Two of my favorites return

1. VIESA!

The pilot picked up that lovely lady from the kennel today- I missed her Shiba face 😀

2. Tofu

Gliding Calm Style of course! (Is there really any other way??)

That’s right, I’ve brought tofu back into my life. I told ya’ll I’ve been craving it like a tofu-obsessed fiend lately and decided that even though it is processed, if it’s organic and doesn’t contain genetically-modified ingredients, I’m going to eat it because it’s really freaking delicious. It’s also an excellent source of protein, which I’m gonna tell you I didn’t get enough of over the fall season. I’ve been working on getting my protein back up (eating more organic eggs and wild fish), but I think that tofu is going to help get the results I’m looking for.

I know that protein requirements are totally inflated according to a wide variety of sources, mostly due to political reasons. I also know, however, that an active person who lifts weights and teaches aerobics needs more of every macronutrient, including protein. So I’d like to add tofu back in because it will help me to maintain my lean muscle –which I’ve lost some of over the holiday season- and because it’s fun and delicious. You can do so much with it!

Like this epic comeback….

dinner

I cooked up some red quinoa with sautéed onion and garlic:

And stir-fried some organic veggies including onion, garlic, broccoli, snap peas, red bell pepper and baby bellas and seasoned with mix with rice wine vinegar, coconut aminos, sea salt and cayenne.

Baked up the Gliding Calm Tofu

And the pilot stir-fried some organic chicken for his protein:

Add it all together and it’s one heck of a meal 😀

Well I’m off to finish watching the last episode of Jersey Shore –mayjah guilty pleasure… the pilot had to convince me it was for real when I first saw it, I thought it was a joke show- and do some work.

See ya in the morning!

    YUM!!!

You got me craving tofu! Good thing I just made a Trader Joe’s run 🙂

My fav way to prepare is to saute chopped garlic and onions in EVOO (and a splash of white wine) then add thinly diced tofu topped with sea salt, peper, and peprika.

    xo

  19. sandy on January 13, 2010 at 1:39 am

love reading your helpful blog! so how many grams of protein do you try to eat per day? i’m still experimenting, but i feel good with about 40-50g/day.

    • Fitnessista on January 13, 2010 at 8:04 am

      thanks, sandy!
i honestly don’t know, since i stopped counting calories about a year ago.
i can tell by how i look and feel– my energy levels are a little drained and i have less muscle tone when i don’t get enough
if you feel good with 40-50g, then stick with it 😀

  20. Julia on January 13, 2010 at 1:51 am

I loveeeeee (red) quinoa. Great source of protein there too! And those veggies just look amazing.

  21. Lexi on January 13, 2010 at 5:20 am

Your dog is adorable! I’ve never had red quinoa, looks delicious!

  22. Lia on January 13, 2010 at 6:05 am

    Hello fitnessista!
I love your blog and admire your active lifestyle, big fan! 😀

I have a question regarding protein since you mentioned bringing tofu back into your diet.
I have recently (last 2-3 months) turned vegetarian, I haven’t consulted the doctor or anything since I feel great and don’t feel in any way weak, more energetic actually!
I eat a lot of vege and fruit along oats, wheat and grainy stuff. No fish, rarely eggs, very little dairy except some soy in my tea and some yoghurt.
Now, I have no idea where I stand with protein intake but do you think if I ate more egg whites I’d be ok in the protein department? Or do you recommend protein powders? I am quite active, workout 3-5 times a week.
I know you aren’t a nutritionist or anything but I know you have a lot of experience so that’s why I’m asking. No worries if you can’t answer it! 🙂

    • Fitnessista on January 13, 2010 at 8:02 am

      hey lia,
thanks so much for saying hi 😀
i am a nutritionist but its hard for me to say, as i’ve never met you, don’t know your stats (height, weight, body fat %, workout schedule) and exactly what you’re eating. i myself usuaing go by how i feel and look rather than actual grams of protein… i think if you feel great and are able to keep your muscle tone, you should be fine in the protein department

      • Lia on January 13, 2010 at 8:42 am

Doh, you ARE a nutritionist, that’s even better!
Thanks for replying, I knew it’s pretty hard to tell but I guess I should just listen to my body and right now it’s pretty happy! 😀

        Thanks again!

        xxx

LOVE TOFU. I’m vegan and have it at least once a week. I’m in no way affiliated with this product but I got it a while back and absolutely love it instead of using a ton of paper towels or kitchen towels to press my tofu. A little on the pricey side but pretty awesome anyway! http://tofuxpress.com/

  24. Jenna on January 13, 2010 at 7:56 am

Ya for the return of tofu!!

  25. Kristin (Cook, Bake and Nibble) on January 13, 2010 at 8:03 am

Mmmmm love that meal, love tofu!!

  27. Mara @ What's For Dinner? on January 13, 2010 at 9:16 am

Ok so funny story you’ll appreciate: yesterday for lunch I brought 2 leftover meatballs in a white sauce and 2 clementines. There was quite a commentary… my coworkers are dirty 🙂

  28. Diana (Soap & Chocolate) on January 13, 2010 at 9:55 am

I’ve had a similar rekindled feeling for tofu recently too! I think it must have been my trip to Japan, and of course it’s AMAAAAZING there. It’s just so versatile and tasty!

  29. Mo @ Mommy RD on January 13, 2010 at 10:50 am

Love that you added tofu back into your diet. I heart tofu, and crave it when it’s been awhile since I’ve had it. Your dinner looks fantastic, I think I’ll make something like that tonight. I have red quinoa in the pantry. 😉

  30. emilyb on January 13, 2010 at 10:55 am

The Jersey Shore IS a joke show…I’m convinced they’re all actors.

  31. Bethany on January 13, 2010 at 7:24 pm

That tofu looks delicious! I need to try making some GC style. If you are ever feeling lazy, Trader Joes sells some amazing pre-marinated tofu.

    • Fitnessista on January 13, 2010 at 9:34 pm

WHOA! i had no idea- thanks for letting me know!

  32. Justine on January 13, 2010 at 9:31 pm

Hey Gina, I thought you might want to check out this video about soy:
    http://www.youtube.com/watch?v=RjZs0DGW1Jk

I’m personally a fan of (some) soy products but be careful about the tofu. Soy products should be limited to about 2 or 3 times a week, or so I’ve read various places. Too much soy can lead to a lot of issues including infertility.

  33. Reesa on January 14, 2010 at 4:05 am

I absolutely love your blog. I thought I was the only one that loves goat cheese and tofu. Way to go.
What is best to eat when you are trying to loose belly fat?

  34. Alice on January 14, 2010 at 10:27 pm

What else do you put on your millet bread besides the alomond butter?

    Looks like cinnamon?

    • Fitnessista on January 15, 2010 at 7:57 am

      yes, maca and cinnamon
