9/23: Meals and Fitness for the week

This week is going to be a little different than usual, since I’m staying out-of-town for another day +.

Me 2

Unlike traditional vacations, where I have to get creative to find healthy options, I’m fortunate to be surrounded by them.

Breakfast this morning:

Gluten-free cornmeal waffles (I salivate just looking at the picture)

Waffle

smoked salmon, more salmon with cranberry sauce, an egg, salad

Salmon

organic coffee with Stevia and soy milk,

oh, and chocolate mousse.

Fitness-wise,

I took a dance class and TRX class, then spent some time after brunch exploring the great lawn and trails surrounding the property.

and followed the meditation guide as I walked around.

Tuesday will technically be my “Sunday” for the week. I can already tell that after my stay here, I’m going to be more inspired to make healthy meals at home. Too often lately I’ve relied on restaurant food -which is fun, but the costs add up quickly- or any food that’s readily available to me. I’ve eaten a decent amount of gluten and dairy lately, which don’t make me feel too great, but since someone else made it, and I was hungry, I’ve been eating whatever (like at work, if I forgot a snack and there are cookies). If I plan, I’ll be able to have more options that I enjoy and don’t leave me with a stomachache. 

Here’s what’s on the fitness agenda for the week:

Sunday: TRX, dance

Monday: Group run around the property

Tuesday: OFF

Wednesday: Teach Zumba

Thursday: Weights

Friday: OFF

Saturday: Teach Zumba

Here are some meals I’m excited to make when I get home:

Chicken Caprese Salad

Veggie and Goat Cheese Enchiladas 

-A version of these Sweet Potato Burgers

Prep: 

Amazeballs

 -Zucchini cakes and popsicles for Liv

Steam eggs

Steamed eggs and quinoa

I’m going to try and do a recipe link-up with everything I’ve tried while I’ve been here.

    The grounds of Canyon Ranch look so gorgeous and lucious! I am trying to eat clean this week, as I too, have been eating a lot of gluten lately and feel better without it! I am going to be trying a new chicken recipe from Clean Eating magazine – I love it! I also bought a Kobucha squash at the Farmers Market, so I plan to roast it … so delicious and so Fall! Enjoy the rest of your stay there.

    Holy crapola, veggie and goat cheese enchiladas sound awesome.

    We go shopping every 2 weeks here and we’re heading into the second week, so I made all the exciting things already haha. I’m probably going to make:

    – spaghetti squash gratin
    – butternut squash stew/soup/pasta dish/something or other
    – kitchari (delicious Ayurvedic meal with rice, bean/lentils and vegetables)
    – aloo palak
    – my grandma’s “ricotta balls”, basically breaded and fried herbed ricotta
    – random meals like fried rice/bbq tofu/stir fries etc

    That labyrinth is so cool! And this trip sounds like it’s been really meaningful for you and that you’re going to walk away with some revelations and realizations and can make some tweaks to your day-to-day life…i LOVE trips or events or things that have that Ah-Hah! moment effect on me!

      I once read that it’s common to find inspiration or motivation to make changes in your life when traveling – something about being outside your normal environment and routine, which makes sense. It’s like your brain is forced to come out of auto-pilot and your mind’s more open to new thoughts…or something. I’ve also heard this (open-mindedness) is the reason writers travel to new or specific places to work. Whatever’s going on, I know it happens to me, too; I *always* return from a trip excited to tackle some new goal I came up with on the plane or during a layover.

    Glad you’re enjoying yourself, looks soooooo relaxing and so amazing. I know how you feel about eating out too much, it’s just so darn convenient!! AND I love being inspired by others creations :)) Your waffles…… look… amazing…. and you are making my mouth water!!

    Can you explain your issues with gluten? I cannot eat gluten at all, haven’t been able to for the past 6 years, and I don’t have the luxury of going off gluten when I feel like it or when there are no other options. If there is no other option, I simply don’t, because I can’t without horrendous consequences. Are you issues with gluten more of a “south beach diet” sort of thing? There seems to be a rumor going around that gluten free = healthier, or gluten free = skinny, and that’s just not the case.

