A little this and that

I used to dread Mondays and feel apathetic towards Tuesdays, and now I love them. They’re like the extra part of my weekend and I get to stay home with Liv. I thankful to be able to stay home a few days each week, but also work away from home a few- i’s a good mix for me.

So just like Mondays, Tuesdays tend to be equally on-the-fly depending on whether we have playdates planned and how the weather’s doing. It was a chilly and windy this morning: perfect for library story time,

then back home for lunch.

I reheated this egg dish concoction I made last night:

and sautéed some tomatoes and spinach to go along with it,

seasoned with garlic-infused olive oil, salt, pepper, balsamic and Dijon.

The egg dish was based off this recipe, but I baked it in the oven instead of grilling:

After two days off from the gym, I’m ready to hit it hard tonight with back, biceps and jump rope HIIT. Anyone else about to get their sweat on, too?

    I just got back from the gym…did your booty burner incline workout and one of the ab burners. Loved every sweaty minute! 😉 Normally I don’t work out in the evenings, but that’s how my schedule worked today. The gym definitely has a different atmosphere at night!

    I have been on a HUGE egg kick lately but needed a side, what a great idea! I love having days off during the week, I get more done and it’s not as busy. My workout for the day was Les Mills Combat & I LOVED every moment of it! Thank you for introducing me to TurboFire.

    That picture of you and Liv is adorable! I love incorporating grape tomatoes into side dishes. They’re really good roasted with cauliflower, evoo, garlic, salt and pepper.

    I LOVE that new Pitbull song! He makes so many of my workout jams! I’ve been rooting for Christina to have another hit song, she wasn’t releasing anything that great for a while.

    I just heard that Pitbull song and decided I would love it if it wasn’t for Christina Aguilera, I just don’t love her since her Genie in a Bottle days…but Pitbull = workout glory. I recently did a workout playlist on the blog and I think there were originally 6 Pitbull songs and then I decided I should pare down 😉

    I’m a week behind on my Winter Shape-Up, so I did workout 4 yesterday + 30 min cycling. I must have been on a workout high when I was doing it then because I was NOT prepared for the incredible dead legs and shoulders I’ve got today! Holy cow that snuck up on me. I like those ninja workouts though…they feel great at the time, and then the pain sneaks in later. Needless to say, my cardio today (elliptical 25 min + swim 25 min) felt like death…but I did it! I’ll be rocking out workout 4 again tomorrow, wish me luck!

    I adore that pic of you and Liv and I am so jealous on your weather! We have snow again today….. Even though I went out at 6am (with winter running clothes all over :-)) for a 50minutes run including 2 rounds of strength Tabata and 2 rounds of Cardio Tabata and at home did 2 of your Ab burners!! Love them!!

    G, any tips on finding the right jump rope (length, brand, etc.)? I sometimes borrow one from the gym at school…I work at an elementary school…so I’m guessing some times the rope is just not the right length for me!

    That egg dish looks delicious, BUT those tomatoes and spinach look divine! I love the Pittbull/Christina video, it looks to be filmed in Prague, the bridge across the river looks like the Charles Bridge.

    Hi Gina,
    It’s good to see someone like me, i also love the weekdays as it is same like any other day. Sometimes i find myself working more in the weekends than in the normal week days. And the best part of weekend is i find some more time for my family. I love the mushroom recipe, it looks delicious.
