10 Fave Sweet Potato Recipes

It felt so good to enjoy dinner at home with the fam last night, and bust out the pots and pans again.

Veg

Even if it was a simple meal (roasted veggies and Pilot-grilled chicken), it was perfect,  

especially with some vino (which sadly, they do not have at CR).

Wine

There are a few things that I always have to keep on hand in the house, along with red vino (you never know when company is going to stop by..). Here are the others on the list:

-eggs

-salsa

-fruit

-salad greens

-chocolate

-almond butter (you can read about all of my favorites here– sadly just had to throw a recalled jar away)

-sweet potatoes

Sweet potato

If I have all of the above, I consider our kitchen stocked- everything else is just a bonus 😉

I’ve always preferred sweet potato over white -even though sometimes a white baked potato hits the spot- and started to experiment with different veggies featuring my favorite root veggie.

Here are some of my faves, plus ones that have caught my eye:

 

Sweet potato

1. Sweet potato goat cheese rounds: peel sweet potatoes, slice and bake (25 minutes at 375), then top with a mix of soft goat cheese, garlic, pinch of nutmeg, pepper, chives and bake for a few more minutes 

2. Sweet potato pasta. Don’t have a spiralizer? Try using a veggie peeler or julienne peeler to create long, noodle-y strands.

3. Sweet potato chipotle fries

4. Sweet potato burgers. I haven’t tried these, but they look AWESOME.

5. Sweet potato and black bean chili. An old favorite, especially going into the fall season

6. Sweet potato brownies. The starch gives an incredible fluffy texture- you won’t believe that sweet potato replaces much of the fat and sugars in traditional brownie recipes

7. Sweet potato cookies. A staple in our house- to keep portion control in check, I freeze them and defrost one when I want a sweet treat.

8. Smothered with almond butter and topped with sea salt. You have to try it… life-changing.

9. Sweet potato shepherd’s pie. I also haven’t tried this one, but have had my eye on it for a while. Love the fact that it’s an entire meal in one dish.

10. Chipotle mashed sweet potatoes. This is a great option for parties, since I can make it ahead and just bring it in the slow cooker. I love the little kick of spiciness (which is a BIG kick if I just make it for us at home), and am always asked for the recipe.

    I am a sweet potato fanatic. I keep them in the office for a quick, microwavable lunch. Sometimes I’ll add my work-pantry basics, like peanut butter, raisins, cinnamon. Sometimes just plain.
    At home we bake sweet potato fries a lot, but my daughters don’t like them 🙁
    I’ll be sure to try some of these recipes! YUM!!

    I looooveeee shephards pie, it’s such a comfort food for me because my mom made it almost weekly when I was growing up. You totally need to get in on this. You can make it as healthy or unhealthy as you want (more veggies, no meat, etc)… but I never thought to make it using sweet potatoes! That’s so different and I can’t wait to try.

    I LOVE sweet potatoes!!! I would eat them as part of every meal if I could, but unfortunately, one of my daughters don’t like them. I still make them sometimes as a side dish, or try to hide them in the food, and hope she can’t tell =)

    My favorite meal to make with sweet potatoes was based on this recipe:

    I switched out the kidney beans for black beans, used whole wheat tortillas, and used stone ground mustard for the “prepared mustard”. What I do is put the onion, soy sauce, mustard and other seasonings into a pot, mix in the beans, and heat. Then, in a pan, I prepare the sweet potatoes, mash them, and add some cinnamon. Then, spread the potato mixture onto a tortilla, top with beans, add cheese and then some shredded spinach. YUMMM! I think that’s my favorite meal EVER

    Your Sweet Potato and Black Bean Chili is one of my all time faves and I make it at least once a month. I’m expecting a little girl in December and am planning to make a bunch of freezer friendly meals as my due date gets closer. I’ll definately be making a big batch then.

    I’m posting another sweet potato recipe tomorrow but recently I made a coconut milk and red pepper soup with sweet potatoes that’s super easy and so good. I love all your ideas – can’t get enough sweet tater recipes!

    I love sweet potatoes too! My favorite is the Japanese sweet potato, which is white inside. I love the consistency of it.

