Hey guys! Happy Tuesday! I’m treating today as a Wednesday because I get to have Indian tonight—we’re having my “farewell dinner” there after spin. Baigan bhartha, I can taste you already 😉

I started this morning with the classic Fitnessista breakfast cookie:

I just wanted to say thank you (so much) to those of you who have made bfast cookies and linked back to the how-to post. I came up with the breakfast cookie a little over a year ago and it’s a creation I’m extremely proud of 😀 I hope you guys know how much I appreciate it.. especially since I’ve seen some “similar cookies” (and how-to posts) floating around the blogworld.

Today’s bfast cookie was the original oatmeal-raisin:

This beauty had 1/3 cup oats, 1 scoop sprouted brown rice protein, vanilla hemp milk, raisins, 1 tbs almond butter, 1 small smashed nanner, cinnamon and Stevia.

It was so gross, I couldn’t finish it 😉 Are there tongue marks on the plate??? I would never!

Funny how the breakfast cookie has changed over the year! I use almond or hemp milk now instead of skim, almond butter instead of peanut butter, brown rice protein instead of whey, MORE oats (!), Stevia instead of Splenda, and I don’t count the toppings like I used to.. I remember counting out 25 raisins for the bfast cookie! Now, I just grab a handful 😉

    Good morning!
    I’ve never made a breakfast cookie, but will be buying some oats and Stevia to try it out.
    It looks absolutely yummy no matter what add-ins you use!
    But I have a question – do you eat it cold?

      yup i eat it cold! if you think of it more as “dough” and not a baked cookie, it’s not as weird to eat cold 😉

    Love the bfast cookie! I think I’ve been reading your bloggie for almost a year now… around when you announced giving up meat, it’s fun to see how people’s food choices evolve. It’s all about how much we know, right!?
    My fav (happens to be what I had this morning!): 1/2 cup oats (I like this more than 1/3 because it has more of a cookie consistancy, it’s less soft and holds together better in my opinion:-), 1 scoop sprouted brown rice protein, vanilla hemp or almond milk, 1 TBL. AB or Sunbutter (for more of a peanutty flavor- allergic to peanuts), raw cacao, vanilla stevia, 1 med smashed banana. Then I top it with another banana, sliced and globs of almond butter and/or dehyrdated buckweat & raisin cereal. Texture girl. Oh and I also heat it on the stove top for about 5 minutes sometimes. I like mine warm and a little gooey, the chocolate tastes better.
    Try not to let the “similar” cookies bother you. I’ve had my recipes stolen too and it’s frustrating to not get credit but like they always say: imitation is the best form of flattery! I know, that quote annoys me too but just trying to be positive! Have a great day 🙂

    I’ve tried B-fast cookies a few times. I don’t get to have them that much because I haven’t figured out a good way to transport it to work in my lunch bag (I eat B-fast at work). Each one comes out a little different. I usually use AB, oats, unsweetened vanilla AB milk, applesauce, sugar in the raw, cinnamon and nutmeg. Oh no…. now my tummy is growling!

    LOVE me a good b’fast cookie. however, i have a question for you i pondered on my way walking to work this morning (totes a geek, i know).

    what are some of the pilot’s fave vegan/veggie/dessert recipes? i have a co-worker’s b-day coming up, and i want to either bring lunch for the office or bring a dessert that is healthy AND delish. i figured since my co-works eat like the pilot, he might have some killer insight 🙂

    It is awesome to see the transformation like that!!!! I see the same thing in myself…. Now I rarely eat white bread (haven’t said no to it completely like you have, but then again you are several steps ahead of me!), refuse to buy non-organic meat for my hubby or chicken once in a while for both of us, AND PhillyBoy is now eating vegetarian meals without thinking twice about it!

    I have 2 favorite breakfast cookies:

    #1: Oats w/ milk, chocolate protein powder, dark chocolate dreams peanut butter & dark chocolate chips

    #2 Pats w/ milk, cinnamon roll protein powder, cinnamon rasin swril peanut butter & white chocolate chips

    I have made many different breakfast cookies and don’t think I have ever made one I didn’t love!

    Thank you for this great recipe! I had my first today, and I felt like I was eating something so naughty and dessert-like for breakfast :)! I used your same basic recipe, but added raisins, cinnamon, stevia, no banana, whey protein, almond butter, almond milk, and my favorite, pure almond extract for extra flavor. MMMM!

