7/21: Meals and fitness for the week

Hi friends! How has your weekend been? We’ve had a great one: slowly cleaning up the Disneyland explosion that is our house, celebration for nana’s birthday, girls’ night, date night… not too shabby 😉

I’m actually really excited about planning our meals for this week because we have an old friend back in our lives: the farm box!

We had a farm box for about a year, but after a few snafus with the pickup location -they accidentally threw our box away 3 times- the owner of the company called to let us know they have a new pickup location: Whole Foods! So much more convenient, plus they guarantee that the farm box is kept in a cooler. (Before, we were picking ours up at a restaurant and they could only put the farm boxes in a cooler if there was room.)

Here’s what’s in this week’s box:

Farm box order

Breakfast:

The usual suspects (egg burritos, breakfast cookies, fruit, oats, smoothie bowls)

Fresh juices (carrot, apple, beet + green juice)

Snacks:

Paleo bread with sunflower seed butter

Amazeballs

Turkey jerky (can’t get enough)

Garlicky eggplant dip with veggies

Kale chips!

Smoothies

Dinners:

Cornmeal crusted ratatouille tart with salad

Summer BBQ quinoa salad

Crock pot chicken teriyaki with steamed veggies and brown rice

 Key lime chicken enchiladas with black beans and sautéed veggies

 

Kale salad  1 of 1 3

Sunday: Total body strength

Monday: OFF

Tuesday: CrossFit + short run

Wednesday: Teach Zumba + hot yoga

Thursday: Teach Zumba, teach DJ Dance

Friday: OFF

Saturday: Teach World Beat, teach barre, teach Aqua Zumba

What’s on your meal and fitness plan for the week? What are you making in advance today?? I’ll be cooking up some chicken breasts, chopping veggies, making Paleo bread, amazeballs and some staples for Liv. I set the timer for an hour and do as much as I can– usually I’m surprised by how much I can prep to last for the week, and it makes healthy eating so much easier.

    What does the paleo bread taste like? I’m hesitant to make it because sunflower butter makes me yak like Whoa.

      Rachel – I have made it a few times and really liked it. Much more satisfying then bread.

    Looks like a great plan for the week! I usually don’t prep a lot ahead of time, just cause our plans change so much. I am hoping to use some tomatoes and peppers from our garden, though!

    Wow I am so impressed by your meal planning! I have tried so many times and failed and I always feel so guilty and bad for my poor husband who ends up coming up with some random meal himself do to my crazy schedule. I am attempting it again this week! Hopefully it will work!

    You menu sounds yummy! I was curious as to what you were going to do with the eggplant. 🙂
    I’ve made paleo bread a few times, but can never get it to cook all the way through? Is it because I’m at an almost 5,000 foot elevation? Just wondering if you have any tips.
    I’m not gluten intolerant…but just like to mix it up sometimes.

      that’s so weird- i’ve never had a prob with that. maybe try adding in more almond flour, or reducing the eggs to 4?

    Curious – did you buy into a CSA program or is this farm box something different? I’m interested in the CSA program in my area, but want to know a little more about everything before I make the jump!

      it’s very similar to a CSA- it’s a farm share. so a local farm makes custom and general boxes for families and drops them off at restaurants and grocery stores where its produce is sold

    MMMMM your menu sounds delicious! I need to try your Paleo bread, it always looks so tantalizing- I’m not gluten free by any means, but it looks SO GOOD! Quick CrossFit question- I’ve held off on trying it for a number of reasons, but mostly being I had a really bad back and neck injury but really like how you have been incorporating it just once or twice a week. Have you seen good results even with just doing that?

    Friday- Date Night!

    Exercise? Spin class, Zumba class, Barre3, and running/walking with my pup, yoga DVD’S

    Gotta try your crockpot chicken teriyaki!

    Workout wise, I’m going to do a lot of short cycling workouts in preparation for a 61 mile road race on Sunday. I’m also going to yoga in Wrigley Field on Friday! How cool is that!

    Your meal prep is so motivating! Do they really charge you $5 for two carrots? Or was it 2 lbs of carrots and you just showed two carrots? I get a GIANT bag of organic carrots at costco for around that price. Do you ever buy your produce there? Just got the sweetest, juiciest nectarines there. Not local but so yummy.

    I have yet to properly menu plan this week (although Monday nights are always jacket potatoes and salad as I feed an extra three children and its something they and my three will all eat!). I have however, made a batch of what I call breakfast veg. I basically cook up a right mixture of anything I have with a tin of tomatoes and some garlic and portion it out. I then heat that, top with a boiled egg and sriracha sauce. Usually means I get at least two portions of veggies in nice and early.
    Tues: Hayley’s Hiit
    Wed: amazing circuit class
    Thurs: amazing body combat class!
    Sat: a run or Hayley’s Hiit again!

    Oh, and I am so excited…..a town that isn’t too far from me (10 min drive) is getting a Whole Foods Market. Now I can go and buy all the amazing things I keep reading about. They are very very rare in the UK!

    I love farm shares! We’re in the process of a cross country move and I’m crossing my fingers that we can link up with a great CSA farm again. It makes it so easy to eat a wide variety of veggies, and nothing tastes as good as produce right from the farm! Have a great week!

    Quick question: I have been wanting to make the Paleo Bread for ages, but have been terrified to use my Bob’s Mill Almond Flour (since she says we should only use the flour she recommends) what BRAND of Almond Flour (flours) do you use for yours?

    I love farmers box! We have it too, but usually stop around wintertime cause the only vegetables in the box are all kinds of kale 🙂
    I spiralized zucchini to make Zucchini-Noodles, plus made a huge batch of eggplant hummus, and roasted chicken. Veggies are chopped and I baked some of my favorite snacks: Eggwhite Bites! (http://www.candyfit.net/p/recipes.html?recipe_id=6038669)

    I’ve really got to get on this whole meal prep thing. I’m so bad at forcing myself to do it because somehow it always gets to be Sunday night before I know it and I have no time left! Oh well, I feel like as long as I plan out a few meals and get the groceries I am at least on the right track!
