1/7: Meals and fitness for the week

Hey hey! Happy Sunday! Hope you’re having a great weekend. We’ve stayed in town, which has been nice after a stream of road trips and holidays. We’ve been enjoying relaxing at the house and catching up on life.. and our fave TV shows.

Can we just talk about The Bachelor for a second? (No spoilers, don’t worry!)

I’m only into The Bachelor occasionally, and really only liked it last year because I’d go to Kyle and Meg’s house and drink wine with them while we watched. This season: I’m genuinely enjoying it so far. Maybe it’s the fact that there’s a lot of crazies (lemme grab my popcorn), or that the bachelor himself seems like a nice, fairly normal person. And he kind of looks like a salt-and-pepper version of the Pilot? I don’t even know but I’m digging it and am thankful it filled the void last week while I’ve been anxiously awaiting the return of This Is Us.

Before the girls are up and I start their fave buttermilk waffles, I’m stopping in to share this week’s fitness plan and meal ideas.

Butter chicken

Next weekend, we’re taking a special birthday vacation for Liv, but are still enjoying some meals at home before we hit the road. 

Dinner plan for this week: 

Sunday: Butter chicken (I’m going to make it in the Instant Pot) with rice and salad

Monday: OUT (Liv’s bday dinner!)

Tuesday: Sunbasket (<— use my link to get $40 off your first delivery) Chicken cutlets with picatta sauce and apple-brassica salad

Wednesday: Sunbasket Mongolian beef with jade rice

Thursday: OUT (out of town)

Friday: OUT (out of town)

Saturday: Homemade pizza with sourdough crust and roasted veggies

For quick and easy breakfasts, the girls will have their usuals (I make these pancakes and freeze them so I can reheat in the am, or French toast or oatmeal with scrambled eggs and berries) and I’ll be having:

The breakfast cookie. I haven’t had one in way too long and they’re the easiest breakfast (that tastes like dessert).

Sous vide egg bites and salad with Siete tortillas 

Daily Harvest smoothies (I’ll amp these up with a little of my own Garden of Life protein powder from Thrive Market and/or collagen)

Snacks:

I haven’t been snacking as much lately – instead, I’ve been trying to make my meals bigger and more satisfying so I don’t feel like I have to snack all day – but I’ll be making some amazeballs for this week’s trip.

Here’s what’s on the fitness plan for the upcoming week:

Sunday: Peloton 45-minute spin class. I love Robin’s classes, so I’m going to check and see if she has a new DJ ride.

Monday: OFF

Tuesday: Legs + HIIT (from the upcoming plan I’m working on for ya. It needs a catchy name…)

Wednesday: Easy steady state

Thursday: Upper body + hills

WORK IT Walking workout

Friday: Disney cardio

Saturday: Total body circuit workout (similar to this one)

Total body strength and hiit

    Gina – I know you said you use the peloton classes but a different bike. What kind of bike do you use? Do you like it? And are the peloton classes like soul cycle type cycling classes, or straight cycling? Thanks for your help.. thinking of getting one or doing the same combo as you!

      yes! i use this bike: https://spinning.com/revitalized-johnny-g-spin-bike/ (<-- that's new version. i have an older one from a few years ago) the peloton classes are more schwinn type classes that i LOVE. there are aa couple of instructors that teach more like soul cycle (with tap backs and jumping) but most do not. the classes are very well done and the music is awesome! the peloton bike is expensive, and i feel like i get the same benefits on my spin bike with an iPad propped on the handlebars. i think the actual bike would be worth it if you want to take a lot of the live classes.

    I just started This Is Us the past week and I’m obsessed!! Currently have chicken cacciatore in the crock pot for the week and also planning on curry noodle bowls and chipotle chicken tamale chili!

    I need to make that butter chicken! This week we’re focused on eating planned meals from the freezer. Love it when I think ahead to make two meals and freeze one for weeks like this when meal prep inspiration & motivation is seriously lacking!

      i think you would love it! freezer extra meals is one of the best life hacks ever. lately, i’ve just frozen a lot of sourdough bread and christmas cookies haha

    I adore your blog. The recipes and work out advice is so so good. The treadmill workout above is so good, thank you for this one, I use it on a weekly rotation. I don’t watch TV too much… no to The Bachelor- Survivor-This is us—-. I like Call The Midwife. Other PBS stuff, TCM too. But to each his own…

    Yay to the bachelor!! I only watch it while working out. It entertains me!
    As for new plan, I’m going to roast a whole chicken and then make broth and soup with it. Kids want spaghetti with zoodles. I usually make enough for 2-3 nights and they happily eat it a few days in a row.

    I’m working on recovering from a back injury so adjusting my food intake has been a bit of a challenge but not impossible, happy to be ramping up some exercise this week and hopefully get back to running!

    I agree that this season of the bachelor will be a good one! So much better than last season. Thank you ABC for casting a better bachelor! He does kinda look like the pilot! 😉
