Tempeh bacon

Hi friends! How are ya? Hope you’ve had a lovely day <3

Thanks for the awesome feedback on Missy’s Focus On: IntenSati post! It looks like a class I’d LOVE to take.

Here are some previous Focus On posts:

Zumba

PiYo

Core Fusion

TRX

Crossfit

Bellydance

I had the chance to meet with a blog reader at the resort today- she took two of my classes 🙂 It definitely made the day more fun.

Lunch was nothing too crazy –even though Snobby Joe leftovers are fanfreakingtastic and I adored the Macrobar

lunch

I’ve been wanting to share with ya a salad beast I’ve been enjoying lately: the veggie cobb.

cobb

Remember when I made tempeh bacon? [And ate the entire block of tempeh in one fell swoop because it was so delicious]

tempeh (4)

Well that’s the star of the show 😀

Not only is this beast a lot less calorically-dense than the original thang, it also has a ton of protein and a dose of healthy fat.

Tempeh bacon

-1 serving of tempeh

-3 T Nama Shoyu

-1 t olive oil

-splash of apple cider vinegar

-1 t maple syrup

-garlic powder, chili powder, paprika, sea salt and pepper

1. Marinate the previous ingredients for 5 minutes up to 1 day.. depending on your patience level. {You can guess how long mine soaked for, haha}

tempeh

2. Cook in olive oil –this is importante! it won’t get crispy without it- on medium heat for 3-4 minutes each side, until golden and foodgasmic

Ranch dressing

-1 T Veganaise

-3 T almond milk

-1/2 t dijon mustard

-chopped fresh chives, dried parsley, thyme, garlic powder, oregano, sea salt and pepper

For the salad, combine:

-Greens (romaine is fab, but so are mixed spring greens or whatever you have on hand)

-2 boiled egg whites

-1/4 chopped avocado

-chopped grape tomatoes

-onion (optional)

-Toss with Ranch dressing and feast!

It’s my new fave, for sure.. I can’t wait to have it again tomorrow perhaps 🙂

Off to see where the Pilot is- the monsoon is about to hit.

Have a great night!
xoxo

Gina

Thanks for the foot stretching link. After every long run I feel it in my feet more than anything else (I have awesome shoes, but flat feet, an extra bone in one of my ankles and a family history with foot issues, so I’m doomed). Bookmarked that page!

  2. Lindsey on July 6, 2011 at 9:54 pm

mmmm…looks delicious. I picked up a pack of tempeh bacon at whole foods yesterday, and am looking forward to trying it for breakfast tomorrow. I may have to make more for lunch! My favorite salads lately have been the Weekend Glow kale salad from Oh She Glows (even my kids love that one) and your quinoa and kidney bean salad with hummus (have it in the fridge for a quick lunch tomorrow). Enjoy the rain!

  3. Jen @ familyfoodfitnessandfun on July 6, 2011 at 9:55 pm

I’ve never tried tempeh! Perhaps now is a good time to try 🙂 Thanks for sharing!

  4. kaila @ healthy helper! on July 6, 2011 at 9:55 pm

Mmmmmmm! That sounds delicious! I looove cobb salads!

  5. Jaime on July 6, 2011 at 9:56 pm

Thanks for the foot/ankle stretching link. I had ankle surgery in April and am having a horrible time recovering. What was supposed to be a 5-6 week recovery has turned into a 12 week and counting recovery. I do most of this in physical therapy, but always forget about the stretches once I get home. Now I have no excuses since that article has all the pictures and guidance I need!

  6. Jess on July 6, 2011 at 10:07 pm

Thanks for the link. My left ankle talks to me all the time and I never know what to do besides ice. I’m seeing a physical therapist soon to work on strengthening that area. I’ll have to show her this too.

That salad looks amazing, btw. Need to try making the tempeh ASAP!

  7. Ali @ urbanfruitbat on July 6, 2011 at 10:18 pm

This looks so so good! It also really reminds me of something that Mama Pea would make, sans the eggs! I wish I could come and take some fitness classes with you! Although, I may be a touch star struck and really not do well…

  8. Brittany on July 6, 2011 at 10:20 pm

Wow I’ve never even thought about stretching out my feet & ankles! Thanks for the link 😀
Hopefully I won’t be getting cankles anytime soon

  9. kari on July 6, 2011 at 10:24 pm

such a yummy salad! thanks for the stretching info and i need it since im on my feet all day at work. well, i hope you are feeling better and have a nice evening.

  10. Laura @ prettylittlewords on July 6, 2011 at 10:26 pm

Ahhh I can’t wait to make this! My mouth is watering all over the place! 🙂

  11. Averie @ Love Veggies and Yoga on July 6, 2011 at 10:38 pm

Oh my feet are a disaster! They are sooo tense! I wear the wrong shoes, I run, I don’t stretch them out enough, I have plantar fascitis, I have so many issues with my tooties. I would rather have a foot massage than anything else. Ahem. It’s that good for me…haha!

The tempeh bacon recipe AND the ranch dressing with vegenasise are music to my little vegenaise-lovin’ ears 🙂

  12. Laura (Cookies vs. Carrots) on July 6, 2011 at 10:40 pm

    Mmmmmm… I love cobb salads! I’ll definitely try this healthy-version 🙂

  13. Kelly @ Laughter, Strength, and Food on July 6, 2011 at 10:46 pm

I absolutely adore cobb salads and this one looks great! I can’t wait to try it!

Also, I am always looking at ways to make my feet feel better! Thanks so much for the stretches! 😀

  14. Holly @ The Runny Egg on July 6, 2011 at 11:26 pm

I actually do stretch out my ankles and feet before I go to bed — it feels so good to have them loose before falling asleep.

