Betty Crocker it up

Hey! Happy humpday!! Hope you’re all doing well 😀

I’ve been much less of a klutz today, which has been bueno, and didn’t have appointments at the gym, so I split up my day between making foodie for tonight and lounging poolside. Lovely balance of work and play 😉

I had a green juice of spinach, cucumber, apple and pear:

And the usual combo of banana and AB and Ezekiel:

Then, it was little Betty Crocker time! I cleaned the casa, chopped all of the veggies I’ll be using tonight and also made my favorite Tuscan White Bean dip

The sauce for the calzones (2 cans San Marzanos tomatoes –1 can whole peeled tomatoes that I smash with the spoon and 1 can crushed, 3 cloves of garlic, two bay leaves, a small yellow onion, EVOO, sea salt, pepper, fresh basil, rosemary and oregano)

The same artichoke dip that I made the other night from ED&BV. It’s soooo good and very garlicky

I made the vegan chocolate chip cookie dough for the pizookies:

Those pizookies are going to be total food porn. Get ready 😉

I had a macaroon-flavored Larabar for snack to keep myself from eating too much dough:

And spent a beautiful hour floating on my raft –not the alligator one, the recliner one- in the pool with a good book. My friend Emily came over to say hi, too 😀

When I got back in, I wasn’t the least bit hungry (maybe the heat did it?) so I made a smaller-than-usual salad beast with greens, cucumbers, red bell peppers, tomatoes, 1/2 avocado, lime juice, salt and pepper, topped with a hunk of goat cheese.

(My camera has a blurry spot from the artichoke dip fogging it up and me rubbing it with my finger.. might have to get that off. Sorry!)

I’m off to work on Zumba dances and then teaching spin and Zumba. I’ll be back at the casa for girl’s night but un-bloggable due to copious amounts of red wine, so I’ll see ya in the morning with all the pics.