    The breakfast cookie is probably only of the best inventions you ever created! It took me a while to “master” it but I think I got the hang of it. I like adding chocolate brown rice protein and cocoa powder for a richer chocolate cookie. Sometimes I’ll use honey or agave to sweeten the cookie. Then instead of adding my mix in’s I decorate the top instead. I like my chocolate cookie with fresh raspberries and raw sliced almonds. Delicious!

    So I found your blog through Girl on Raw, and I love it! I just had a random question…My husband and I are from Orlando and I have been trying to get him to take me to go Cafe 118…but he’s very skeptical about raw foods. Has your husband been there and if so what did he think? I also noticed that your a military wife…so I am. (My hubs is in the Army) I’m on the other side of Georgia though…Fort Stewart right by Savannah. Anyways, just wanted to write you a comment and let you know that I love your blog!

    I don’t bother with making it a cookie, it’s my breakfast “instant oatmeal”

    I make it up when I get to the office and by the time my stomach is growling…it’s there!

    lately mine is more of a coconut-choco macaroon variety.

    coconut butter (banana of course) my oat mix (oats, flax, hemp protein powder, flaked coconut and unsweetened chocolate) mix mix with coconut yogurt

    today’s is with almond butter instead of coconut butter and no flaked coconut.
    Since Fall is here, I was thinking an apple cinnamon or pumpkin cinnamon one is in order!

    Mmm…I love the breakfast cookie! My favorite is 1 banana, oats (maybe a 1/3 cup…I’m not sure, I never measure), peanut butter and carob chips.

    my favourite bfast cookie – 1/3 cup oats, one whopper of a spoonful of natural crunchy peanut butter, a sprinkle of cocoa powder and cinnamon, and pecan pieces all mixed with a lil’ rice milk, and on top is unsweetened coconut shavings.

    A trainer I used to work with, would always eat oatmeal, vanilla yogurt, and PB together everyday. I thought, hmmm, that’s kind of like the b-fast cookie, and tried making my own version. The yummiest one was also the least healthy one (heehee oops) and it contained oats, pumpkin, vanilla greek yogurt, some PB (so far so good) and choc chips and pancake syrup. (haha.) it was so good!

    If you search “breakfast cookie” on my blog, you’d see about 593 different entries! I even have gotten Ari to start eating them. You’re a genius!

    I’m a big fan of the PB&J cookie, which is your traditional recipe + a little fruit spread. I ALWAYS top them with cinnamon, and either fresh or dried fruit.

    Gina…I have your breakfast cookies every day and here is my combo which I call “chocolate covered strabwerry.” I use 1/2 cup oats, 1 tbs almond or peanut butter, 1 tbsp carob, 1 TBSP flax, 1 mashed banana, and 1 scoop brown rice protein. I mix it and spread it on the plate and then I cut up fresh strawberries and put them on top of the cookie. So delicious!!

    There is something good about be a straggler getting to my blog reading today…I get to read everyone else’s comments and recipe tweaks!

    I feel that everyone in bloggieworld knows that you’re the Diva behind the Breakfast cookie, and I linked you the first time I made one a few weeks ago, but since then I haven’t linked you, I hope that’s ok. I am a stickler for giving credit where credit’s due. I will link you the next time I make one, too 🙂 Well, I make one daily, I just havent blogged bout it daily. I have been liking it with Chocolate Sun Warrior PP. And a schmear of sunflower seed buttah on top is nice. But honestly, I think my fave is just protein powder (vanilla), oats, nanna, cinnamon, and agave. I omit both the milk splash and the nut butter going into the mix. That would make it too gloppy for me. I guess I must really mash the heck outta my bananas or something b/c that, and about 1 tbsp agave, is plenty o’ liquid.

    I’m a breakfast cookie addict! I’ve turned so many people on to your creation that it’s not even funny. My fav combos are chocolate almond milk and cocoa powder for a chocolate breakfast cookie and I also love to add coconut to make it like a macaroon! Good stuff, you SHOULD be proud, it’s such a fun way to eat oats for breakfast! 😉 Thanks Gina!

    My favourite breakfast cookie combo is 1/2 cup oats, 1/2 warmed banana, 1 scoop hemp protein powder, 1 tbsp almond butter, 2 chopped dried apricots, and a splash of almond milk. I like to top it with jam, sometimes two or three kinds 😉

      I made mine with chocolate protein powder and half a banana. I think I’ll make it again tonight!
