Back in the sun + meals, fitness

Hi friends! How’s your weekend going? Hope you’re haven a great one so far. <3 

I went from living and breathing March Madness to counting down the months until b-ball season starts again. Basketball season is officially over for us since the Cats lost last night. It was a tough game, but I am so proud of them.

(And hoping one day we’ll make it back to Tucson and will have tickets again. Definitely missed going to games!)

We ended up changing our connecting flight into San Diego so we’d be able to watch the game at home. Originally, we were supposed to have a 4-hour layover in Houston and spend half of the game, trying to stream the game on the plane home, but were so excited that there was an earlier connecting flight. Trying to stream the game on the plane could have been kind of stressful, and let’s be real, I’m already a stress ball of nerves on planes. (Though it is better when the Pilot is with me because I feel like he could land the plane if he needed to, and I can ask him about every tiny sound the plane makes haha. I’m sure he loooooves flying with me.)

Speaking of flying, the Pilot took our nephew Caden out while we were in Little Rock. It was a great guys’ adventure, and one of the many fun events we did while we were there.

We also ate SO much good food. Little Rock is really getting into the local food scene, and everything we ate there was amazing, with lots of locally-sourced ingredients. A favorite was Root Cafe, which includes produce and meats from local farms.

I also had a Winter Spice latte with almond milk, which was absolutely heavenly.

Usually after a vacation, I’m excited to get back into the swing of cooking and meals at home, but I feel like we were able to eat relatively similar (with more restaurant meals) as we do at home. I’m definitely going to be back in the swing of meal planning and prepping. 

Here’s what’s on the menu this week:

Lunches/snacks:

Green juices (green apples, cucumber, celery, spinach, lemon, ginger, mint)

Brownie batter protein bites

Avocado chicken salad

Chop veggies and make hummus

Paleo English muffins

Dinners:

Broccoli quinoa casserole

Pulled chicken and stuffed sweet potatoes

Honey glazed salmon with roasted veggies

Creamy shrimp and mushroom pasta

While meals have been good for the most past, I’m getting back into the routine with fitness. I very rarely have a problem sticking to my routine because I teach so often and switch things up with my personal workouts (which keeps things exciting!) but with being sick last week and traveling, I quite a few off days last week. It will feel good to be back into this week, especially since I gave myself some extra time to rest and recover.

Here’s what’s on the fitness plan for teaching and personal workouts:

SUNDAY: orangetheory (went this morning and it was AWESOME. It also ended up being mostly cardio, which is perfect since I teach BODYPUMP tomorrow.)

MONDAY: BODYPUMP + Spin

TUESDAY: OFF

WEDNESDAY: BODYPUMP + Zumba

THURSDAY: OFF 

FRIDAY: Barre

SATURDAY: Zumba

With yoga teacher training, our books strongly recommend a daily practice, so my goal is 15 minutes a day this week; nothing crazy, but enough to work on my alignment and meditate.

What’s on your fitness and food plan for the week? Are you planning and prepping? What’s the best meal you ever ate on vacation? As much as I loved the pizza, I definitely think it was the mussels and pasta in Italy. Brb I’m drooling now.

    I loved the food when I visited London. The berries and cream as well as the desserts were just amazing. I did some meal prep today with some basics to get started on the week. Staples usually include sweet potatoes, brown rice, chicken and grilled veggies. Hope you are getting settled after all the travel!

    Funny, one of the best meals I ever ate was at an Italian restaurant in San Diego, but I can’t remember the name (probably because I almost passed out from how good the food was). It was in the gaslamp quarter I think. Anyway, I had cioppino and it was 😀 😮 :).

    And then everything I’ve eaten in Germany is my fave, because BREAD and SAUSAGE and BEER.

      i hope you remember the name- there are so many italian restaurants down there! cioppino is soooooo good
      we need to make it out to germany sometime. that sounds like the pilot’s heaven 😉

    My best travel meal happened in Prague. I was vacationing with my mom and we stumbled upon this really cool vegetarian restaurant. It had the BEST hummus/veggie platter of my life, plus huge veggie burgers, giant salads, and incredible desserts. The decor and ambiance were perfect and we ended up eating there every day of the trip. This was five years ago and I still think about it all the time.

    Sounds like a great trip! I would so be the same if my husband was a pilot and ask him about every noise. Haha. Good luck getting back into it sounds like a great week ahead!

    when we went to nyc during restaurant week I had an amazing vegetable risotto. So much good food in nyc. Sorry but On Wisconsin!!! Final Four!!!

