Berry Chia Pancakes

Today I’ve got a delicious and healthy way to change up your pancake game–berry chia pancakes! Fresh or frozen berries work, so you can enjoy them any time of year whenever you need a taste of summer.  First, here’s what we’ve been up to lately.

What We’ve Been Up To

The other day was Megan‘s final dress fitting. I’m going have to remind myself not to dinosaur cry when I’m watching the actual ceremony- she is the most gorgeous bride.

Ok, so they’re quincenara dresses. 😉 We always have a little bit of fun when we go to the bridal shop.

I checked out a space for an event that I’m planning with a friend:

and Liv and I have been hanging out at home, staying in from the wind (a weird storm front came though), playing and enjoying some home-cooked treats and meals together.

With the arrival of spring, I always change up my eats. I’m ready for smoothies, more juices, crisp, cold salads and all of the glorious summer fruits and veggies.

I especially look forward to fresh berries… particularly cherries.

The frozen ones are good enough to hold me over until they’re in season, but the fresh ones? A giant bowl doesn’t have a chance between the Pilot and myself.

for some reason chicken with cherries and goat cheese just flashed through my brain even though I’ve never had it (doesn’t that sound awesome?!)

Liv is a pancake and waffle fanatic–she LOVES them! I’ve been thinking of ways to change them up–she’s had banana-zucchini, sweet potato, banana and blueberry varieties–and thought it would be fun to add in some chia seeds for extra nutrition; especially since about half of her scrambled egg ends up on the floor these days.

I made these pancakes, then put the remainder of what we didn’t eat into the freezer to quickly heat and enjoy later this week.

We both loved them, especially with a nice drizzle of pure maple syrup.

These pancakes have a light, fluffy texture with a subtle amount of sweetness. They’re also gluten-free and dairy-free!

Ingredients

Scale
  • 1 cup brown rice flour (worked so well for this recipe, but you can use your favorite flour)
  • 1 tsp baking powder
  • pinch sea salt
  • 1/2 banana
  • 1 egg
  • 1 tsp chia seeds
  • 1/2 cup fresh or thawed frozen berries
  • 2/3 cup milk of choice (I used almond)
  • 1 tsp vanilla

Instructions

  1. Heat a sauté pan on low while you make the mix.
  2. In a large bowl, whisk together the dry ingredients (flour, baking powder and salt) to combine.
  3. On a small plate, mash the banana with the chia seeds.
  4. Plop the banana mixture into the dry mixture, add the egg, milk and vanilla. Whisk well.
  5. Add a little coconut oil or butter to your pan, then using an ice cream scoop or 1/4 cup bowl, scoop your first pancake into the pan.
  6. Cook for 1-2 minutes on the first side, add your berries and flip.
  7. Cook the second side until browned to perfection. And, if you’re like us, cook as you eat 😉

Pancakes or eggs? I’m more of an egg girl myself, just for the fact that pancakes take a little longer to prepare. This is why it’s a great idea to freeze a large batch to enjoy for the week.

    Oh yum! These pancakes look awesome! I wonder if they could be made with just chia and a chia egg, minus the egg. I have an allergy to eggs, so it’s a no go for me.
    I’m more of a pancake girl clearly, since eggs are off the table;)

    Your comment about half the eggs ending up on the floor made me smile because I can imagine the cleanup crew (aka pooch duo) sweeping right in and taking care of the breakfast casualties. 😉

    I like eggs for nutrition and satiety purposes but love to enjoy some pancake fluffiness every once in a while. If I have leftover pancakes, I freeze them and then pop them in the toaster to reheat. Kinda like a homemade leggo my eggo!

    I actually think all those bright, cheerful colors would make great bridesmaid dresses!

    My mother gave me a recipe for blueberry banana buckwheat pancakes that are crazy good and gluten-free too. I’ve made so many batches over the last couple weeks but I like the idea of adding chia seeds to the batter. I need to give that a try!!

    Mmm the texture of these pancakes looks perfect. I love the ingredients list too – they are going on my must-make list! I love pancakes but yes the time they take to prep is annoying so I usually freeze some too. Some days I feel like eggs – mainly on the weekends when I eat a bit later though!

    I totally suck at making pancakes, but have slowly been working my way into learning how to make them correctly. I’m an egg girl. Love them any which way 🙂 But there’s something about pancakes that’s alluring. Especially sprinkled with healthy fruits.

    I love cherries too. We got blossoms on our trees outside and am looking forward to picking them early summer 🙂

    We have three cherry trees in our yard and I can’t wait for them to bloom! Of course, the foxes and squirrels think they are there for them but I try to pick them as soon as they’re ready. We also have raspberry, blackberry, and blueberry bushes as well as a strawberry patch. Last year I literally made myself sick from just standing in the yard and eating raspberries right off the bushes. Soooo good!

    I’m a pancake and eggs at the same time kinda girl 😉

    I saw those dresses and was like “OMG … best wedding EVER!”

    I’m totally making baby amazeballs for the Squish. Perfect travel food!

    We’re a huge egg family over here. Every morning I make a big frittata for everyone with whatever veggies we have on hand. I don’t even use the oven; I just put a lid on the skillet and let the steam cook the top. Quick and easy for weekday mornings!

    Hi Gina – do you freeze these in Zip-Loc bags or wrap in foil or…? I am still trying to figure out the best way to freeze things. And any idea on calorie count per pancake? I’m not usually a calorie counter but have found counting calories the last month has helped me a lot with weight loss.

      i separate them with parchment paper and freeze in ziploc bags. not sure of the calories, but spark people has a calculator you can use

    Hi Gina, I made these delicious pancakes substituting the brown rice flour with buckwheat flour this morning and found them to be very delicious. I haven’t been too successful in my previous attempts with various pancake recipes so I was over the moon that they worked out.     Oh, I love berries, and this recipe is going to be my favorite. I will be trying this tomorrow in the morning breakfast. I hope my kids would love these pancakes, too. By the way, I also do Zumba daily, right before breakfast, for hardly 5-10 minutes because this is the max I can do. Lol!