      Gluten allergy or no gluten allergy… Gluten is bad. So I never get why women give other women so much flack if they are not eating gluten when they don’t have a major, diagnosed problem and a doctors not to prove it!!

        I agree with this. When I bake, I love using gluten free flours and ingredients. I feel like more often than not, the flours have a higher source of protein.

        Eating gluten free also keeps my carbs down because of the options available… even without trying to count them too much. That’s not to say gluten free doesn’t have carbs, because it does, but usually I find them more nutrition-dense.

        With that being said, I feel like it’s always a healthier option for our bodies to process. 🙂

        Heya, not giving “flack” at all – – like I said, I am curious b/c I remember Gina saying she had a gluten issue, and I have a gluten issue, meaning I cannot afford to have gluten here and there without major repercussions. Not eating gluten is perfectly healthy yes, but gluten free additions are just as high in carbs though, higher in calories, and perfectly frankly, are only a temporary band aid of sorts. We do not know why gluten issues are popping up as they are now, but it certainly has something to do with gmo foods, and the gluten free substitutes also are GMO; therefore, someone with a reaction to glutens now will most likely develop a reaction in later years to the subsititutes: corns, rices, etc. Wheat by itself is not bad or unhealthy; it’s the overproduction that is messing with our bodies. It sucks to be celiac, and I certainly didn’t ask for this, but I do believe some people are seeing gluten free as a novelty (not saying you or Gina specifically).

      hey girl,
      sorry i’m just now getting back to you- i’ve been answering comments mostly on my phone so my butterfingers have a hard time typing longer comments 😉
      i avoid gluten mostly because my homeopathic doc said my body has a response to it indicating a sensitivity but not a full-blown allergy. i’ve noticed it before, and while i can still eat it, i choose not to because it makes my stomach hurt. lately, i haven’t been as concerned about it because i’ve been at a point with liv, and all of the things we do, i’d rather eat a little gluten than be hungry. i do think, in general, that gluten is inflammatory and those with sensitivities can be on a huge spectrum of how bad they feel after eating it. i can tolerate it, but i’d rather stay away.

      i wrote a post about gluten a while ago, and my major point was that if you’re not sensitive to gluten, you don’t need to avoid it. usually gluten-free substitutes are crap (full of processed grains, sugar, chemicals), but the good thing for people with celiac and serious sensitivities is that the people who avoid gluten (for whatever reason) are just voting with their shopping carts for more options to be available.

      i think it’s up to us to experiment with different eating styles and find a method that works best for our individual bodies. for me, that means nixing gluten and most dairy.

    Those recipes all sound awesome! I just cooked up a big batch of spaghetti squash, tomato sauce, broccoli, and chicken meatballs! Love Sunday prep days! I am loving these posts too! Gives me great ideas for the week!

    This makes me want to stay at a canyon ranch resort even more…that food looks INCREDIBLE! A place that offers that sort of stuff for breakfast is like my heaven!!! Plus the fitness classes sound amazing as well!

    How does goat cheese work for you? Its my favorite, but since I’ve realized I’m recently lactose intolerant (I’m about ready to head to the hospital after eating a couple oz of greek yogurt..) I’m afraid to see if I can still handle it.

    I’m excited about this week’s menu! Slow cooker bolognese for after Wed evenings spin sesh and also planning on making asian inspired shrimp bowls and chicken taco salads. Hoping the bolognese comes out just right this time so I can post. It’s been super hot (for socal) and it’s def going to be a crockpot kind of week.

    Canyon Ranch looks fabulous. Spa treatments plus tasty, healthy eats… yes please!

    This week I plan on making pasta with creamy tofu marinara from Edible Perspective, chicken in marinara sauce with cheese, and cod with a summer succotash!