    My little son LOVES his sweet potatoes too. We boil up a batch to use during the week. Right now I love them with homemade chicken gravy on top lol

    I am completely obsessed, I eat them almost everyday and am basically orange because of it (addicted, I think so!) …mainly I just love baking sweet potatoes and eating them with mashed avocado and sprinkled with salt and nutritional yeast, so good!

    LOVE this post. If I have sweet potatoes, beans, and some sort of sauce (like green chili or salsa) I know I can have a delicious and fast meal. I also love a sweet potato smoothie made by blending 1/2 cooked/chilled potato, almond milk, spinach, brown rice protein powder, cinnamon, vanilla, and almond butter. So delicious! Sweet potatoes are a definite staple in my kitchen and I can’t wait to try some of these recipes out.

    Love sweet potatoes with almond butter! I have nearly finished a jar of the recalled almond butter…thankfully I haven’t gotten sick but I will take what’s left back and exchange for a new one.

    I LOVE sweet potatoes. I just like to keep it simple. Roast them (until they get really really mushy) and then eat them steaming hot with some Earth Balance melted on top. So. Freaking. Good.

    I think the almond butter idea could be my favorite on that list. I also ADORE the nutbutter encrusted sweet potato fries. I guess it’s the same concept.

    I absolutely love sweet potatoes! I love them plain (baked) with cinnamon, a splash of splenda & a little butter. The way I’ve been eating them lately is to cut them into cubes & combine with a cubed apple, sprinkle generously with cinnamon (noticing a theme here), coat a dish with cooking spray, cover dish with foil & bake at 350 for 30 minutes give or take.

    So so so good! I’ve even converted my husband who used to be just a plain baked potato kind of guy!

    I don’t have a link (yet), but last night I made what I was calling Taco Pasta. I used the left overs from the recipe I normally would use for making taco meat with ground turkey. I added some black beans the last couple minutes of cooking and then tossed in some left over sweet potatoes from Sunday’s bfast pot’s. Mixed it all together with some shredded goat cheddar. omg. so yum. Def going to make a quick pico de gallo for it next time. Casserole made from left overs = boom. Then you don’t even feel like you’re eating the same old thing re-heated.

    I’m all about the twice baked sweet potato. I cheat by doing the first cooking in the microwave, then the second in the oven. I usually make them with chipotles, green onions, cheddar cheese and sour cream or greek yogurt. Bake at 350 until the everything is bubbly, then add some sliced avocado to the top and serve. Seriously heaven.

    Now I know what I’m having for lunch.

      Oh, and for a mild version, smoked paprika in place of chipotles. Salsa is a good mix in too.

    I LOVE sweet potatoes and regular potatoes SOOO MUCH! (Must be that Irish blood 😉 )… I love putting hummus, avocado, and any other vegetable we have on hand on top of them. Sometime’s I’ll add either beans or lean beef if I’m feeling crazy. 🙂

    I dehydrate sweet potatoes for Brooklyn. I slice them in long strips. Better for him than the horrible dog chews. I am experimenting with dehydrating them into chips with different herb blends for me.

    i love sweet potatoes roasted with diced apples, mashed with cinnamon, stevia + maple extra and then topped with pecan pieces. it’s almost dessert like it’s so sweet.

    We are a big sweet potato family! I usually keep the recipes very simple. Recently I started cooking them with coconut oil and sprinkling a little cinnamon on them. I’ll dice them up and saute them put them with some cooked kale as a side, and make extra to throw in a salad for the next day. I NEED to try the brownie recipe! That looks amazing.

    I’m dying to try those sweet potato chocolate chunk cookies! For some odd reason I’ve never combined sweet potatoes and chocolate. I’d have to say my fave sweet tater recipes is spicy sweet potato fries….so simple but crazy good.

    Love this collection of recipes for sweet potatoes..I have a couple in the pantry now I was thinking of simply baking them and topping with a little Greek yogurt, but now I want to try them with almond butter! Sounds right up my alley. I’ve been eyeing those same burgers too…

    I’ve been chowing down on the simplest sweet potato recipe ever and it’s awesome. Just halve the sweet potato, smother with coconut oil and sea salt and roast it cut half down. It blew my mind it was so good.
