3-ingredient combos

I’m caretaker of the house today <3 There’s always little lovebug and the pups, but the Pilot had surgery this morning. He’s doing great and is just laying low- it’s been a nice treat to have him home on a Monday, even though he’s resting and recovering.

I wasn’t feelin’ anything heavy for dinner, so made a quick and easy 3-ingredient meal for Dine-In December.

I present to you one of my new favorite combos:

Pesto  1 of 1 2

pesto, shrimp and spaghetti squash. (Try it, you’ll love it!)

The spaghetti squash cooked in the slow cooker with a little water – on high for 2 hours

and I combined it with sautéed shrimp (olive oil, salt, pepper and garlic)

(I love making my own pesto…and soap.. and butter… but time was of the essence. Here is my favorite recipe for homemade pesto– it’s especially amazing with fresh summer basil)

Just combined it all and feasted! Since the squash was already cooked, it was a 5-minute active prep meal.

I put a little pesto with Liv’s spaghetti squash and figured it would be fine since she’s had a little pesto before. Our favorite gluten-free crepe from the farmer’s market is filled with pesto and veggies,

and she goes crazy for it. Still, we googled symptoms of anaphylactic shock before giving it to her, juuuuust in case any reactions occurred from the nuts (not like it would stop anything, but at least we’d know what to look out for). Did you know that one of the symptoms of anaphylactic shock is “fear of impending doom?”

Quite possibly the scariest symptom description ever.

Thank goodness there was no doom, nor reactions, and she loved the spaghetti squash with pesto, signing for “more” each time her tray was empty, along with peas with coconut oil and some chicken. Her hair seemed to enjoy it too 😉

    A MUST try 3 ingredient combo. 3/4 chicken breasts, packet of taco seasoning (I make my own), and a jar of salsa .. Crockpot all day then stir (meat will shred so easy) then put on tacos or burritos or enchiladas!! We did tacos tonight and tomorrow I’m making tortilla soup with some of the left overs.

    Sounds yummy (minus the shrimp part for me! I’m not a seafood fan).

    I cook spaghetti squash ALL THE TIME. It’s such a great alternative to noodles.

    Favorite 3 ingredient combo: Coffee, creamer, stevia. LOL okay a real one? Greek yogurt, chia seeds, berries!

    I’m vegetarian, so I’d have to go sans shrimp, but pesto and spaghetti squash sound AMAZING.

    Here are some of my fav 3 ingredient combos:

    Steamed veggies + pasta sauce + parmesan cheese.

    Plain jane cereal (like, plain cheerios) + honey + peanut butter.

    Cocoa powder + oats + greek yogurt.. omnomnom.

    Almonds + dark chocolate + cranberries.

    Aaaaand, when it’s the time of the month, a cookie + a scoop of ice cream + a reeses peanut butter cup. 🙂

    Still have yet to try cooking spaghetti squash – looks like a delicious combo though! My favorite 3 ingredient combo is baked sweet potato, over-easy egg, and ketchup. Yum!

    I always do marinara with spaghetti squash but pesto instead sounds amazing! Can’t wait to try it!

    Do you peel your spaghetti squash with a potato peeler?

      i didn’t peel it at all- just cut in half, take the seeds out and put skin side up. you can easily scrape the “noodles” out of the skin after it’s cooked

    Bananas, almond butter, and chocolate definitely tops my list for favorite combo. Then there’s Greek yogurt, chunky applesauce, and cinnamon… turkey, cheese, and hummus… coconut oil, honey, and toast… And I have to agree with Katie that coffee, creamer, and a sweetener are pretty high up there as well.

    I was just wondering if pesto would be good on spaghetti squash, I have 2 I need to cook first time cooking it too. I don’t do seafood so I will just add chicken yummy!

    ground turkey (with soy sauce+garlic chili paste), goat cheese, avocado 🙂

    Also, I just have to say that I just ate like 8 candy cane joe joes…help.

    I like to buy those frozen veggies that are already pre-seasoned, and I mix it with lettuce and crab. Yum! I also love veggies, egg, and veggie sausage that I fry up in a skillet. Double yum!

    Maybe I’m crazy but I’ve never made squash in the slow cooker. Such a great idea. I always buy squash with good intentions to make it and then it sits like a decoration on my counter for weeks on end. Will be giving slow cooker squash a try. Thanks

    I missed Spaghettii Squash this year, Arggh! The season is over here unfortunately. I love that pic of Liv grabbing the crepe, SO cute! Favorite combo: Egg, Sweet potato, cheese. Pumpkin, oats, almond butter. Green tea, ginger and lemon. Yumm!

