Strawberry lemon oat bread

Oh Bell. So much joy and sass for a tiny pup.

Livi and I had a great morning, and then around noon, we went to go see Kyle and Meg’s new house. They moved this weekend while we were out of town, so I was excited to check it out for the first time. It looks beautiful! Luna seems to be enjoying her new digs, too 😉

We picked up Oregano’s takeout:

(that’s the Oregano’s favorite salad: greens, kalamata olives, sundried tomatoes, pine nuts, feta, raisins + chicken with vinaigrette)

and hung out for a while. 

Afternoon jolt was this lovely bread.

I’m trying to work my way through the pantry and freezer staples, and remembered the giant bag of oats and bit of almond meal we had left.

They were the dry components of this seriously decadent healthy bread. It’s like a muffin meets a cookie 🙂 I’m excited to have some with tomorrow morning’s omelet!

This afternoon, a slice was perfect with a smear of almond butter and a cup of coffee.

Strawberry lemon oat bread

A gluten-free breakfast or snack option with a lovely lemon brightness. Serve hot with butter or ghee, or cold with a smear of your favorite nut butter.

  • Prep Time: 10
  • Cook Time: 30
  • Total Time: 40

Ingredients

Scale
  • 1 cup almond meal
  • 1 cup oats (gluten-free: use gluten-free oats. For grain-free, use more almond meal)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • pinch of sea salt
  • 2 eggs
  • 1 tablespoon coconut oil
  • 2 tablespoons honey
  • 1 tablespoon coconut sugar (or brown sugar)
  • 1 teaspoon fresh lemon zest
  • Juice of 1/2 lemon
  • 1 teaspoon vanilla
  • 1/2 mashed banana
  • 1 cup sliced strawberries

Instructions

  1. Preheat the oven to 350 and spray a standard loaf pan with nonstick spray, or grease with coconut oil.
  2. In a large bowl, combine the oats, almond meal, baking powder, sea salt and cinnamon. Whisk with a fork to combine.
  3. In a separate bowl, combine the remaining ingredients (except for the strawberries).
  4. Add the wet ingredients to the dry ingredients and stir to combine. Stir in the strawberries.
  5. Bake for 30 minutes until the top is set and lightly golden.
  6. Serve hot, or allow to cool and store covered in the fridge.

Notes

  • This would also be AMAZING crumbled onto vanilla ice cream.

    This looks delicious! I have saved the recipe and will make it on the weeknd after I do my weekly grocery shop. Simple and healthy – a great combination! Thanks for posting great recipe ideas, I have been making the mexican lasagne (from the winter shape up) and quinoa chicken enchilada casserole lately and they are both tasty easy meals to make!

    This looks amazing! I love lemon in baked goods. It’s so refreshing! I just made your superfood snack bites (the ones you posted in February with the goji berries and hemp seeds) and they are incredible! I think they are my favorite snack bites ever! (I got tired of the medjool date variety so this was refreshing). I’ve been having 2 as a pre-workout snack. They’re just enough to give me some energy and hold me over until I can eat after class!

    As soon as I read this, I realized I had all the ingredients on hand. So, I just whipped it up! In place of the brown sugar, I used 1/8 cup of maple syrup. And instead of 1 cup of almond meal, I used a 1/2 cup of almond meal + 1/2 cup coconut flour. I prefer mixing the latter two types of flour for a lighter density than using almond meal alone. That was, of course, in addition to the 1 cup of oats. Oh, and I added a teaspoon of lemon extract and used the juice of a whole lemon. It adds a great punch! It’s really delicious and I want to eat the whole loaf now – but I’ll be good and pace my servings out 😉 Thanks so much for the recipe inspiration!!

    Read this just in time for breakfast prep (love late work days)! Will be omitting the almond meal for ground flaxseed and removing lemon zest, but hey we go with what saves mama a grocery trip 😉 Thanks for the health inspiration and drool worthy photos! And a way to get rid of all those BJs strawberries before they start to get moldy… Go big or go home lol

    This sounds like the perfect spring/summer treat: substantial but not too heavy, especially with those bright citrus flavors! I’m trying this as soon as I have another occasion for which to bake (lest my husband and I eat the entire thing ourselves in two days).

    this sounds really good, I’m about to do a gluten-free test for April-May to see if it helps with my crohn’s disease so I’m going to prep and freeze a lot of stuff so this and a lot of your gluten free recipes will be going on my list to make :)!
