White bean, spinach and goat cheese lasagna

Hey hey hey 😀 How are you? Hope you’re having a glorious afternoon/night.

I was so thankful that a work friend could cover the morning part of my shift today- I busted out my productivity pants!

I ran errands

wrote two blog posts

took care of finances/bills/blah

curled my hair

hair

and made a new recipe before going to work 🙂 This day is winner.

That ,my friends, is White bean, Spinach and Goat cheese lasagna before its trip to the oven. [gluten-free, vegetarian and easily vegan-able]

Some ingredients:

+ 2 servings of soft goat cheese

-3/4 C shredded goat gouda (Vegan? Use Daiya instead of both goat cheeses)

-half a container of organic spinach

-juice of half a lemon

-cayenne, sea salt, pepper, garlic

1. Pre-heat the oven to 350 and boil 8 lasagna noodles so that they’re slightly undercooked. Pat dry.

2. In a pan on medium heat, sauté the chopped shallot and 2 cloves of minced garlic in olive oil and a little butter until soft.

Wilt in the spinach, add the beans (drained and rinsed) and season well with sea salt, pepper, the lemon juice and a pinch of cayenne.

3. Next, layer the lasagna!

Sauce on the bottom, covered by 3 noodles:

Then 1 serving of crumbled goat cheese, 1/2 of the bean mixture:

2 noodles, sauce and shredded goat cheese:

Top with the other half of bean mixture, crumbled goat cheese, 3 noodles, sauce and shredded goat cheese.

Bake for 30 minutes covered in foil, 15 minutes uncovered.

Feast 🙂

I’m so excited to have that waiting for me when I get home from Zumba tonight 🙂

    I made lasagna tonight too! I was pretty productive today at work, then did kettlebell workout, errands, picked up kids, etc.

    Holy moly! That lasagna looks delish! I’ve only ever had the basic (tomato, meat, mozz cheese) kind! I never even thought of mixing it up! Love.

    Today musta been the day for Productivity! I just got back from my honeymoon on Sunday (wahhh) and finally kicked myself into gear and got SO much done today! It feels great. Now for wine. 🙂

    Close! Black Target 😉 I totally ninja-kicked my list! I worked out, cleaned the bathroom from top to bottom, including scrubbing the floor! Swept and scrubbed the kitchen floor, did two loads of laundry…all before work! Then I worked all day and came home, did more laundry, and now I’m enjoying a glass of wine 🙂

    My productivity pants are yoga leggings from VS… lululemon some day for sure though! I checked off my yearly dr’s apt, took an awesome barre sculpt class, got a job interview for Tuesday (yay!) and started working on my thesis 🙂

    I had a huge illustration deadline today, and it was such a relief to check that off my list! Too bad I have another big deadline tomorrow… but then it’s Friday, so it’s all good. 😉

    i made some delish mung bean dal today and added in some potatoes…oh it turned out so good. it was one of those random cooking nights too…then i also made some delish brussel sprouts with lots of garlic and white onion seasoned with s&p and some balsamic vinegar…too good. 🙂 good nite!

    Yesterday was such a productive day for me too! I wrote a blog post, responded to emails, picked out my courses for next semester, and made homemade linguine. And then crashed in bed with a pasta food baby. 😉

    That looks so yummy. Hello Sunday night dinner! 😉 My fiance is a major meat lover but he also lives for goat cheese so I think he will love this 🙂 What size dish is that you’re using? Would it work if I use a 9×13 casserole dish? That dish looks smaller.

    My “ninja kick” pants are the holiest jeans I own. So full of holes, I have to wear leggings under them! I finally took out my king size bed frame/headboard and got it downstairs. We lowered the box spring and the mattress to the floor so my 14 year old puppy can get up on the bed – he was having a hard time making the jump. And who knows – I’m getting older, so I’m sure I’ll appreciate a lower bed too! Take care – your dinner looks fabulous – you’ll have to share the verdict! The lasagna looks glorious…goats cheese is my new love, thanks to you for planting the seed and denting my wallet 😉 (you’re forgiven) I’ve been putting melted goats cheese on everything lately (within reason, lol!), and remember when you posted about jumping for joy when you found some of the sliced stuff in a supermarket…I was the same!     I’m not a huge fan of goat cheese but this looks amazing! What kind of cheese would have the same consistency of that cheese?

      feta would work for the crumbled cheese and any shredded cheese for the shredded gouda

    Wow! That sure looks delicious! You might wanna try the Himalayan pink salt from Sustainable Sourcing (here’s their website https://secure.sustainablesourcing.com ). Plus they make it in a gluten-free (no cross contamination) facility which is even better IMHO!!

    I tried this tonight- so delicious! I didn’t have shredded goat cheese, only crumbled, so I used that throughout and on top instead. I’ll definitely be making it again.
