How’s your day going?? I loved, loved, LOVED reading your comments to this morning’s post. Thank you so much to those of you who contributed to the convo and hi (!) to all of the new friends who stopped by.

My day off was pretty glorious.

I napped on the couch for two hours with the puppers (Scamp slept on top of my head), went to the library, got the car washed, groceries, chilled.

I also ate the above fries salad-style:

along with a Daiya cheese crisp (on brown rice tortilla)

and one of yesterday’s vegan cookies 🙂

I also cut open a pomegranate that my auntie bought so we could make cocktails snack on it:

It definitely made me reminiscent of last year’s POM adventures! Dare I say I’m even MORE excited about poms than pumpkin?? 🙂

Dinner is also ready and waiting for the fam to come home and for me to munch after Dance Trance.

    Butternut squash fries are my new favorite, they put up a good competition against sweet potato fries!! I usually slice them thinner like fries, but I think I’ll try them thicker like wedges next time b/c they are a little soft the way I normally do them. I’ve also been using the broiler for about 3 min after they’re mostly done trying to crisp them, but its just not working.

    BTW: I’ve been following your Summer Shape Up 2009, loving it!! But looking ahead, there’s no link for Week 9, nor instructions to repeat a prior week. What is the plan for that week? I’m starting week 5. I feel like I have my own personal trainer b/c you developed this and I pretend that I have Jillian Michaels and Jackie Warner in the room with me when I’m working out!! haha

    What do you use to slice a butternut squash so perfectly for fries?!?! Those things are so hard to cut, mine looks butchered (in a bad way) by the time I’m done!

    Gina, I just tried out your pancakes for dinner (the ones from your last post). OMG!! They are so good. They actually taste like pancakes! Usually, with protein powders they’re gross, but these were so good! THanks so much! =)

      cook on a cookie sheet with evoo, sea salt, pepper at 375 for 30-45 min 🙂

    I haven’t actually tried butternut squash fries! Shame on me… I know. I love homemade sweet potato fries so technically, I know that I should try them with butternut squash. I guess it doesn’t help that the look of them freaks me out, haha.. Congratulations on becoming an ambassador! That is so exciting!!
