PRO meal: Mexican stuffed sweet potatoes

I’m fully convinced that everything goes with sweet potato.

Sweet potato

You can add more sweet (butter, brown sugar and cinnamon = the trifecta of foodgasms) or use the sweet potato as a lovely complement to your favorite savory dishes. One of my all-time favorite sweet potato combos: atop a salad with rotisserie chicken, goat cheese and balsamic dressing- it’s absolutely heavenly.

Here’s a new favorite:

Most of the components to this meal were made in my Sunday prep, so I just needed to quickly combine, heat and eat.

Oh, and serve bites to a tiny opera singer in her high chair.

Components:

-Baked sweet potato

-Marinated chicken

-Goat cheese

-Beans (we had kidney on hand, but anything would work!)

-Salad greens

-Salsa

-Cilantro

This would also be fantastic with tempeh instead of chicken, or a dollop of Greek yogurt and some sliced scallions.

    Fact: I love anything that contains cilantro. I sometimes just munch on a few leaves from our plant. Everyone who has ever seen me do this thinks I’m crazy haha. That being said, this looks amazing!

    I’ve been on a huuuuuge salsa kick lately, so this meal sounds absolutely perfect. I’m never able to decide if I prefer sweet potatoes sweet or savory, so I think I’m just going to give up and say they’re amazing both ways.

    Yummmm!

    I am mildly (as in completely) obsessed with potatoes of all kinds!
    One of my favorite ways to eat them loaded with substantive toppings like chicken and marinara, I’ve never tried a Mexican theme though, now I’m inspired, wohoo!

    I used to detest sweet potatoes but now I eat them each night before a half marathon! My favorite: baked sweet potato topped with scrambled egg whites, goat cheese and raspberry preserves. YUM!

    Funny sweet potato story… I used to think butter, brown sugar and cinnamon was the only way to eat a sweet potato… until I found your blog. Savory sweet potatoes soon became my favorite… butter, sour cream/greek yogurt, salt, pepper, chives, cumin, cayenne, paprika, you name it. Best discovery ever (thank you for that!) Anyway, a couple of months a ago we went to a local BBQ joint, and I ordered their giant russet baked potato for my meal, with butter, sour cream and chives. After we ordered, paid and sat down, the guy came over and said he was sooooooooo sorry, but they just ran out of baked potatoes. I asked if they still had sweet potatoes (they have them on the dessert menu with cinnamon butter) and he said they did, so I said perfect I’ll just have a sweet potato instead, with butter, sour cream and chives. He gave me the longest blank stare and finally said, “Uuuuuuhhhhhh, you know what a sweet potato is, right???” He clearly thought I was crazy but once he brought me my sweet potato he said it actually looked and smelled so good he was going to try one for dinner. Spreading the sweet potato love. 🙂

    Yayyyyy I LOVE when you offer quick meal ideas — usually I eat a sort of “mixed plate” for dinner or repeat the same boring but healthy/quick meals. It’s nice to have ideas for “real” meals sometimes, so thank you!!

    Also, I have been using (abusing? ha!) the workouts on your fitness page lately and just wanted to say THANK YOU for organizing and listing them out! It’s so helpful to pop over and quickly select a fun and heart-pumping workout a few minutes before the gym. I am especially liking all your later workouts that don’t rely much on the weight machines and instead use all the fun stuff 🙂 Keep at it, mama!

    I love Mexican stuffed sweet potatoes too! I always stuff mine with black beans cooked with onion and cumin, plain Greek yogurt, pico de gallo and guacamole. I love the flavours in yours with the chicken and goat cheese though – I want to try that next time!

    I have made a version of this before and it was amazing! I agree sweet potatoes are good with just about anything! Where do you find shredded goat cheese? The only kind I find at the store is a creamy log of goat cheese.

      quite a few grocery stores (i like the tj’s brand) have blocks of goat gouda and goat cheddar- you just use a cheese grater to shred it up 🙂

    Yum! I’m a sweet potato fan for sure. I make a meal similar to this at least once or twice a week, but I normally throw a fried egg on top. The drippy yolk goodness is a wonderful “sauce”. Delicious! 🙂

    Have you ever had white sweet potatoes before?!!?! I didn’t know such things existed until I found some at my grocery store. They are amazing and kinda surreal. I made a tasty white sweet potato and cheddar corn chowder…it was a HUGE hit!

    So, I am loving my new healthy eating, my husband, not so much. If it doesn’t have fried, meat, cheese or some such combo, it’s not a meal to him. I finally bought kale and it’s been sitting in my crisper because I can’t figure out how to incorporate it into a “family” meal. Don’t even let me get started on my child who refuses to eat all but three things, none of them green. How do you ladies get your husband on board with your great eating habits? Especially if you didn’t meet, date, marry, have a child, on this healthy diet?
