6/29: Meals and Fitness for the Week

Whew! What an amazing, amazing weekend. I’m in the sky heading back to Tucson, but will have some fun Fitbloggin’ recaps up in addition to my regular posts over the next couple of days. It was my first time in Portland, and from the small glimpse I’ve seen, I’m a fan. The food is OUT OF THIS WORLD and hey, who couldn’t love a city whose slogan emphasizes maintaining weirdness? (“Keep Portland Weird”)

In addition to the conference, I was able to explore bits of the city with some old and new friends. We hit up the Saturday farmers market, and it motivated me to make some delicious treats this week. Sadly, I couldn’t take any of the things I wanted to purchase back with me (cheese, eggs, produce), but I couldn’t help but daydream about what it would be like to go with Liv and the Pilot every weekend for our produce and eggs. I’d glance around at the families relaxing on blankets or walking around with picnic baskets

and thought, “Yep. I could totally get used to this.”

The market was super crowded, and packed with vendors, overflowing with gorgeous flowers,

aromatic herbs and produce,

jarred treats, baked goodies,

food stands,

and fish… as fresh as you can get. (In Tucson, I’m pretty sure all of our fish has been frozen at one point or another.)

One thing that stood out to me with everything we ate here: freshhhhhh. Nothing tasted wilted or stale; everything was as vibrant and flavorful as possible. I loved all of the restaurants we tried!

Even though we ate at some incredible places, it will feel nice to make food at home again, using some of the flavors and techniques I enjoyed on this trip.

Here’s what’s on the menu for this week:

-Chicken and quinoa pilaf with summer veggies

-Blackened salmon, mashed sweet potatoes, asparagus

-Grilled watermelon salads

Amazeballs (I’ve missed them!)

-Lots of egg burritos

-New smoothie in a bowl (I’ll post the recipe; it’s an at-home version of something I tried!)

-Chop veggies for salads

-Make more liquid gold dressing

 

And on the tentative fitness plan (even though my teaching schedule has probably changed quite a bit since I was on vacation for this trip):

Sunday: OFF

Monday: Runday

Tuesday: CrossFit

Wednesday: Teach Zumba

Thursday: Teach DJ dance

Friday: OFF

Saturday: Teach World Beat, Aqua Zumba and Barre

It feels weird to be typing out my meals and fitness again now that Summer Shape Up is over! I’ll be sure to remove the passwords this week so you can easily access the workouts. I wanted to thank you all one last time for making the SSU as fun and amazing as it was- I was honored to be a part of it.

    I’m about to head out for my weekly grocery shopping and now I seriously am craving all that fresh fruit!! My grandmother used to live in SC and we always timed a summer visit around peach season. It was great to be able to pick them up from the little corner fruit stands.

    Those flowers are so beautiful too – and the berries!!

    Ok, probably should go eat some breakfast so I’m not shopping on an empty stomach. Dangerous 🙂

    Can’t wait to hear more about Fitbloggin’ it sounds like it was a ton of fun! Have a safe flight home now.
    The farmers market looks beautiful, there’s nothing better than fresh produce!
    I’m hoping this week to get more of my prepping done this weekend and have an actual meal plan, since I tend to slack on planning out my meals;)

        Doesn’t matter how long I live in Portland, I still think that rivers are suppose to look like the LA river and I marvel at least once a day about how green it is here.

    Those flowers are gorgeous! I love the atmosphere of Farmer’s Markets. They’re just so peaceful and everyone can’t help but be in a great mood! I’ll be going to my local one today as a matter of fact :).

    I’ve always wanted to go to Oregon! It sounds like a great place! I love the farmer’s market…everything looks so amazing and those flowers are gorgeous! I plan to go to Zumba this week and hopefully get a run or two in as well.

    I’m finishing up Week 4 today & probably will do another round of SSU! Keeps me accountable and it’s also easy because I have a great workout already planned! 🙂
    I love all the freshness that the summer season brings!

    Oh my! That produce looks so delicious! I’m jealous, as where I’m at for the summer has barely any fresh produce-even in the grocery store! :/ Hope your travels went well!

    Gina, thank you so much for creating such a fabulous SSU! It’s just what I needed to jump start my fitness routine and after 4 weeks I definitely feel stronger and I have more energy. I will be starting round 2 tomorrow! 🙂

    You’d think in a city the size of San Diego we could get a market like that…absolutely gorgeous and I’m SO jealous! Still working on my fitness plan now that SSU is finito (loved it and thank you for the millionth time!). I’m super goal-oriented and motivated so sticking to a 30/60/90-day program keeps it interesting while helping me to keep everything in check (I have been known to skip rest days and generally over do it otherwise). Definitely going to incorporate your strength circuits into whatever I decide though.

    With the loooong weekend ahead I’ve done some loose meal planning and loads of fruit/veggie prep for quick grab-n-go snacks as I anticipate we’ll be out and about quite a bit with the girls. Lots of salads, Italian pot pies, Tandoori tofu scramble, and a yummy sounding peach & goat Brie pizza w/balsamic are in the mix as is anything we can throw on the grill.

    I love Portland!

    We’re actually having Chipotle for dinner tonight because we have a busy busy afternoon and I didn’t have time to plan yet. My kids asked for Chipotle…twist my arm!.

    I love farmers market!! It’s so nice to biy all the local fresh produce.

    My fitness schedule this week…Sunday – Sculpting, Monday – Indoor Cycle, Tuesday – 2 Mat Pilates Classes, Wednesday – Yoga, Thursday – Running, Friday – Rest Day, Saturday – TBD.

    A good friend of mine is moving to Portland next year when her husband retires from USMC. They’re so excited! We don’t have much opportunity for farmer’s markets and such stationed here in Japan.

    This week’s workouts will be short and tough…tons of prep to do to leave in a few days for NC for 220 hour Kunga Yoga Teacher Training!

    I’m ready to start another round of SSU and see if I’ve improved 😉 I feel stronger so I want to push myself a little bit more (if possible) this time around. Thanks, Gina, these workouts have given me a great starting point, since I never knew how to plan or get a decent workout plan!
