10/13: Meals and fitness for the week

Hi friends! Happy Sunday! Hope you’ve had a wonderful weekend. Ours has been a blast with so many fun events. I have a lot of pics to share for weekend pics later tonight <3

But first: the ruins of our decor pumpkins.

Pumpkin feast  1 of 1

A javelina family decided to have a little feast on my pumpkin artwork.

Here’s what they looked like before Javvy Thanksgiving:

I guess they get as excited about porch pumpkins like we do about pumpkin spice lattes. 😉 I wish we had some video footage–  we all would have gotten a kick out of their little snack attack.

Speaking of snack attacks, I feel really excited to try out some new recipes this week. A friend from work -the one who makes the legendary pastries and cakes- was sharing some fantastic dinner ideas with me. My first mission is to buy a delicata squash.

Here’s what else is on the menu:

-Susan’s salad recipe

-Chicken tzatziki pizza

-Pumpkin chocolate chip bread

-Mexican sweet potatoes

Prep: chop veggies, make breakfast cookies and freeze +  more French toast sticks and turkey lentil muffins for Livi

As far as fitness goes, here’s the tentative plan:

-SUNDAY: OFF

-MONDAY: Yoga/stretch

-TUESDAY: CrossFit workout (if I feel healed enough after my fall incident; my knee’s been bugging me since)

-WEDNESDAY: Short run (pending how my knee feels)

-THURSDAY: Teach DJ dance

-FRIDAY: OFF

-SATURDAY: Long run (again, we’ll see how I’m doing by then)

Are you taking time to plan and prep this week? A lovely surprise was that the Pilot and Livi went to get groceries while I was at work yesterday. It’s awesome to have that step crossed off the list, and to bypass all the intense Sunday Trader Joe’s shoppers.

    I’m not doing any prepping today — it’s Canadian Thanksgiving, so I’m making a turkey dinner! Although, that’s almost like prepping because I’ll be have turkey-everything this week to use up the leftovers 🙂

    No prepping going on here for the week- we will be eating out a lot for work and what not so it will be an easy week in the kitchen. Have a great rest of your Sunday!

    Love your plans! I went to the store today and really started to miss Trader Joes, there is nothing like it out here in Bangkok. The crazy thing is I still have not found pumpkin pie spice 🙁 I am missing out on all the goodies! Have a great meal prep and Sunday! Lots of Love C

    I had fall break, so me and hubs did our grocery shopping on Friday… it was lovely! After lunch today, I’ll be hitting the kitchen to prep my lunch for the upcoming work week! And maybe a trail mix snack too… we’ll see.

    Delicata squash is the BEST. The texture is like butter and velvet had a baby. Mmmm. Slice in half, roast open side down at 350 for 20-30 min. Top with coconut oil, sea salt. YUM. Extra yum? Add drippy almond butter. 🙂

    I just tried delicata squash last week & loved it! My husband even loved it which was shocking considering I normally have to chase him around the house with a spoonful of something new to get him to try it. All I did was roast it with some olive oil & salt. I’m interested to hear how you will use it.

      mmm good to know! my husband doesn’t like squashes or gourds so it will be interesting to see if he likes it 😉

    Your poor pumpkins! I don’t have any pumpkin stories but when I was in undergrad at UofA my roommate and I had a pineapple plant stolen from our porch. We later found the remains and I often wondered if a javalina wasn’t to blame…

    Just realized I had all the ingredients for your pumpkin bread so I’m making that right now! 🙂

    Also gonna make some pumpkin chili, quinoa & beans, and wash/chop veggies for the week ahead. Maybe some crockpot applesauce too. No workouts planned except maybe a couple runs, I’m nursing tendonitis in my shoulder so trying to take it easy.

        Delicious! The white chocolate chips made it a little extra sweet and I was planning on eating it for dessert so that was okay with me 🙂

    Haven’t carved a pumpkin yet. It’s a lot of work but I’d like to decorate them like yours!

    I don’t think I could ever let someone else do the grocery shopping! It’s my favorite thing to do!

    Hahaha.. I had javelinas do that to my pumpkins one year. Huge family with babies!! It would’ve been cute if my little dog hadn’t tried running out the door when I opened it before I had realized they were there.. pup’s safe, but he scared me to death!

    I’m planning to make my first delicata squash recipe this week! I got one a few weeks ago from my CSA and have been waiting to use it. I’m planning to make vegetable empanadas with it. Will see how it goes!

    I prepped some white chicken chili, breakfast burritos to freeze and made a big batch of pulled beef to have on hand for salads or sandwiches for dinner.

    What are you doing with the squash?! I have 2 delicata in my produce basket and stuffed squash is on the menu for Tuesday, but I haven’t decided how to stuff yet. 🙂

    I made delicata squash last week and topped it with a Brussels sprout mixture. It came out great! Blogged about it here: http://fitmamalove.com/2013/10/09/a-week-of-squash/. How you like yours however you make it!
