Mint cacao shake

Hey hey hey 😀 How are you? I’m so glad you guys liked the Ugly Christmas Sweaters and agree that my husband looks like Bert 😉 Hope you’ve had a great day 😀

My day has erred on the side of lazy, with a side of some delicious raw eats

Mint Cacao Shake

– 1/2 C frozen Thai coconut meat

-1 C almond milk

– 1 t spirulina

– 5 drops liquid Stevia (or a date)

– pinch sea salt

– 1 t vanilla extract

– 1/4 cup packed fresh mint leaves

– 2 T cacao nibs (+ more for garnish)

Blend all ingredients in a Vitamix until smooth.

Stir in cacao nibs and top with remaining ones for garnish.

Devour 😀

I fought some of the holiday crowds at Targizzle, hit up Publizzle (aka Publix) and had this lovely bar for a snack.

While I’m a huge Larabar fan, I think I like these Raw Revolution bars better. Same amount of calories, more protein, not as sweet, and chocolate chips are included. Winner winner 😀

Another snack was an apple with mesquite and cinnamon:

The pilot and I did a lot of cleaning around the casa and put laundry away (any other laundry haters in the house?? haha), and honestly just chilled and relaxed. It was nice, especially after a week of go-go-go. I think it’s so important during this hustle and bustle time to pencil in some relaxation. It keeps the crazies away 😉

Dinner was legendary, and I didn’t cook a thing 😀

I made a seaweed salad with soaked arame, matchstick carrots, tomatoes, rice vinegar, nama shoyu, garlic powder and a little agave and sesame oil

And had it with some Publix vegetable brown rice sushi

Chopsticks, Nama Shoyu and enough wasabi to make my nose burn. Just the way I like it 😉

As far as workouts go, I did a really cool new workout today! It’s called: Jack. Nada.

It’s where you sit around on the couch and watch the Kardashians 😉 All kidding aside, it felt glorious to take a day off with the exception of a walk with the puppies 😀

Now I’m sitting at Bizzle, drinking some green ginger tea and am about to catch up on some emails.

Something to talk about: While I’m an anti-resolution kinda girl (if I want to change something, I prefer do it NOW, sans pressure, rather than wait for an ambiguous day to do so), this time of year I like to think of things I *will* accomplish in the New Year.

Next year, I will travel to Europe (finally!), figure out my school goals (finish MBA? More culinary school??), finish the handful of projects I’ve embarked on, and rock out the Princess Half Marathon.

What are some of the things you *will* do next year???

    I love wasabi that way too; till your eyes water. I saw those bars and wondered if you had rated them yet. I’ll have to try them next.

    I forgot to say some of the things I will do next year: Going to New York in Feb., get in SHAPE, be more spiritual. I’ll have to meditate on it some more.

    That shake looks great – I’ll have to make one, I believe I still have some coconut meat in my freezer.
    Also, those raw revolution bars are great! I had one for the first time and loved it.
    I also love how you share your raw meals with us, it makes me want to try new things and exposes me to all sorts of new foods. Thanks Gina!

    Next year I will train for and run my first marathon (so excited for this one), figure out if I want to go back to grad school, and get a second cat. Yep – all fun things 😉

    Mint Cacao Smoothie, heck yeah! I am with you on both the Raw Revolution bars (love them!) and the laundry (hate it!). Next year I just want to focus on school and maybe get a little more adventurous with the yoga. Oh, and to watch way less of Keeping Up with the Kardashians, because I am convinced it’s hazardous for my health 😉

    More yoga and meditation for sure in the new year. I’d also like to try more of the fab raw recipes you’ve got here. I’d like to start teaching fitness classes – I’m certified, but have used my tough day job as a reason not to try something new. I love thinking of my new goals!

    We were stationed in Germany and it was quite nice. I LOVED the pizza there, yeah who would have thought Germany would have yummy pizza. It just sucks now that the euro is getting so expensive against our dollar. I too need to figure out my school goals, I think I will steal that “resolution” for myself. My bachelor’s degree on the wall could use some fancy paper company.

    Hey, I did the same workout as you today! Except, I spent mine with the Jersey Shore crew (embarassingly enough).

    In 2010 I WILL get in shape, figure out my food sensitivities for once and for all, and do a nutrition/wellness certification.

    Great raw eats! That shake looks really tasty and I agree with you on the Raw Revolution bars! They are VERY good. But, I don’t think one of them could beat the Pb&J Larabar. 😉

    I will…
    -do more yoga- at least twice a week
    -train for and run a half marathon
    -include more raw foods in my diet
    -graduate from culinary school!
    -write more- not only on the blog, but journaling, and freelance.
    -SAVE MONEY! I really need to do this one.

    Can’t think of any more now. But this was a great thing to think about, thanks!

    I am really looking forward to 2010. I am training for the ING Atlanta 1/2 marathon in March, hopes in becoming a Les Mills group fitness instructor, and certified as a personal trainer. That’s the first half of the year! Haven’t figured out the second half yet 😉 Have a great night!

    I am so excited for 2010! I have a feeling it’ll be an amazing year.
    My goals are… get into my top schools (college) and move out on my own, get in shape and eat super healthily (more raw), travel a lot, save money, volunteer, do things I really enjoy as often as possible, meditate on a regular basis and become at peace with myself.

    And…this post really made me want sushi (vegetarian, that is). Yum! The shake looks amazing as well 🙂

    This year I will decide what college I want to go to (I guess this would put me in the category of being one of your “younger readers”), lose 30 or 40 pounds, and actually go audition for America’s Got Talent and/or American Idol in the hopes of finally realizing my dream of becoming a singer :] Vote for me if I do pleeease!!
    Where in Europe do you think you will go? I’ve been to London and Paris- both were AMAZING, although for health food options I’d say Paris is better. The French are very big on meals with three small courses and taking ages to eat them. My mom and I went to a little hole-in-the-wall restaurant on one of the islands in the Seine when we were there and finished all three of our courses (salad, entree, dessert) in the amount of time it took the couple next to us to finish about one and a half of theirs. Americans eat so fast!

    Laundry hater right here. I feel like laundry quadrupled when I got married. I know it obivously doubled, but still it feels like it will never end! It must be crazy when you have kids.

    That shake looks A-MAZING! I kind of need some frozen coconut meat in my life! (slash a Vita-mix :D).

    I’m a big fan of Larabars but lately I’ve been getting tired of them, so I think I’ll try a Raw Revolution bar!
