It’s been a glorious weekend over here! Livi and I had an awesome Friday at the trampoline park with friends,

and lunch, and we had Thai for dinner.

I got some photos done yesterday, and after that we went out to Ra for all the sushi + Frost for gelato. Liv had her first (cooked) sushi last night. She loved it! A girl after my own heart, for sure.

Since last week was so busy and the Pilot’s schedule was backwards (gotta love a night week), fitness was a little more interesting to get in. I did a couple of great workouts (including Workout 4 and a Barre3 class), but I’m really excited to get back into yoga and more strength this week. When I skip strength training, I notice a huge difference in how I feel. Lifting heavy things is great Zen time 🙂

Here’s what the fitness schedule looks like for this week:

-Sunday: Yogaaaaaa

-Monday: Teach Zumba

-Tuesday: Strength + HIIT

-Wednesday: OFF

-Thursday: Short run + strength

-Friday: OFF

-Saturday: Long run

About that long run… I may be signed up for a race thing. That’s all I’m going to say about it for now because last time I made a big hoopla about running in an event I fell down the stairs. To say I’m being superstitious would be an understatement. So there’s that 😉

As far as the eats go, this is the week for recipe testing extravaganza 2014. My friends are all ready to stop by for the food surplus we’ll have at our house, because as much as we like to eat, there’s no way we’ll be able to finish all the goods. I love being able to share the goodies and also get feedback along the way. If you see me out and about Tucson this week, I’m probably shopping for a missing ingredient and will have random food particles stuck to my yoga pants. Don’t judge me. 

Planning and prepping just a couple of things, because I know we’ll have plenty of snacks around:

Chop veggies for salads

Make homemade Caesar dressing

Grain-free granola bars

Paleo bread

Dinner menu:

Jalapeño turkey burgers, sweet potato fries, veggie packs

Chicken, veggie and brown rice cheezy casserole

Salsa verde enchiladas, rice and beans

Rita

(Because Mexican food = margarita. Also, did you know yesterday was National Margarita Day?!)

    I’ve noticed a huge boost in my mood when I get in strength training too! I use to rely solely on running as my go-to form of exercise, but since adding in the weights it’s made a huge difference in my mood. Sounds like you’re going to have some fabulous eats this week! I’m planning a new zucchini boat recipe tonight…. I hope they’re tasty.

    Livi seems to eat anything! Lucky you, my 2 year old niece doesn’t want anything but chicken nuggets.

      she’s an awesome eater. it could change at any second, but for now, we’re really thankful! she just wants to eat whatever we’re eating

    I never prep and only sometimes plan. I usually just buy staples and figure out the meals as I go along. Fave snacks are nuts, baby carrots, crunchy chickpeas (you need to try these! Got them at whole foods), Greek yogurt and almond butter on apples. And Larabars of course!

    Good luck as you train for your big race! Sending good vibes for no injuries.

    i’m excited to hear about your race plans when you’re ready to announce! i’m always superstitious about races, as well, so i completely understand. good luck with your training!

    Planning and prepping today too. We’re hunkered down in the MN Tundra, so homemade spaghetti sauce is in the menu this week, along with more roasted chickpeas for salads. Can’t get enough!

    Hey Gina, do you have a favourite margarita recipe that you make at home? I’ve tried a couple, but they’re either waaaaay too strong, or they don’t taste like a true margarita. Any suggestions?

      my favorite recipe is just tequila, lime juice, and triple sec, shaken with ice. It’s simple and not too bad for you!

    I planned for the first time last week. it worked out pretty well. So I tried again this week. We shall see. I tend to only prep if necessary but I do batch cooking to freeze since it’s just me. I plan off what is in my freezer and then go from there!

    My husband is traveling 🙁 this week so easy meals for us! I already made hummus this morning for snacking as well as blended some smoothies to put in the freezer for easy re-blending this week.

    Recipe testing sounds like soooo much fun! Jealous of your tasters 😉 I’m very excited for your book to be released!!

    Everyone has been raving about the paleo spaghetti squash pie, so that’s what I’m making this evening. It sounds delicious! I’m extremely superstitious but it could be because my name means witch, lol.

    Hey Gina,

    I struggle with running myself – I’ve always wanted to be a runner but can never seem to get good at it. I like your style of training quietly because sometimes I want to sign up for a race with only my own expectations to meet.

    As for food planning we’re making coconut shrimp and chicken in pan sauce from the Cook Smarts website. Plus, Trader Joe’s just opened in Denver because they have awesome things to make from their frozen section. Do you have any TJ’s faves?

    cute shorts! and your hair…it’s already so long again! I’m envious. mine has always grown so very slowly. it takes me YEARS (I’m not joking) to get it to your current length.

        Well duh. Why didn’t I catch that! After I posted my comment I looked back at a recent post and realized you probably had extensions put in for pictures. My hair is probably at your real hair length right now. And for me that is considered Loooooooooong. Since it grows so slow I think I’m just going to chop it off to chin length. I don’t have the patience and after a while I start to feel so plain Jane. Enough about hair though 🙂

    Unfortunately I haven’t had time to prep for this week because we’ve been visiting family and doing wedding prep with them all weekend but I have black bean and turkey burgers in the freezer and some veggies and baked chicken in the fridge for salads. I’m surprisingly not superstitious, although I’m sure I will be for my wedding. Totally understand why you would be superstitious though!

    I made some “Japanese noodle soup” that didn’t turn out so great bc it was supposed to be in a slow cooker for bigtime flavor…but I don’t have a slow cooker and apparently the stove doesn’t have the same flavor-intensifying effects. Plus I made some broccoli, cauliflower, and potatoes to be stuffed into chipotle flour tortilllas.

    Yay for your race thing! Here’s hoping you have a great one this time!

    Strength training definitely refreshes me…in a burn-baby-burn kinda way.
    The menu this week will include lots of chicken sandwiches and probably lots of salads since we just bought feta!

    Those shorts are AMAZING! LOVE! I am totally superstitious about a lot of things, so I totally understand. Fridge is stocked for the week ahead thanks to a Costco trip on Friday. So sad that the weekend is over. It went by too quickly.

    I am not superstitious but my husband is HORRIBLY! He has to do everything exactly the same way when he is coming up on a big race. I have found myself becoming more superstitious since we have been together 🙂

    I made a big pot of soup tonight to take to work for lunches. I also made some flourless banana muffins. Hoping that they’ll be a quick and filling breakfast on the go. I also planned this coming workout week so that I can keep the momentum going from Winter Shape Up!

    Looks like a great weekend. I’m in love with those shorts, too freaking cute!!! Meal prep for me included salads, cooking chicken and an egg/veggie scramble. I love meal prepping on Sundays. It just makes me feel better about the week!
