Today has been pretty bueno. I worked all day, taught a stretch class and a cardio/weights class, and came home for lunch.

and lunch was a shrimp quesadilla with goat cheese on a teff tortilla, with sautéed veg.

Dinner was a product of Amy’s meals and TJs ravioli (hers and his). It’s nice to have a personal chef sometimes 😉

Things have kinda been on-the-fly this week, since the Pilot has been working insane hours and I’ve been a busy bee. Reality just hit in though because our house needs to be done by next Thursday- my MIL gets in next Friday and our housewarming party is Sunday. Good motivation to get moving and shaking when we get back from Philly 😉

I’m off to chill with the Pilot, download a new book on the Kindle for the weekend trip (I’m quitting Bossypants) and call it an early night. See ya in the morning with a mushy anniversary post 😉

Something to talk about: What’s your go-to dinner when things get crazy? For me, I’ll always reach for an Amy’s meal. The dairy-free and gluten-free tamales with black beans are my friends and I also LOVE the GF DF mac n’ cheese. It’s a nice carby treat every now and again 🙂

    My go-to meal when things get crazy busy is either enchiladas or scrambled eggs for dinner. I get a little sad when I see so many yummy runny egg concoctions on blogs all over, but I’m allergic to raw egg, so scrambled it is – with some cheese and ketchup? YUM!

    oh i could really go for a quesadilla right now with extra cheese.
    I am totally sad that I wont be going to HLS. I’m debating for next year to go to BlogHer or HLS? which would you recommend is more worth it if you could only choose one?

      i’ve never been to blogher, but have heard amazing things about it. it would be a tough choice!! because blogher is SO giant, it seems like it would be overwhelming, but the swag is incredible, and hls is so much fun. i like hls as more of a vacation to hang out with and meet bloggers 🙂

    Sounds like a good day! We’re unpacking our lives too, but into my in-laws’ basement. …little different than our own place, but it’s where we are now. 🙂 I’m nervous/excited for the HLS – my first time in Philly, first time at a blogging conference, my first time meeting people I’ve read about (like you!) face to face! Kind of intimidating for a newbie blogger without many connections, but everyone seems amazing and I know it will be a great weekend. Glad you’re going!

    We usually do soup and sandwiches when things are crazy, or DIY pizza if we have time but don’t want to “cook” bc we’re too tired from our days 🙂

    I freaking LOVE goat cheese. True story. I bought a huge thing of garlic dill and it is soooo good. Annywho I make a shit ton of quinoa and eat that with protein powder and chia seeds!! Yumm <3

    My fave easy go-to is a big bowl of whatever veggies I have on hand (asparagus, cucumber and zuchini are all great) add chicken or shrimp, black beans, lemon and hummus. Yum!! Bonus if I have avocado 🙂

    I just finished Bossypants and though it did get to be alittle bit hard going there are some fun bits at the end, the oprah sarah palin chapter I thought was hilarious and anything about her daughter!

    It’s your anniversary? Already??! It feels like it just was…about 4 mos ago?! A year has passed, already? Wow! Well Happy Anniversary! Your anniv posts are always wonderful.

    And a breakfast cookie! I spent 2009 and 2010 eating one every day, thanks to you 🙂 Somehow I rotated out of them but need to rotate them back in again!

    I always store some pizza bases in the freezer then if I don’t have much time I quickly top it with anything I can find in my fridge, the more veggies the better. Perfect, quick meal!

    One of my go-to meals is lazy girl nachos – some tortilla chips sprinkled with shredded cheese, half a can of black or pinto beans, and some salsa – all heated up in the microwave.

    Need to check out that breakfast cookie recipe, it looks intriguing…

    My husband still eats a breakfast cookie every day. He makes up his own variations, but they are the easiest option and are super portable!

    When things get crazy, I make eggs. Scramble up some eggs, throw in some veggies and slap it on a piece of toast – comforting, healthy and delicious!

    I love Amy’s meals as well, especially their Indian line! I also love sauteeing up some precooked chicken sausage with veggies and rice. Quick and easy!

    I would love to see a Focus On: New Rules of Lifting for Women. I am just about finished with Stage 1 of the plan….I’m a pescatarian/dairy free + living out of a suitcase (!) so I haven’t been following the meal plan, but I’ve really enjoyed the workouts and gaining strength a newbie lifter. I would looove to hear your opinion on it!

    I would like to see a Focus On Stretching post. You always talk about teaching the stretching class, and I think that would be some good info. I am working on my flexibility and reducing muscle soreness. Most of the stretches I do are what I remember from elementary gym!! lol

    I’ve never tried an Amy’s meal before… $6-7 for one meal seems so pricey! But I guess it’s cheaper than takeout… My go-to meal when life is busy is a stir fry with veggies, brown rice, tofu, and a nut butter sauce. It’s my favourite!

    A new book I have fallen in love with ‘ How To Love An American Man: A True Story.’ I won’t lie and say I didn’t cry, because I did. I also read it in 12 hours. It’s an amazing book. It’s on the kindle (it just came out so you can’t lend it, bummer). I think you will lourve it!

    Have you read “Dear John”? I picked it up at the airport when my flight was delayed and finished it in two days. Surprisingly good book. Also for a focus on post I’d love to hear more about the Body For Life program.

    Our go to dinners are usually of the TJ’s frozen variety or just veggie/salmon burgers. When our frozen meal stash gets low (like it is now) it makes me anxious to get back and stock up! Happy Anniversary! It’s my parents 32nd today too.

    I always have a few pre-made, home-cooked meals in my freezer ready to go for when things get crazy! Best advice my mom has given me as I prep for baby (8 weeks from D-Day!) is to stock my freezer with meals. That way when I am sleep-deprived and starving the hubs and I can still eat real food! I am sure there are a ton of gluten-free options you could do this too with! From what I hear a well-stocked freezer is a life-saver the first few weeks 🙂

    Amy’s products are my favorite! I love the Mac & cheese and veggie lasagna!! 🙂 I just recently tried the cheese enchilada & it was super yummy! I’ve been eager to try the tamale& I’ll have to now, thanks for sharing!!

    My go-to meal is a baked potato. It cooks in the microwave in less than 6 minutes, I can add whatever toppings I have in my fridge (cheese, arugula, mushrooms or sun-dried tomatoes) AND its the perfect base for leftovers (pulled pork, bbq chicken, roasted veggies, etc.).

    Thanks so much for that link about the diabetes study! Amazing. I sent it out to all of my family and friends. We just had a family friend die two weeks ago from diabetes, and it seems like everyone knows someone with it. To hear that it can be reversed by diet alone is a miracle, but makes sense with what I’ve learned about health so far. The most important thing we can do for ourselves is “right at the end of our forks” (China Study).

    I am quitting Bossypants also. I’m maybe 40 pages in. I think Tina Fey is loveable and hilarious.. but her book is unnecessarily crude. I will go through and read the Sarah Palin chapter though before I return it to my book club friend.