    FYI– Not that it can never happen but just to quell your fears a bit, usually anaphylaxis doesn’t occur with first time exposure. That tends to happen after somebody has already been exposed and has already had milder allergic reactions to whatever the allergen is. 🙂 http://www.nlm.nih.gov/medlineplus/ency/article/000005.htm

      to expand on that, anaphylaxis is only one possible type of allergy. allergies to food or anything else can also present as non-itchy, spotted rash or as hives.

    There’s a tv show on in the UK right now on exactly this 3-ingredient combo thing! Hugh FearnIey-Whittingstall competes each day with 2 chefs to make a 3-ingredient dish, where 1 of the ingredients has to be the same for everyone. They did 5 days of fish, then meat, veg, fruit, and store cupboard ingredients. I would recommend downloading it for sure! It’s been my guilty pleasure show lately.

    I have an anaphylactic allergy to peanuts and I can definitely say that the “fear of impending doom” symptom is correct – it’s super scary to realize you’ve just eaten something that can kill you! 😛

    I love how simple but delicious your dinner looks. I’ve got to try that!

    my favorite easy recipe (slightly more than 3 ingredients)

    Put in rice cooker:
    1/2 chopped onion
    1 cup butternut squash cubes (I just get the containers from TJ’s)
    1 cup brown rice (I use short grain)

    Pour chicken broth over everything to cover it, push start.
    When it’s done, stir in parsley, parmesan cheese, and a little butter. Great with chicken or shrimp!

    This hits my mac and cheese comfort food button and takes like 3 minutes to prep. My baby boy loves it too, because the squash makes the rice stick together into clumps that are easy to grab. =)

    Glad Liv is OK! I can’t help but wonder how a baby would communicate fear of impending doom…

    Love this recipe! I’m always looking for simple dinners I can put together quick so this is perfect. Favorite 3 ingredient combo is either apples with coconut butter and cinnamon or chocolate and peanut butter anything (I know that’s only 2!)

    I hope the Pilot feels better soon! Josh had to have surgery this Friday to remove a non-infected cyst on his head and I was worried and nervous so I imagine you were too. Thankfully it’s over now! 🙂

    Glad the Pilot is ok and hope his recovery is fast! (Even if it’s minor- my Pilot/Engineer messed up his knee a couple weeks back- it’s still nerve racking!) 🙂

    – Egg+Meat or Veggie+Cheese, Veggies+Rice or Noodle+Your favorite sauce, Broccoli+Olive Oil+Garlic salt, roast+balsamic vinegar+french onion soup packet (in crock pot for french dip), and this one isn’t as healthy but my husband requests it occasionally- pork chops+cream of chicken soup+rice+water.

    I love that you googled the symptoms of anaphylactic shock. I wish I would have been that smart when my now almost 7 year old had his first bite of a blizzard! I didn’t think twice before giving him a tiny bite of my reeses blizzard. Big mistake! He did, have anaphylactic shock symptoms and ended up in the ER for steroid shots and lots of Benadryl. Turns out he’s deathly allergic. I never realized you had to be so careful about things like that because I never dealt with food allergies. Now, I have 3 children, ages 4,5,6 and ALL three are deathly allergic to peanuts, the younger two also have tree nut, and my youngest has egg as well. It’s fun stuff, I tell ya! I’m glad to see parents now are so aware of food allergies. It really is sad just how common they are becoming. And FYI, you have to first be exposed to an allergen before you have a reaction. So, if it was her first time, still need to be careful. =-) Anyway, LOVE your blog. I’ve been reading for a couple years now.

    pb, ab & banana
    pb, banana and chocolate.
    pb and anything really..
    pb, honey & coconut.

    I love taking a cup of Fage 0% Greek yogurt, mix in 2 tablespoons of flax seeds, and pouring warm blueberries, raspberries, and blackberries mixture (frozen, heated up in the microwave). The berries burst in your mouth and produce a sweet sauce when heated, that the compliment with the creamy yogurt is sooo good. Plus, the flax in there is a nice addition for some fats and fiber!

    I know you are a bug fan of MaraNatha Almond Butter, me too. But have you ever tried MaraNatha sunflower seed butter? It is my new favorite! I love it on everything I would’ve had pb or almond butter on!
