Party Menu

Morning! Hope you’re having a great day so far <3

Thanks for all of the tips about Bell and possibly adopting a friend for her. We decided to wait it out and reassess in a month to see how she’s doing. And in the meantime, make sure to give her lots of love and attention, starting off with an extra long walk this morning 🙂bell8

Last night was Mexican Monday over here 😀

I told the Pilot to hurry up and get home from work… I had a lot of guacamole and couldn’t possibly eat it all alone 😉

To go with our guacamole and chips, I made quesadillas- chipotle-lime shrimp (from Costco) and goat cheese for me on a teff tortilla, and shrimp and queso fresco for the Pilot on corn tortillas.

Grilled the quesadillas on the George Foreman and served with refried black beans.

I’ve been trying to think of menu ideas for our housewarming party, which is in two weekends! [This weekend we won’t be able to prep since we’ll be partying it up in Philly]

Mexican is usually perfect for a crowd, so here’s what I’m thinking for a tentative menu:

-Green corn tamales

-Beans

-Mexican rice

-Mini chimichangas [from El Molinito]

-Homemade horchata and Sangria

-Chips, salsa, guacamole

-Fruit skewers with lime juice and mint

-Tres leches cake

I’m going to be cooking up a storm next week 🙂

    I’ve never tried a teff tortilla…how is the texture? I usually make my quesadillas with Trader Joe’s whole wheat corn tortillas (it’s a mix between flour and corn) and I love the slightly crunchy texture it gets from being panini’d (that’s how i make my quesadillas)

    I would surely be ready to devour that menu! Sounds delish! Most of my life I couldn’t stand guacamole and then about 3 years ago, I gave it another go and haven’t looked back since! I could eat it daily, I swear!

    Love the menu. Plus you have things that are special to both you and the pilot (tamales, horchata) which makes it extra awesome. It’s perfect. 🙂

    Yum! That all sounds amazing…I love mexican food! Can you share your recipe for the tamales once you make them?

    Maybe a build your own taco bar? Traditional tacos with soft tortillas, meat, onions, cilantro and radishes. You can make different meats (and maybe marinated tofo/tempeh?) and have different sauces out. I know you’re not a big meat eater, but not sure if your friends/fam are? Just an idea!

    Just make sure you have time to sit and enjoy your guests! You don’t want to be spending all of your time on your feet and in the kitchen!

    Mexican is my all time favorite cuisine! I’m from Miami so we have tons of Cuban restaurants– and not many baller Mexican options. For this reason, every time I see Mexican feastings on your blog I pretty much pass out 🙁

    I always like Mexican for a crowd. Especially with a build your own burrito/fajita/taco type thing because the toppings— all those veggies and cheeses laid out side by side on a long platter look so beautiful.

    We love doing taco bars here. Everyone can make there own when they want. Perfect. But what I really want to know is where did you get that carafe??? I have been looking all over for one just like it and no luck. I couldn’t even find one on Amazon which was kind of surprising.

    On the topic of Bella & a friend, we’ve got two cats and we got the second as a friend for the other when we were both working away from home all day everyday. Although they don’t “hang out” together all the time, I think they really appreciate having a “buddy” around so they aren’t alone. Whenever one has to go to the vet the other searches and searches for the other until they return. It’s cute 🙂

    I need to go back and check the August list to see what I need to get done! 😀

    Oh that horchata looks so good! There’s a couple local Mexican women who sell their horchata and other kinds of fresh juices, too, at the farmers market here every week and it’s sooooo amazing. It’s heavenly. I want to try yours!

    And waiting on a dog. I am happy you guys are holding off for a bit. I think that is so smart. You can always re-assess in a few months and see.

    New cookbook? Oh girl, I wish I could give you some of mine. I seriously have soooo many. I did a post on how I havent even unpacked them from out last move…haha! Internet, blogs and well, my books…I just dont use them as much anymore. Crazy but true.

    Wow, at first glance I thought that cake was cottage cheese!! I have obviously been eating too much of it…
