Lots of prep and planning here. I have a ten week old baby and a 6 year old and a job.

We made bean burritos for lunches and put them in the freezer. I made salsa, hummus, and eggplant spread. I made potato salad and marinated steaks, so there should be leftovers after tonights dinner party. Lettuce washed and melon cut.

Left to do is prep up overnight oats and maybe the chickpea curry.

Workout plan, well today I walked and realized how much harder that big hill is with an extra thirty pounds.

Tues is spinning, weds is strengthening, thurs is HIIT and strengthening, sat is a repeat of thurs.

Sorry for the typos, I’m on. An iPad with a baby asleep on me.

I’ve got a roast chicken, turkey sausages on whole wheat buns, quesadillas with homemade guacamole, and a shrimp, tomato and feta dish on the meal plan for the week.

I just started meal/grocery planning recently and I love it! It’s definitely a great way to approach what we eat in a week and make sure everything gets used up.

I took some time today to do some planning! I find it much easier to not have to figure out what to eat each and every day. I plan on making some chili, baked chicken, roasted eggplants and other veggies and a couple of other dishes. As far as workouts go, I’m hoping to run 4 miles on Monday and Wednesday, yoga class on Tuesday, elliptical on Thursday and a spin class on Friday.

How do you like Amy’s vegetable korma? I’ve contemplated buying it, but I had another frozen Amy dish and didn’t really like it. Although it is convenient when you’re short on time.

Planning and prepping is on Tuesday this week! We are finally moving home tomorrow after a summer away. Luckily my boyfriend has morphed into someone who wants to eat healthfully! This will be so much easier…

    And I had a race today! PR’d with a 28:24 5k. Yay!

  5. brittany on September 16, 2012 at 8:15 pm

Are the pilot and Liv joining you for the race? I wish I could go. I live about an hour from the race. I would deffinatly go but I still dont have my license and I dont want to ask someone to drive me all the way there just to meet you. I hope you are able to make it into Boston for a day. It is such a nice city though I may be biased based on the fact that I have lived here my whole life!

Luckily for me I just started a 2 week PE rotation in school and work out five days a week. Nothing too hard so I am sticking to Zumba Monday, Tuesday and possibly Thursday. My gym just came out with a new class schedule and Zumba is on there 5 times a week!!!!!! I am so excited to try different instructors!

Have so much fun! I grew up on the cape and haven’t been back in way too long!

  7. Erin @ Girl Gone Veggie on September 16, 2012 at 8:31 pm

I’m doing a virtual 5k soon and am really excited! I can’t wait to get to do a race in person though!

    • Brittany on September 16, 2012 at 10:31 pm

      What’s a virtual 5k?

  8. stacey on September 16, 2012 at 8:39 pm

I had a 5k scheduled but they cancelled it. Next one is end of October but I’m hoping to find one nearby before then.

As far as planning food/exercise on Sunday? I’m lucky to decide the day before. I usually wing everything except for my Wednesday with my personal trainer.

  9. Katy @ Bride on the Move on September 16, 2012 at 9:12 pm

I haven’t planned or prepped yet but this post has inspired me to do it now! Starting a new job this week and I’m sure this would make things easier!

  10. Diana on September 16, 2012 at 9:41 pm

I love seeing your week planning posts, and I’m actually planning mine now too (thanks for that extra push to get it done!)

I prepped my snacks and oatmeal for the week already and I’m trying a new healthy delivery for lunch this week. I’ve already bought tons of veggies for dinner too, so I think I’m set. I didn’t do my snack and oatmeal prep last week and I was constantly running late. I’m so glad it’s already done.

As for fitness, I’ve been trying to start walking, but every day I plan to I get rain. Here’s hoping I can start this week!

  11. Michelle @ Eat Move Balance on September 16, 2012 at 10:10 pm

I did! I soaked and cooked some beans, grilled chicken and made a jar of salad dressing. I should be set for the week! 🙂

  12. Jessica on September 16, 2012 at 10:23 pm

No race next weekend but I ran my first 10k today. Had a great race but don’t have a time as there was an error with the timeing company.

Meal plan and prep will be tomorrow morning.

  13. tina on September 16, 2012 at 11:03 pm

ok, why are there dead rodents in your first pic???

  14. s on September 17, 2012 at 12:33 am

i made quinoa with veggies and a vegan creamy pasta (& quinoa) sauce for the week.

  15. @pluvk on September 17, 2012 at 2:35 am

I was all set to make my meals for the week… last night I planned every thing out. But today, well, exhaustion kicked in, so nothing worked out as planned! The veggie tofu wraps that I was planning on morphed into today’s lunch – tofu with kimchee cucumbers – and I was out of the chicken I was set to slow-cook. LOL Oh well… hopefully I can cook up some meals tomorrow!

  16. Chelsea @ One Healthy Munchkin on September 17, 2012 at 7:39 am

I didn’t get any prep done yesterday, but I at least sketched out a rough meal plan! This week I’m making homemade pizza; tomato, cheese and pesto paninis; eggplant rollatini; and zucchini fries!

  17. Ali on September 17, 2012 at 8:49 am

Yes! I have a race this weekend. My first race ever!!! (Since like Grade 4 when I did cross country.) I’m doing the colour vibe 5k in Ottawa, where I go to university.

It’s pretty cool, they’re gonna throw dyed cornstarch on us as we run past different stations every k, so by the end of the race our white t-shirts are all different colours!

You’re totally the inspiration behind me doing this. Since I started reading your blog (about a year and a half ago) I’ve lost 20lbs and just feel great about everything! I don’t comment often, but I’m super excited we both have a race on Saturday! Good luck Gina, and thanks for writing an awesome blog 🙂

I loved seeing your pics from the day. Looks like you had a fun weekend! I’ve been kindof falling off the wagon of planning my meals for the week on Sunday, but the good news is I have enough kale and salad toppings to make my favorite salad all week plus stuff for sandwiches. Maybe next week I’ll get my act together better 😉 Happy Monday!

  19. FitBritt@MyOwnBalance on September 17, 2012 at 10:14 am

As a lawyer I often have to work late into the night. I try to plan out my week on Sunday depending upon when I will need to work late and therefore, eat at work versus when I’ll be home to cook. I purchase microwave meals that are under 500 calories to bring with me to work for dinner from http://www.freshdirect.com on nights I’ll be working late.

Workouts are always in the a.m. and always planned out on Sundays. If I don’t know what I’m doing I won’t get out of bed to do it!

Life is all about balance 🙂

  20. Heather on September 17, 2012 at 10:17 am

i’m making a spaghetti squash casserole tonight to have for the week!

just looked at that cookie recipe and am surprised i actually have all of the ingredients! they sound great…always looking for good gf cookies. do you think coconut oil would work as well as canola? i have both, but have been trying to use the coconut more

  21. Amanda on September 17, 2012 at 10:44 am

Yum! I made sweet potato black bean enchiladas and froze leftovers, and put some homemade spicy black bean burgers in the freezer. Planning on making spicy rigatoni and cauliflower and maybe some chickpea curry too. Green smoothies for breakfast and leftovers with big salads for lunch as usual 🙂

Workouts: Running, swimming, and some yoga. Maybe a long bike ride over the weekend if I can swing it.

  22. Brigid on September 17, 2012 at 3:55 pm

I shopped, meal-planned, and prepped on Sunday, too. Dinner is simmering away in the slow cooker as we speak, and a made a batch of focaccia yesterday, too.

  23. Tiffany on September 18, 2012 at 12:01 am

What do your HIIT workouts consist of?

I tried looking at your fitness page but didn’t see any. I’d love to know!!
