and I loved picking up a couple of birthday surprises for the little lady. (PS all she asked for for her birthday was a Tiana princess dress, and turns out they’re very hard to find!) 

Breakfast: eggy oats

(1/3 cup oats cooked in water with an egg + 4 egg whites cracked in; added frozen berries, cinnamon, almond milk, Stevia and a blob of almond butter)

and I introduced Liv to this glorious combo for a snack: popcorn with cinnamon and chocolate chips.

This afternoon with lunch, we also shared a veggie platter with the current favorite dipping sauce: this savory creamy goat cheese dip.

I had a block of goat cheese in the fridge, and instead of crumbling it for eggs and salads per the usual, I decided to switch it up a bit.

It went into the food processor along with some almond milk, spices, and a squeeze of lemon juice, and it.it.AMAZING. It also makes a delicious creamy salad dressing!

A Ranch dressing-inspired veggie dip. Perfect for crudités, crackers, spread onto a wrap or as a salad dressing.

  • Prep Time: 5
  • Total Time: 5 minutes

Ingredients

Scale
  • 5 oz goat cheese
  • 1/2 cup almond milk
  • 1/4 teaspoon each: dried oregano, dried dill, onion powder and dried parsley
  • Salt and pepper to taste
  • Squeeze of fresh lemon juice

Instructions

  1. Combine all ingredients in a small food processor and blend until smooth. Serve immediately, or store covered in the fridge!

What’s your fave salad dressing or veggie dip? I love Goddess dressing -please let me know if you have a recipe to make it at home!- and have been making this Maple-Dijon vinaigrette quite a bit lately.

    This dip looks great as does you oats recipe! Just wrote down how to re-create it. My go-to dressing is usually olive oil and balsamic or apple cider vingerar. I also add spices to make it more flavorful if I am in the mood for something different.

    Love the popcorn snack! My parents for a few years now have been putting goobers (chocolate covered peanuts) in their popcorn for movie nights and I’ve never known anyone to do anything close to it! Also love goat cheese, will be trying the dip!!!!!!!

    You ladies are so cute with your curly tongues! My fave dip is an Asian-inspired one that I make with chickpeas, lots of ginger, tamari, rice vinegar and chili flakes… sort of like Asian hummus I guess, but thinner!

    Nom Nom!!!! I was ready planning to make your delicious “Nestle” protein bars, I guess I’ll be going back to the store later to make this dip too! I’m always looking for new ways to change up salad dressings, I tend to get in a rut! Thanks for such great recipes, you are my go to recipe gal!

    DUMB question: I’ve never had/made eggy oats. I have celiac and will make mine with gluten free oats. But the egg part… do you add the eggs while the oats are cooking? or cook them separate? or add them raw (ewww, but i hear some peeps like raw)

    Also wondering how long to cook or microwave the oats so the eggs are done?
    Loving the book. I started to bookmark recipes I want to try and decided marking every page is ridiculous 🙂
    Instead I just marked where each meal starts. Now if the weather would improve so I could get to the store. Gotta love Iowa in the winter.
