough.. it came out so light and fluffy! Amazing. I think my gluten-free friend will enjoy 🙂

The meat lasagna and butternut squash and spinach lasagna were finally done at 1 am, and I crawled into bed and crashed until I got up for two training appointments.

Breakfast was a Vega bar and 2 clementines, and after my appointments I went to the Main Squeeze for a smoothie.

The usual tropical superfood with vanilla Sun Warrior and 1 t of spirulina that I err, carry around in a baggie with me. You gotta do what you gotta do, right? It was delicious 😀

 

I also stopped by my favorite little health food store for some more pizookie ingredients:

I’m back at the casa, about to make the appetizers, chop the veggies and do a last-minute clean sweep before I get ready. Today’s my off-day from the gym, so I’ll probably get in some light yoga and stretching.

Something to talk about: What’s your favorite restaurant dessert? I think we all know that mine is the pizookie (from BJs or Oregano’s) but I also LOVE the volcano from Rainforest Cafe. My goal is to make a healthy version sometime soon 🙂

    I love the chocolate shake from Chili’s, they are good. I usually share it with the boyfriend. I really want to try the coconut bliss, I was eyeing it at the natural foods store,but promised to stick to my list. lol Maybe this weekend I will buy some.

    Enjoy your dinner party tonight Gina, the food sounds fabulous. If you and the pilot ever make it to Dublin, I’ll cook for you guys. The volcano looks so tasty, I try and keep to fruit salads etc when I eat out, I think I prefer more savoury than sweet things but I do remember going to the Cheesecake Factory when I was in California, yummy desserts there!

      i’ve honestly only tried the vanilla, but i’ve heard amazing things about the dark chocolate and mint flavors as well 🙂 i’m sure they’re all delicious

    You have been one busy chica! The cookies look amazing- thick and fluffy- my favorite kind 🙂 I still have not tried the coconut bliss ice cream- gotta get on that. Good luck with the rest of your to dos. Hmmm my favorite dessert? Fresh berry frozen yogurt with tons of fruit and granola on top- so good

    We didn’t get the volcano at Rainforest Cafe – we got the Mud Pie dessert…oh heavens!! It was just as bit, but with coffee ice cream and tons of hot fudge. Amazing!

    I looove the volcano dessert!! whenever we are traveling around the US, I always make sure to scope out where a rainforest cafe is. As for my favorite dessert? I don’t think I could choose.. I like just about anything with chocolate.

    OMG those cookies look stellar! I can’t wait for my GF flour to get here so i can invent something cookie-ish.

    Favorite dessert? Chocolate pecan pie from Frontera Grill. Rick Bayless knows his stuff!

    I love ANYTHING chocolate, but since I’m not eating dairy now I’m finding it harder to find treats I actually want at restaurants. I guess it’s good for my waistline?
    CocoBliss is amazing though, and I am so glad to have a variety of options at my grocery store. I’ll have to try your cookies too, I was sad when I realized that butter probably gives me a reaction as well, so vegan cookies are the way to go!

    I had an unnnbelievable ice cream sundae at Ghiradelli in Disney world after the marathon last weekend that was my favorite dessert pretty much ever. Peanut butter sauce AND hot fudge?! And no guilt after 26.2..hehhe

      it’s a cookie that you bake in a pizza pan (or in my case, mini tart pans) and top with ice cream, chocolate syrup and chocolate chips
      it’s AMAZIN!

      it’s ice cream with a brownie “volcano” around it… topped with whipped cream, chocolate syrup and caramel. so evil 🙂

    I love the almond butter cookies, I can’t wait to try them! My favorite dessert has to be the peanut butter cup sundae at Uno’s….HUGE pb cup with chocolate sauce and vanilla ice cream. It’s trouble, but it rocks my face off 🙂 Enjoy your dinner!

    I’d never seen a volcano before. I need to find me one of those! YUMMY!!! My desserts are all about chocolate, or nut butter, or coconut ice cream with either one or both of those 🙂

    Have fun at your dinner party – i love that you carry spiralina – I carry around ezekial bread when I go out to lunch during the week since the pizza place doesn’t have whole grain bread and I always get stares…oh well 🙂

    Oooh hope your party is (was? Did it already happen?) A success. I worked at Rainforest in high school/college so I’ve had more volcanoes that I care to admit. They are tasty. I also love the molten lava (“O-cake”) at Chilis although I haven’t let myself have it in a couple years.

    I don’t have a favorite restaurant dessert. What is wrong with me??? I can’t think of even one really? Maybe the bread pudding with vanilla ice cream at Siena in Providence? or the fresh berries with whipped cream at Spain in Cranston? OMG, I must figure this out!

    I bet I would love a pizookie. I love hot sweets with cold toppings.

    I consider Creme Brulee to be the “true test” of a restaurant. If they can nail a creme brulee, then they’re good 🙂 I would never turn down chocolate though.
