They’re elite like that

Hey friends! Happy Friday! Hope your day is going well. 😀

Thank you so much for all of your support with Luon for a Cause. Together, so far we’ve raised $2461 for the Red Cross! Amazing <3 The roon raffle has been extended to midnight tonight (EST) and the winner will be announced tomorrow. If you’d like a chance to participate, please check out the deets *here*.

So, last night, we spent our evening watching the Wildcats CRUSH Duke- they’re now in the ELITE 8. Ballertastic.

We also got to hang out with Vies!

She the entire first half curled up against my leg:

She’d only lift her head up when we would start screaming :)It’s funny because I’m not a sports fan at all, but I’m a huge U of A fan <— my alma mater.

Basketball is one of the very few sports I *get*, so it’s fun to watch the U of A games and cheer with the fam and friends. 😀

We watched our victory from my little sis’ house and I brought over some peanut butter chocolate chip cookie-topped brownies.

cookie brownies

(Gluten-free and vegan. Ka pow)

They didn’t look very pretty until they were cut up, but they tasted very, very pretty 🙂

Some other recent eats:

salmon

Maple-dijon salmon, steamed asparagus, and beautiful multi-colored potatoes we found at Trader Joe’s:

potatoes

they were glorious after taking a little butter, rosemary and garlic bath 😉

potatoes (2)

+ the usual standards, like

b-fast cookies

cookie

Green juices

juice

(I got brave and added some celery into the green apple, cucumber, lemon and romaine mix)

and salad beasts 🙂

shrimp

(greens, tomatoes, bell pepper, hearts of palm, shrimpies, Garlic Gold, lemon juice and hemp oil)

Today I’m working from the community –running lots of fun errands and planning- and then taking the Pilot to his first acupuncture appointment.

See ya later today!

xoxo

Gina

Salad with shrimp sounds amazing right now. As does salmon with maple and dijon. Chased with those brownies, of course. 😉

    Have a great weekend!!

Awesome job on the fundraiser! So fabulous!

I am currently obsessed with roasting potatoes with rosemary + olive oil. So so so delicious!

  6. Laura on March 25, 2011 at 1:23 pm

That was a great game last night. I’m excited for Arizona, always nice to have a surprise team make a splash.

  7. Holly @ The Runny Egg on March 25, 2011 at 1:23 pm

Ooh lots of money for the Red Cross! Great job putting that all together Gina!

Anytime someone mentions U of A I think of the movie Speed — dumb I know, but the bad guy calls Sandra Bullock a “wildcat” and then Keanu figures out the camera system…etc. I hope you know what I’m talking about!

    Have a great weekend!

  8. Sarah Jayne on March 25, 2011 at 1:23 pm

Any team that knocks down Duke has my vote!! Go wildcats!!!!!!

Viesa is SO precious. I just want to bury my face in her fluffy furry coat.

  9. Michelle on March 25, 2011 at 1:24 pm

Ummm please share the cookie brownie recipie with us! Did you just smush some cookie dough ontop of brownies?? The look beyond amazing.

    • Fitnessista on March 25, 2011 at 1:40 pm

yep you smoosh the dough on top of half-cooked brownies and then bake for an additional 10-15 minutes — they whole thing is in a reply to carrie’s comment

      • Michelle on March 25, 2011 at 2:44 pm

This is totally my weekend baking project. 🙂 Good thing last weekend’s project was a half marathon. It’s all about the balance. hahaha

I’m like you in that basketball is one of the few sports I understand (even though I’d consider myself fairly athletic!!) My favourite films are football related (Remember the Titans and The Blindside) but I haven’t a clue how the game works! Your brownies look amazing!

  11. Stefanie @TheNewHealthy on March 25, 2011 at 1:25 pm

Ah, so exciting that you’ve raised nearly $2,500 so far!! Yogi tea bags always have something inspirational to say! 🙂

  12. Desi on March 25, 2011 at 1:26 pm

Wow, that’s great so far with the fundraiser.

I’m totally excited about UofA making it to the Elite 8. Awesome (even if I didn’t go to school there… NAU=not so hot at sports)

  13. lindsey on March 25, 2011 at 1:27 pm

pfft, i know you aren’t going to hold out on the cookie topped brownie recipe. 😉

vies looks so happy to see ya’ll!

    • Fitnessista on March 25, 2011 at 1:39 pm

i responded to carrie’s comment with what i did! it was super easy 🙂

  14. Kelly on March 25, 2011 at 1:30 pm

I was pulling for Arizon too, but mostly because I’m a huge Carolina fan (my alma mater) and you know how we ate Duke with a firey passion. 🙂 Now I need a win tonight! I’m always amazed at combine desserts like brownies topped with cookies. Someone at a cookie party I attended once brought huge chocolate chip cookies with brownies inside! It blew my mind! 🙂

  15. Carrie on March 25, 2011 at 1:31 pm

Please share the browning recipe. They look good.

    • Fitnessista on March 25, 2011 at 1:38 pm

just promise not to tell anyone… it’s top secret 😉
buy a package of gluten-free brownie mix
add the necessary water, oil, and a flax egg (1 T flax in 3 T almond milk)
      bake for 15 minutes
place the cookie dough on top and bake an additional 10 minutes or so (until a toothpick inserted comes out clean)

  16. Laura @ Sprint 2 the Table on March 25, 2011 at 1:32 pm

  21. Emma (ecoprincess) on March 25, 2011 at 1:53 pm

Well done for raising so much money Gina! You know what maybe would have been a good idea? Auctioning a batch or two of macaroons as well as the raffle! I remember when there was that bake sale, and your macaroons went for crazy money!

    • Fitnessista on March 25, 2011 at 1:56 pm

i thought about doing that, but figured it would be cool to give someone the opportunity to win them without spending a lot of money

  22. Namaste Gurl on March 25, 2011 at 1:53 pm

I’d love to know the recipe for those hybrid cookies- brownies, as they sure look delicious to me!
I love adding celery to my green juices, just add a lot of apple to make up for it:)
    Have a lovely day!

  23. Jessica on March 25, 2011 at 1:56 pm

I was wondering, where do you get your hearts of palm? I love it and would really like to have it in my salads, but I can’t find a good brand/place to buy it at a reasonable price.

Thanks & congrats on the fundraiser! 🙂

The peanut butter chocolate chip cookie-topped brownies looks awesome. Vegan and GF? Are you serious?! WOW…awesome job!

The TJs multi colored taters are always in rotation here. I like to roast them with coconut oil and season with everything from ginger to dill depending on my mood.

The link to your sister’s blog? I didn’t know about that one! Off to check it out..

And good luck at Pilot’s 1st accupunc session. Yay for trying new things!

As an ASU alumni I get crap for cheering U of A since my dad has been a fan since I was little. I rubbed it in nice and good that U of A was at least in the NCAA championship where ASU is a…missing. I love yogi tea, I live off the green tea triple echineacea.

  48. Chelsea @ One Healthy Munchkin on March 26, 2011 at 7:39 am

That’s awesome how much money you’ve raised so far!

I love multi-coloured potatoes! For some reason they’re so much more fun to eat than just the plain yellow ones. 😛