    I think my favorite vacation food so far was at atapas restaurant in Chicago called Mercat a la Planxa. I could eat the bacon wrapped almond stuffed fates everyday of my life!

    Welcome home!
    I am on a mini Spring Break from work and school. I am off of work through Tuesday (Cesar Chavez’s birthday is on 31st) and then no school all week!!
    I have more time to catch up on my to do list and more time to do elaborate meals!! YAY!

    I have been meaning to try Orange Theory but I can not get my butt there. Plus the idea of being a treadmill does not excite me.

      the good news about OTF is that the treadmill portion is over quickly! you’re always changing it up, so it doesn’t feel boring

    This week I’m starting my half marathon training for Disney’s Wine and Dine Half Marathon. I have to fangirl a little bit-I started HIIT training after I read your book and my mile time has decreased (YAY) and I’ve been meal prepping a lot of your recipes. I’m loving your Buffalo Turkey Meatballs. I’m making them with BBQ sauce and it’s foodgasm heaven. My favorite vacation meal was probably this amazing beets, goat cheese, turkey burger, arugula burger I had at a burger place called Buns in Chapel Hill, N.C. Delish. I was so sad, physically upset, when that meal was over.

    When I studied abroad in Greece, my boyfriend and I would go to this really tiny pita shop near his apartment that served the best gyros in the whole country (and we ate a lot of them so we’d know). I always got a vegetarian one and in addition to being topped with tzatziki it had the most heavenly sauce on top of that. I have zero clue what was in it but it was almost smokey, like a Greek version of a chipotle sauce. Regardless, that was definitely one of the best things I’ve ever eaten and I hope I get to go back and have them again! For anyone who is wondering, it’s a shop called Maria’s and it’s in Kolonaki in Athens. This was 6 years ago so hopefully it’s still there 🙂

    I’m the same flyer as you! I feel slightly better when an off duty pilot is seated near me so I can bug them about every little thing or watch their face to know if I should be worried or not.

    Your weekly meal plan looks great! I have a bunch of avocados and should try that salad.
    Brownie bites, protein waffles, smoothie packs are on my to make list. Dinners are slow cooked chili lime chicken with lots of Guac for my kids, roasted turkey, sweet potatoes and broccoli. Turkey meatloaf-extras for freezer and meatballs for freezer grab and go meal.

      haha i’m so glad i’m not alone! i’m always STOKED when someone in a pilot or flight attendant uniform is seated next to me

    The best meal I have ever eaten on vacation was on our honeymoon in Hawaii. We did a private dining night in a little hut overlooking the ocean and the food was absolutely fantastic. I’ll never forget that!

    My best vacation meal was some fresh fish cooked over a wood fire on an island in Lake Nicaragua! I’m sure it was caught in the lake that day! The fish came out whole which was a surprise, but I quickly learned how to eat around the bones. It was seriously so good.

    Glad you had a good trip! My workout plan this week is to teach a couple classes, then take some, then get some more running in since my half is coming up in May!

    Since youre always taking about acai bowls, one of my favorites was getting them freshly made in Brazil. So amazing!!

    I studied abroad in Rome during college and nearly every meal was the best meal I’ve ever had… If I HAD to choose one meal, I’d pick the most amazing pesto pasta dish I ate while traveling to Venice (and now I’m drooling, haha ;))

    As much as I love to travel and visit family, this homebody is always so so happy to be back home in a routine. The first night back in my bed…bliss!

    I’m interested to try the paleo english muffin recipe! Have you made it before?

    The tomatoes in Greece are RIDICULOUS. I hated tomatoes growing up and was definitely a brat about it but that all changed when I had some of the tomatoes in Santorini. If tomatoes in the U.S. tasted like those from Santorini, I would have those as my snack all the time!

    Best meal on vacation was a MamaSan in Bali. OMG, I dream about that place! So good we went twice! I don’t remember what we had because it was so unique, but it wasn’t at all weird and totally delicious both visits!

    I am super interested in those Paleo English muffins. We’ve eaten pretty close to Paleo for many years now. It’s so hard to hit some of these recipes consistently, which I know is a common problem. I just stick to the Ezekiel lines because they’re super clean, legitimately quality grains, and my kids will eat them without a complaint!
