Quinoa Pizza Snack Bites

Some things you may not know about the Pilot:

-He doesn’t like quinoa… or squash.

I knew all of the above facts except for the last one, up until a few weeks ago.

“Um, brain, I have something to tell you.”

[We call each other “brain.” It makes no sense but really, neither do we.]

“Sure, what’s up?”

“Well, you know that quinoa and squash thing you made the other night? I liked it, but I don’t really like squash…or quinoa.”

“Haha so both of the main ingredients…you don’t like them…but you liked the dish?”

“Yeah?”

Poor guy. After all these years of making him these two foods, I come to find that he detests them. At least he’s been a good sport this entire time! True love.

Here’s the thing: if you’ve been reading my blog since the early days–thanks for sticking around!–you may remember that I used to make separate meals for the Pilot and myself, especially when I was a vegetarian turned pescatarian. Well, now with Liv in the picture, all I can say is “ain’t nobody got time for that.” I try to make meals that the 3 of us will enjoy and usually, it’s really easy. Liv wants pretty much anything I’m eating–I might tone down the spice for her, but she seems to like spicy–and there are so many meals we all enjoy: salmon, veggies, burgers, Mexican, Italian, stir fry, pizza, eggs, etc. I make vegetarian dishes often, since I don’t like to rely on meat too heavily. Guess I need to pick up a steak for the quinoa nights…

More for me and Liv though, right? 😉

I made a batch of these yesterday, using a Pinterest recipe (and my prepped quinoa!) to freeze and quickly reheat for a snack.

The only changes I made:

turkey bacon instead of pepperoni

Turkey bacon 1 of 1

shredded goat gouda for the cheese

one egg + one flax egg

Mix 1 of 1 5

Don’t follow my lead on that one; I’d use two eggs next time as the recipe indicates. Even though they’re crumbly, they have a beautiful robust flavor- especially delectable with some marinara sauce.

I also have my eye on these buffalo chicken bites– they look amazing!

Is there any dish you know to not make for your significant other? Who does the cooking in your family? I do most of it (unless the Pilot grills), and the Pilot cleans the kitchen every night (which works out well, because dishes are my least favorite chore).

    Haha, this cracks me up. Tom sounds so similar to Kevin. He is such a good sport and will eat anything I put in front of him even if he doesn’t like it. However, I do notice on nights that he hates what I make, he will stop after a few bites and say he is full. I have learned that on certain nights of the week to have a burger or a piece of meat ready for him in lieu of any ‘weird’ thing he doesn’t care for. 🙂 So yeah, I mainly cook and must yank teeth to even get my husband to clean the kitchen/dishes.
    However, he WILL clean bathrooms. I take the trade off!

    My boyfriend loves quinoa- when I meal prep on Sundays for my lunches, I hide my quinoa at the back of the fridge because he’ll eat the whole thing!! and man, red quinoa is expensive. I do share sometimes 🙂

    Ha ha what a good sport!! We don’t necessarily do separate meals, but I make modifications- he’s a much bigger meat eater than I am, so if I make stir fry, I might make chicken for his and tofu for me!!
    The quinoa pizza bites look AMAZING (and the turkey bacon sub is awesome!!)- thanks for the post, definitely be trying these this weekend.

    Also quinoa! My boyfriend hates it. I also had him eat his first Kale Chip recently.. and he practically gagged. You can’t win them all I guess!

    This sounds great! I have a bag of quinoa sitting in my pantry that I have been meaning to cook. I also have some turkey pepperoni that I think would be awesome in this!

    Patrick will eat whatever I put in front of him and its amazing. Makes my life so much easier! When we first started dating, I ate your typical American omnivore diet. Since then, I’ve been veggie, pescatarian, tried vegan, dabbled with raw, ate meat while pregnant, and now back to pescatarian (and feeling so much better!). He just sits at the table happy to eat whatever I’m making because he loathes cooking….and I loathe dishes so it works out well!

    Those quinoa bites look so good! I think I’ll whip some up tomorrow while Tripp is napping.

    My husband hates zucchini. But…he loves my cookies. Yes they are zucchini cookies. I just never offer up the fact that they are zucchini. One batch of cookies I did not peel the zucchini enough and it was more green than white and one of those green shreds stuck up out of the cookies and my husband saw it. He now will NOT eat my zucchini cookies because he hates zucchini. Sad, very sad. I also put zucchini in my meatloaf and meatballs. HA!

    Those are some gorgeous family shots. Can definitely see a resemblance! My father was in the Military and I love his shots in uniform. You should do a wall montage if it takes your fancy.

    I think it’s great Tom can disclose that to you about quinoa. And such a good sport to eat it for you 🙂
