Sweet potato nachos and customized kicks

Hi friends! Thank you so much for the kind words about our move. While it’s a little overwhelming, as all moves can be, I’m excited for the new experience and opportunities 🙂

Dinner last night had to be quick and easy, since I taught an evening drum/Zumba class with Sasha. I’d seen this on one of my friend’s Instagrams and thought it sounded like a fantastic combo: sweet potato nachos!

I sliced some sweet potatoes using the a veggie peeler (less chance of slicing my hand off than the mandolin), and then baked them until they were crispy chips (about 9 minutes at 350. I set the first batch for 15 minutes and charbroiled them, so I wouldn’t recommend that). While they were baking, I cooked some organic ground turkey on the stove with Trader Joe’s taco seasoning, then topped the sweet potato chips with turkey, refried beans, avocado, salsa and cheese for the Pilot and Liv. They also had corn chips with theirs but I was corn-chipped out from my U of A b-ball nachos the night before. We all LOVED them! Such a quick and delicious meal, and the perfect dinner after teaching a super sweaty class.

When I teach outside of work, the floors can be a little more slippery than the ones I’m used to, so I’ll often wear my Nanos. They’re my favorite circuit-training shoe, and I especially love the fact that they’re lightweight while still providing support. I’ll pop my inserts in the shoes, and will wear them an entire day at work. When Reebok sent me a gift card to design my own Nanos, I quickly got to work picking a pink and purple color combo. In hindsight, maybe the “Fitnessista” on the heel was a little much haha.

Before clicking the “order” button, I thought about the fact that I have three pairs of Nanos already, and remembered a good friend of mine, who just started working with a personal trainer, had mentioned she needed new kicks and was asking about the Nanos. So, I gave her my gift card so she could try out a pair.

Pretty, huh?! I was pretty excited to share the Nano love, and while the shoes haven’t arrived yet, I know she’ll adore them. The customization process was super easy -you can see each part of the shoe as you design it- and a fun option if you want to design a pair that no one else has! 

This morning, I was planning on meeting up with her for early yoga, and for the first time in who knows how long, I slept through my alarm. I was really looking forward to it -especially since I found a new studio here that I’m crazy about and was excited to go with my friend- but guess I was exhausted since I haven’t been sleeping well lately :/ I was really looking forward to the “om” time, but I guess I’ll have to shake it out in Zumba later today.

    I was playing on the Nike website….they have new super reflective designs with a design your own option. One of the options is reflective cheetah/leopard print. Yeah. It looks awesome.

    Almond joy is my weakness. It sings to my soul.

    Cute shoes! I designed some Nikes years ago, I tried making sweet potato chips last week and also had them in too long. It’s amazing how quickly they can go from “crisp” to “smoke alarm”, whoops!

    Gina!! I have been following your blog for years and every time you guys come to San Diego I get all excited about you going to places I love. I have lived here in SD for almost 4 years, I am from Mexico and my hubby is from NC but we love it here and I’d love to recommend you places! What part of the city are you guys going to live at? I am a GM at a restaurant called Waypoint Public that just opened in North Park, we have an AMAZING kiddy play area, delicious beers and wines and the food is unbelievable. Liv, the pilot and you would love it and I would love to take care of you guys here!

      they run very true to size. i usually wear a 7 1/2 or 8 and the 8s are perfect

    We do sweet potato chili cheese fries in my house. I know you make a couple different types of chili. It’s a great use of leftovers. 🙂

    I never thought of making sweet potato nacho chips and they look SO EASY too! Favorite Halloween candy is definitely Rees’s PB Mini Cups. They’re way too easy to unwrap and pop in…I indulged though last weekend in Snicker’s and Peanut M&M’s. Chocolate craving fulfilled…DOH!

    Those nachos look amazing. I’m a sweet potato fan (love sweet potato fries) so I bet I’d love them.

    Never would have thought to make chips with the vegetable peeler! I love making ribbons for “pasta” -great to add a new “trick”! 🙂
    Somehow I’d never tried a Baby Ruth before until a week ago…I’m cursing my co-worker who keeps a huge candy jar of minis on her desk for making them my “favorite”/”hated” treat this Halloween! 😉 Like another commenter said — minis are WAY TOO EASY! ha!

    I did not design my Nano 3.0s but that looks like such a fun thing to do for workout shoes! Hey might as well workout in style. 😉 I also REALLY like the shoes, I use them for a lot of circuit training as well – they’re so comfy!

    The chips look great! Have you ever made your own spice mix for tacos? I used to buy the packets, but didn’t love all the ingredients. Now I make my own and it’s delicious!

    Nachos look great! My 3 year old will eat anything if it is in a chip form and there is something for him to “dip dip” in. I really enjoy you and good luck with the move, my hubby’s job moves us a lot as well ( not military but we move like it!) so it’s always exciting and scary and crazy!

    Confession: I looove eating clean, but nachos are pretty much my favorite salty indulgence ever. Since they don’t really agree with my stomach in their traditional form, I sub scrambled egg whites for the chips and almond cheese for the dairy equivalent in a more fat-loss friendly version but love your idea! Next time I need a nacho fix, this’ll be my go-to.

    And favorite halloween candy? Reese’s Pieces, but this froyo place in town has mini SF Reese’s cups that are so artificial, but so yum. Moderation, right? 😉