Cobb Salads are my favorite — although I love real bacon so much!

  15. Kilee on July 6, 2011 at 11:45 pm

Sounds like a fun day! This salad looks delish and super filling. I am the type of person who needs a salad AND something else, unless it’s a huge, dense salad.

Hopefully the monsoon isn’t too bad tonight. Take care!

  16. Laura @ Backstage Pass on July 7, 2011 at 12:28 am

This salad looks delectable! I sometimes crave bacon-y things and have got to make this asap.
Thanks for posting the foot exercise link, I checked it out! But you HAVE to look at exercise #5 “Toe Pick-Ups,” the photo on it is totally creepy… the foot is picking up Reese’s PB bells (like the kind they make around the Holidays). Eww!

    • Fitnessista on July 7, 2011 at 12:38 am

i saw that!!! it made me do a double-take for sure

  17. Holley @ Lunges and Lashes on July 7, 2011 at 12:31 am

i have thought about that before, how out feet take such a beating but we really don’t do anything for them! sometimes at night before i climb into bed i will rub them for a minute and it feels really nice, soothing. maybe it feels extra good because they never get touched! thanks for being such sports feet! 😉

  18. Tania on July 7, 2011 at 12:47 am

It was sooooooooooo nice meeting you today!!! I cant wait to take your zumba!

so nice meeting you too! :))

  19. Stefanie @thenewhealthy on July 7, 2011 at 1:13 am

That salad sounds so good! I used to love Cobb Salads before I realized what calorie and fat bombs they are! Can’t wait to try this! 🙂

  20. Kris | iheartwellness.com on July 7, 2011 at 1:34 am

You always make the most random, yet bomb diggity looking dishes….Love it!

    Must try this one!!!

    xxoo

That tempeh bacon sounds insanely delicious 🙂 It’s so hard to find tempeh here in ENgland – i have to mail order it, or go to a health food store like 3 hours away. Craziness! Please tell Trader Joes to come over the ditch to England, lol! 😉 Ah, so cool you got to meet a fitnessista fan! That must have been such a nice little ray of sunshine in your day. xyx

    Tempeh Bacon sounds great!!

  23. Karen @ MyVeganland on July 7, 2011 at 7:59 am

That salad looks super yummy. I am always looking for new salad beast recipes so this will definitely be added into rotation. How much of the tempeh bacon do you add?

  24. The Teenage Taste on July 7, 2011 at 8:41 am

I need to make myself some of that tempeh bacon. *drool*

  25. Chelsea @ One Healthy Munchkin on July 7, 2011 at 8:46 am

I’ve been looking for a good homemade ranch dressing! There’s nothing better than a veggie wrap with ranch dressing and some cheddar cheese… it brings me back to my childhood. 😀 Thanks for the recipe!

  26. jenna on July 7, 2011 at 9:27 am

i love your tip of the day! 🙂 i’ve been getting charlie horses in my feet like crazy lately!

  27. Sam on July 7, 2011 at 9:29 am

Ooooh I am sure that the tempeh bacon is the star of the show! I loooove tempeh. Gotta make this!

  28. Cait @ Urban Fencepost on July 7, 2011 at 9:35 am

I’m going to have to try your tempeh bacon. I made a BLT yesterday, and while it tasted fabulous, I wasn’t very impressed with the ingredient list of the Morningstar brand fake bacon I used. That ranch dressing also sounds delicious and super easy!

  29. Claire @ Live and Love to Eat on July 7, 2011 at 10:00 am

Cobb salads always look so good (but never veggie-friendly). This is a great idea! Tempeh bacon is definitely on my to do list.

  30. Stephanie on July 7, 2011 at 10:11 am

Thanks for the foot stretching link! I stretch my feet while I’m in bed…it helps me get to sleep, but I think it might drive my husband bonkers. I’ve never tried tempeh before, but I really should!

  31. Liz on July 7, 2011 at 10:18 am

I have always wanted to know how to make tempeh bacon… and vegan ranch dressing. In this one post you have shown me how to make both, so thank you! this salad looks amazing, I loooove putting eggs in my salad.

  32. Brigid of Vegging out in T-Town on July 7, 2011 at 10:22 am

I’ve had no luck preparing tempeh on my own, but this recipe looks delicious! I’ll have to try it. I think the boy would love the salad. I’m going to try some of those stretches today, too.

  33. Mary ( What's Cookin' with Mary) on July 8, 2011 at 1:10 pm

Funny that you mention stretching feet… I recently had a flare up in the connective tissue between the arch or my foot and heel. The remedy ?? …stretching ! After one week of stretching, I’m all better 😀

    • Fitnessista on July 8, 2011 at 1:13 pm

      good! 🙂

  34. Julia on July 15, 2011 at 6:51 pm

I just made this salad and it is INCREDIBLE. I see many more in my future! THANK YOU!

    Hi Gina,
I’ll admit, I’ve been a vegetarian for almost a year now, but I am TERRIFIED to try tempeh or tofu. I have no idea why, maybe the fact that it’s somewhat processed scares me…. not sure. I eat every veggie under the sun though. I am curious to try your tempeh bacon…. will you disclose what brand you used? I’ve heard some tempeh is really bitter and I don’t want a bad brand to poison me from tempeh if I might otherwise like it. Thanks!!

    • Fitnessista on September 13, 2011 at 8:09 pm

i wish i could remember which brand it was. it was in a white package if that helps? i hope you love it

  36. Kristin on October 30, 2011 at 6:52 pm

I am dying for this salad beast and temph bacon now!

  37. Hilary Pearlson on May 16, 2013 at 6:09 pm

Can’t stop eating Tempeh Bacon, it is AMAZING!!! Thank you so much for this recipe!! xoxo
