Quick No-bake Grain-free Cookie Dough

It always blows my mind when people say they don’t like chocolate. It’s ok, we can still be friends.

I live for chocolate. Livi is quickly learning the ways, too. My nana bought me a cupcake magnet years ago and when you press the cupcake it says, “I loooooooooove chocolate.” Guess what 18-month old loves to press the magnet and say, “I loooooove chocolate!” along with it? Pretty dang cute.

I especially love a little something sweet in the afternoon with my coffee. Nana and I call it our “jolt” time, and it always involves coffee, usually a bite of something sweet or some popcorn. So, naturally around 2pm the other day while Liv was napping, I started to scrounge for a sweet treat.

No-Bake Grain-Free Cookie Dough

I found this chocolate bar from Whole Foods, which wasn’t really my favorite:

and gave it second life in a no-bake cookie dough.

Grain-Free No-Bake Cookie Dough

Ingredients

Scale
  • 1/2 cup almond meal
  • 1/4 cup sunflower butter (or any nut butter)
  • 1/4 cup maple syrup
  • 2 heaping tbsp chocolate chips
  • pinch sea salt
  • 1tsp vanilla

Instructions

  1. Mix all ingredients in medium bowl
  2. Form into 4 cookies
  3. Place on a plate and refrigerate for 30 minutes

    One thing you’ll NEVER here me say is…”I don’t like chocolate.” It’s the best thing ever, in my opinion! 😉

    I’ve seen these kinds of things popping up everywhere! I’m so obsessed with them.
    I recently made my own no bake cookie, and oh man they are so perfect for the Summer when you just don’t want to turn on the oven.
    Definitely my favorite thing about egg free cookies, is the fact that you can just eat the dough. I actually don’t really like baked cookies that much. I guess that’s odd;)

    Oh goodness, I can’t wait to try this! I saw it on Instagram this weekend, and was looking forward to your post on it today.

    I always need a little afternoon pick me up too, especially since Hunter has been born, but I’m hesitant to rely on coffee too much. I worry that I won’t be able to get to sleep very well or that I’ll become too addicted. Buuuuut maybe it’ll just have to happen. I like your idea of a cup of coffee and a little something sweet. 😉

    Oh my goodness… My mom has a bear at her house that says the same thing, and Baylie LOVES it! It was one of the first stuffed animals that she actually paid attention to. She DEFINITELY has my blood running through her!!! My mom raised me to eat based on the “sandwich” theory–chocolate, then dinner, then chocolate.

    These look amazing! I wish I was at home right now so I could test these out! I wonder if I can sub anything for the maple syrup. I can’t have sugar (cue eczema and bad headaches – boo!) but do fine with stevia and 99% cocoa. Any suggestions?

    I will have to try these after I go to the store. I am somehow out of all nut butters in the house including PB. It is shocking since usually we have the industrial size jars of PB because of my boys and then I have almond butter and sunflower butter in the house.

    Chocolate is pretty much the perfect accompaniment to coffee, especially when the afternoon slump hits. I always said I wasn’t a big fan of cookie dough, but that’s mostly because the idea of eating raw eggs totally skeeved me out, so a cookie dough without the eggs is perfect 🙂

    I actually used to not like chocolate! I know….blasphemy! Growing up i was only about the fruity/sour candy and treats. It wasn’t until I had a love for healthy living that I started to love dark chocolate. Now I can’t handle anything too sweet. Crazy how your tastebuds change like that.

    YUM! And yes, a life without chocolate would just be sad! Luckily, my hubby came home with a raw bar the other night when we hadn’t had chocolate in the house for a few days. I couldn’t have loved him more that night because I was in withdrawal for the stuff (that probably shouldn’t be phrased exactly like that; I sound like an addict haha)

    I recently started making no-bake treats and i love them! So easy and I don’t have to turn on the oven in this hot weather. Most of them do not need added sugar which is always a plus. Can’t wait to make these!

    I know what you mean about the afternoon “jolt!” I often have coffee 4x a day- 0700, 1400, 1730, and 2030 (caffeine doesn’t affect me, so I can get away with nighttime coffee). Summertime means it’s ALWAYS iced coffee, and I love making homemade iced mochas:
    Cold brew/chilled coffee + almond milk + dark cocoa powder + stevia powder
    …all mixed with a blender-wand and then lots of ice added. It’s so good, and pretty decent, nutrition wise.

    And I’m not a huuuuge fan of solid chocolate, but chocolate-flavored things (like mochas!) are definitely a go-to treat!

    5 ingredient vegan cookie dough? Fine by me! I love that you used sunflower butter – it is definitely my top choice lately. I’m not such a fan of chocolate bars with crunch pieces of anything in them. I prefer my chocolate to be completely smooth, but like you, I have received several bars of chocolate (mostly for my birthday) that just aren’t what I’d normally choose. Now I know what I’ll be using them for!

    Mmmm. Recipe looks great. I pinned it. But im one of those oddballs that isn’t crazy for chocolate. Unfortunately, I do love sweets and I love chocolate if it includes peanuts, peanut butter, almonds, caramel… just about anything really. But chocolate by itself I can turn down 99% of the time.

    oh yum, these look amazing, especially with the addition of sunflower butter (one of my fave nut butters). the no bake concept is perfect for summer – reminds me of baking with my grandma when i was little and how i loved to lick the mixing spoon with the raw cookie dough 🙂

    Love this recipe! I wonder if I could use ground oats in place of the almond meal? (I’m allergic to nuts.)
