National Margarita Day + Meals and fitness

Hi friends! Happy Sunday, and Happy National Margarita Day. I’m never really into those national food holidays… unless they include chocolate or cocktails. 😉

The Pilot and I enjoyed this sweet and spicy concoction last night:

Stawberry jalapeno margaritas

Frozen strawberries with a jalapeño-infused honey simple syrup, fresh lime, triple sec, and tequila.

A sweet and spicy twist on the classic ‘rita.

  • Prep Time: 10
  • Total Time: 15

Ingredients

Scale
  • For the jalapeño-infused simple syrup: (you will have enough for at least two margaritas, but feel free to double it!)
  • 1/4 cup honey
  • 1/4 cup water
  • 1 jalapeño, sliced

For the margarita

  • .75 oz (1/2 shot) tequila
  • .75 oz triple sec
  • 1.5 oz jalapeño simple syrup (recipe below)
  • Juice of one lime
  • 1 cup frozen strawberries

Instructions

  1. To make the simple syrup, combine the honey and water in a small pot on high heat. Whisk well as the liquid heats up. Once it starts to bubble, remove from heat, and add the jalapeño. Let cool to room temperature.
  2. Next, blend the margarita ingredients in a high-speed blender until smooth and frothy. Serve immediately and garnish with a slice of lime.

Notes

  • Tip: make extra simple syrup to store and have on hand!

I took some time yesterday to put together our meal plan and start to prep for the week.

Here’s what’s on the menu:

Prep:

Grill chicken for salads

Make tempeh bacon (I’ve been seriously hankering for some)

Make grain-free chocolate chip muffins

Try making homemade fruit snacks for Liv 🙂

Chicken enchiladas with cauliflower Mexican rice and black beans

Slow cooker healthy hearty chili

Broccoli, chicken and rice casserole

The “crunch” chopped salad

Crunch salad with ranch dressing

Nothing too crazy happening on the fitness front. Since I’ve been traveling, I’ve missed a couple of weeks of flamenco- getting back into it this week!

Sunday: Core40

Monday: Teach BODYPUMP and teach spin

Tuesday: Flamenco (I consider it active recovery since I’m still a beginner and still learning technique. Things like this are far away haha.)

Wednesday: Teach spin + Barre

Thursday: OFF

Friday: Teach BODYPUMP

Saturday: Teach Zumba

    Weirdly, I’ve been craving tempeh too this past week after I saw some in a health food shop – and totally kicking myself for not picking it up now! Checking out that tempeh bacon recipe now for when I do get some… 😉

    Happy Margarita day!! What a creative recipe. I think I’ll make a similar version for our little Oscar watch party 🙂 I don’t have any strawberries so I think I’ll try subbing frozen peaches!

    That Margherita is an incredible colour! I would love to try flamenco dancing, I used to do salsa and I wasn’t too great at it but it was so much fun! My fitness routine just involves listening to my body while I’m on holiday, I keep it regular but unplanned which works for me! 🙂

    That strawberry margarita looks delicious! When I was last in Spain I was lucky enough to see live flamenco dancing. I remember leaving amazed that night. They’re truly incredible dancers.

    I spent 1.5 hours cross-country skiing and 1 hr snowshoeing yesterday (at a balmy 0 degrees!), so I am going to make today rest day and then repeat the winter shape-up!

    Your blog has got me and my boyfriend into meal-prepping every week–I love it! I crafted our weekly meal plan over the weekend, it includes a shrimp and veggie stirfry over quinoa, healthy baked ziti (with almond meal instead of cheese), and quinoa stuffed acorn sqaush with beet and feta salad. I’m really looking forward to this week’s meals. Also repeating Week 1 of WSU this week!
