Sabino Sunday

Hi! Hope you’ve had an amazing weekend <3

Today was breakfast in bed, courtesy of the Pilot,

and a lovely hike at Sabino Canyon- happy Sunday, indeed 🙂

The weather was perfection –warm with a cool breeze-

and we did around 4 miles.

Sabino Canyon is one of my favorite Tucson spots– I have no idea how many times we’ve been there. When my brothers and I were younger, my nana would take us to ride the tram to the top of the canyon, enjoy a pinic and then ride back, it was a standard when I started to get into fitness and running, and now, the Pilot and I like to go as often as possible. Last time we ran it together, he had enjoyed a little too much of madre’s oatmeal (with heavy cream, butter and brown sugar) and cinnamon rolls- he wasn’t feeling too great by the time we got to the top 😉

Today, we talked, huffed and puffed up “death hill” and also saw Kyle and Meg while we were there. 🙂

Some recent eats:

-frozen banana

-frozen mixed berries

-Sun Warrior vanilla protein

-hemp seeds

-vanilla + a pinch of sea salt

Yesterday’s protein pancakes with oatmeal mixed in:

They were kinda gross, but the almond butter and jelly saved them. Still haven’t perfected the oatmeal protein pancake- let me know if you have a great recipe!

Today, we’re off to run a couple of errands and then meeting up with friends for dinner.

    I recently went on a hike, too; it’s great exercise and a great way to mix up the usual plyo or running I do.

    I struggle making anything (aside from a smoothie) with protein powder…I’m blaming the hemp protein powder and not my actual baking skills… 😉

    Looks like a great start to a Sunday. I did your ‘see ya saddlebags’ exercise on Sat morning and boy is it good!!! Am still feeling it in my thighs two days later!

    hey fitnessista,
    I was wondering how you managed to eat/meal plan when just cooking for one? I know you’ve had some time when the Pilot was away, and had to fend for yourself. I’m recently in a long-distance relationship and having trouble motivating myself to actually cook- which, as you can imagine, makes it pretty difficult to eat WELL. Any tips?

    I totally have a bomb oatmeal protein pancake recipe for you 🙂

    2 egg whites, 1 whole egg, half cup oats, 1/3 cup cottage cheese (I use Greek yogurt because I can’t do cottage cheese), generous spoon full of pumpkin, vanilla, cinnamon and stevia! Put it all in the blender, or use a magic bullet. Batter makes about 7 small pancakes or about 4 good size ones! Yes, this is all one serving!!! Top with Greek yogurt and your favorite fruit or my personal favorite, almond butter with banana 🙂 On a good day, I’ll add a few dark chocolate chips and it tastes HEAVENLY!!!!! Hope you enjoy 🙂

    I’m off to cook all my food! On the menu this week? Clean french toast with almond butter and banana with a side of greek yogurt and pumpkin spice, red peppers and carrots with hummus for snack, Salmon Salad beast (yes, I stole that word from you) with cranberries, almonds, carrots, quinoa, spinach and white balsamic <—SO yummy as a dressing btw! Homemade pumpkin protein bars courtesy of gracious pantry for my afternoon snack and homemade turkey burgers with sweet potato fries and broccoli for dinner. Last but not least, my evening snack will be a greek yogurt parfait with frozen raspberries, stevia, cinnamon and a few grape nuts on top!

    totally have my fitness planned for the week, and the next couple months as well, i’m training for my first half marathon in May. As for meals, i’m kind of workin on figuring some of that out now!

    I still haven’t found the perfect protein pancake, so I just mix equal scoops of just-add-water pancake mix + whey protein powder with a little almond milk, and they turn out amazing!

    Question for you Gina. What exercises can you do for the knees. After walking up a lot of hills my knees just kill me. Some times I have to beg them to “not let me down”. My next goal is to conquer this really high hill but hesitate because my knees and legs just get totally exhausted.

    I am feeling pretty proud right now for two reasons: 1. Weekly menu planned, groceries bought, and veggies for salads chopped 2. Today I did my very first ever double-digit (10mi) run for my upcoming half marathon. So, that said, this week will be full of healthy eats and lots of easy recovery miles.     I still got to do my meal planning, but we already stocked the fridge with tons of fresh produce so it should be a no brainer! My workouts this week will be much harder to get in because we are going away at the end of the week… and St. Patty’s Day is this weekend. I definitely got to do some brainstorming!

    Protein pancakes are a staple of mine. I’ll cook up a batch and toss them in the fridge for easy grabbing during the week. My (super simple) recipe which I had gotten a long time ago on the Oxygen Boards is:

    1c. cottage cheese
    1c. oatmeal
    4 eggs
    Extras (I add a tbs of honey, vanilla, cinnamon, nutmeg and a fruit, generally blueberries or strawberries)

    Cook them up just like regular pancakes. I think they are delicious, personally. This recipe makes up a pretty large batch, so you can cut it in half. 🙂

    I second the suggestions for the oatmeal/cottage cheese pancakes. I eat them every morning and they’re super filling, can’t even taste the cottage cheese. I make a big batch of batter at beginning of week so they take under 10 minutes and I’m not constantly washing my blender

    I typically blend all the ingredients together but if I want a little texture I’ll blend eggs, cottage cheese, and extras (vanilla, nutmeg, etc.) and then add oatmeal at the very end.

    This is my favorite oatmeal pancake recipe. The actual recipe doesn’t call for protein powder but I have added it in and they’ve turned out great.

    OATMEAL PANCAKES
    1 egg
    1 egg white
    1 1/2 c skim milk
    1/4 c applesauce
    1 tsp vanilla
    1 c oatmeal, quick oats
    1/4 tsp cinnamon
    1 c whole wheat flour
    1/8 c sugar
    1 1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt

    In a medium mixing bowl, mix together the first 5 ingredients.
    Stir in the remaining ingredients until well blended.
    Measure each pancake out with a 1/4 cup. Pour onto grill, flipping halfway.
    Top with syrup, peanut butter, whipped cream or your favorite fruit.

    What I use for protein pancakes is 1/3 cup oatmeal, 1/3 cup cottage cheese and 3 egg whites with some cinnamon, Throw it in the magic bullet and cook up, topped with peanut butter and banana slices. So easy and so good.
