Twice-baked sweet potatoes and Brussels sprouts hash

Hi friends! How’s the morning going? Liv and I have been playing nurse to the pups; they’re still moving a little slowly after their dental cleaning yesterday. Poor girls. 🙁 Hoping they’re back to their spunky selves soon.

Instead of a picture of them looking tired and forlorn, here are some succulents:

Last night was gloriously low-key over here. We picked up the dogs, and enjoyed a veggie-packed dinner here at home.

with twice-baked sweet potatoes and Brussels sprout hash. 

The Brussels sprout hash was inspired by a creation I enjoyed this weekend at Canyon Ranch. I knew that this simple and savory side dish would be the perfect way to switch up the Brussels sprout rotation here at home.

I used this bag pre-shaved Brussels sprouts (thanks Joe the Trader for doing the work for me),

and sautéed in a little butter with garlic, salt, pepper, and chopped organic turkey bacon. I hit it with a splash of balsamic and a squeeze of lemon juice, and it was done!!

For the twice-baked potatoes, I baked them for an hour at 350, and then halved them before removing the flesh. I blended it up with some butter, cinnamon, maple syrup (!), and added back to the skins. I baked them again for about 20 minutes until they were crisp on top, and gooey on the inside. 🙂

The Pilot and I stayed up later than usual to finish watching Gone Girl. I had already seen it, and read the book, and told him the entire plot line because I was so mad when it was over haha. I was surprised he still wanted to see it after my Gina-fied synopsis. 😉

    Gone Girl was intense! I had read the book so I knew what to expect, but my boyfriend was in shock by the end. Lol. Your dinner sounds so good! I love those Brussel sprouts from TJ’s – perfect little time saver!

    I just invested in a Vegetti Spiralizer (though, I think getting a real spiralizer might end up happening in the future. I don’t see this thing lasting long), and the Zoodles I made were extremely fun. I can’t wait for Zucchini season now!

    I’m really into sautéed kale. Just heat crushed red pepper flakes in evoo, then sautee garlic & onions…add kale…sprinkle a little bit of seasoning & then add a splash of vinegar…delish!

    Those twice baked sweet potatoes sound delicious!! My favorite quick and easy veggie side dish is roasted asparagus. I toss the asparagus in a bag with olive oil, salt, pepper, paprika, and garlic powder. It’s my favorite spice combination! 🙂

    I love those shredded brussels! Have you tried the new kalettes yet? They’re a cross between baby kale and brussels sprouts. I picked them up from TJs as well. Last night I sautéed them in EVOO. and seasoned well…delicious! Very interesting!

    I always do cinnamon roasted sweet potatoes too! Everyone loves them, with coconut oil. However, I am going to try your twice baked version – I love maple-anything!

    not so much a side, but recently, i’ve been really enjoying this ginger-scallion sauce (http://www.tastespotting.com/features/momofukus-ginger-scallion-sauce-recipe) as a condiment to baked chicken (simply seasoned with some salt & pepper)! given your love for green juices with the ginger kick, maybe the recipe’s 1/2 c of minced ginger won’t scare you away! =)

    Your succulents are so pretty! And that brussels sprout hash looks pretty darn tasty!!

    I absolutely LOVED Gone Girl (the book), and I seem to be one of the few people who found the ending to be decent. Yeah, not we would have all liked to see happen (wink wink) but something about it was still intriguing to me. Dying to see the movie, which I’ve heard is awesome!

    Gone Girl was an amazing book (and movie) with a disturbing ending! I Agree! Those sprouts sound amazing! I love shredded sweet potatoes in coconut oil with garlic, brussels sprouts with lemon and rosemary, and a zucchini + eggplant mix sauteed in EVOO, garlic, and greek seasoning. I feel like I could live on veggies sometimes!

    Uhhhh YUM. Both of those dishes sound amazing! My favorite quick veggie side dish is similar to the hash – I love to sautee brussels with chopped onion, almonds, balsamic and a drizzle of maple syrup. The best!

    Hi Gina, Love the blog! I’m a somewhat new reader (maybe a year-ish) by way of SemiProper 🙂 I’ve read through your blog mostly from start to finish and love the knowledge I was able to gain. I’ve been dabbling in the yoga, strength training and the clean eating world for a while now and I love the information you’ve been able to capture here, from recipes (amazeballs!!!!) to your overview of different work out styles and classes. Oh and I love your book! Anyway one thing I didn’t come across when reading your blog was your opinion on any food documentaries. I know your style of eating and living is personal and I appreciate that! I was just wondering if you had ever watched these documentaries (think Food Inc. Hungry for a Change etc.) and what your opinion was on them. Were they hokey? Informative for someone looking to make a change or learn more? Waste of time? For someone newish to the scene of healthy living what are your suggestions on where to start? I plan on meeting on a dietician to make sure any decisions/changes are approved and healthy for me but in the meantime any suggestions?

      i am kind of a food documentary nerd, but definitely think you should take them with a grain of salt. i would start with forks over knives, and then maybe do food inc.? love that you’re planning on meeting with a dietitian too!

    The Brussels sprout hash is a staple for me! I do not add vingarette and lemon though. I add apples, cinnamon, and chili powder add an amazing flavor!

    Definitely going to make those sweet potatoes! My favorite veggie side dish is roasted carrots — just a little olive oil, salt and herbs de provence. I can’t stop eating them!
