Pancakes and Cupcakes

Morning friends! How’s your Sunday going? Hope you’re having a refreshing and relaxing day 🙂
I started mine off with some Perfect Protein Pancakes

They look pretty standard, but were a little different from the usual:

Lavender Blueberry Protein Pancakes 😀

Added 1/2 t dried lavender to the mix and frozen organic blueberries to one side during cooking.

It’s fun to switch things up every now and again 😉

After my breakfast feast, I went to my favorite Sunday morning spot:

and per usual, it was super busy and full of amazing vendors.

I looked around for a second, but only picked up a couple of things because my hands were full:

gluten-free cupcakes (these ones are PINK on the inside! Can’t wait to share them with the fam today)

and salteñas for the Pilot and my little bro.

Plan for the day:

-Laundry!! We got a new washer, so I can tackle laundry mountain. Not very stoked, but I’m running out of clothes 😉

-Post Family post

-Cupcake party with the fam

-Gym (active recovery day)

-Meal plan + groceries [let me know if there’s anything you want to see this week!]

    These sounds delicious. My parents have a lavender farm about a half mile from their house so they bring me some buds. I am going to try this recipe.

    Also glad to see someone else had to buy a new washer. Mine broke yesterday and I had to get a new one. What an experience looking at all the models. Bought a front loader. Hope I like it. I also have mounds of laundry and it is going to get worse because they will not deliver until Friday. Good luck with yours. Love your site.

    I live in Tucson! Where is this farmer’s market??? The only one I’ve been to was on E. Tanque Verde and Catalina HWY. It was teeeny tiny.

      The good markets are Friday @ Jesse Owens Park, Saturday @ Oro Valley Marketplace, and Sunday at St. Phillips Plaza. If you aren’t GF, check out Planet of the Crepes….it’s one of the few things I’ll miss about Tucson.

    I love protein pancakes. Couldn’t find an acceptable vegan version yet 🙁 Might start experimenting on this next week.

    I remember reading not to use lavender scented products with babies so I wondered if anyone worried about eating it during pregnancy and googled it. There’s not much but the wikipedia article on lavendar cites some study that recommends against it. I doubt the tiny bit you occasionally use is anything to worry about but thought I’d mention it. It’s probably bad in high doses, like drinking lavender oil.

    What a delicious twist on protein pancakes! I’ve actually never tried using lavender flavouring before… but I love the smell of it. 😀

    I should definitely try putting lavender in my pancakes! The Doughnut Plant in NYC actually made lavender doughnuts where they put the lavender right into the glaze. It was amazing! 🙂

    I think that you should develop a g-free, possibly veg. recipe for salteñas! They look deliciouso. I am all about comfort foods like that. Please consider? 🙂

    how do you use lavender? Is it the flower or the leaves and stem? I have a lovely lavender plant on my balcony and would love to utilize it for cooking and baking.
