Cardio Cabin Fever

Hiiiiiii 😀 Hope your Monday is treating you well! My day has been very chill.. lots of resting and icing the ol’ knee. It doesn’t feel like I actually injured it, but it definitely didn’t like yesterday’s race very much.

I forgot to show ya’ll what the race shirt looks like:

The pilot didn’t have to work until later this morning, so while we hung out, I made some kale chips.

I used my version of a recipe from 105degrees, but a similar one can be found here

Basically you make the sauce in the Vitamix:

ingredients

Plop the sauce into a bowl, add the kale (washed, ribs removed and torn into large pieces) and gently massage until the kale is fully coated with cheezy goodness

Spread the kale onto Teflexx sheets (and be careful not to smash them- they’re better fluffy) and dehydrate for 12 hours at 115*

After 12 hours, flip them onto mesh screens and continue dehydrating for 8-12 more hours.

I may have had a few warm ones out of the dehydrator already… I can’t help myself 😉

Jeni and I met up at the gym for some weights (no cardio for this girl today.. which is STINKY because it’s gorgeous outside!!!). We did some fierce shoulder, upper back, chest and ab work, then hit up Main Squeeze for smoothies.

I got the usual Tropical Superfood with vanilla Sun Warrior, spirulina and 1 T chia seeds that I brought in a baggie.

Some of the rest of today’s eats included:

Raw zucchini noodles with spicy almond butter sauce (almond butter, Nama Shoyu, garlic, cayenne, rice wine vinegar), carrots and scallions

I’m off to take a seaweed bath (more on that later, haha) to see if it will help my aching leggies a little. While I’m doing that (and hating life- I hate baths…. showers are much more efficient and enjoyable), it’s GIVEAWAY TIME!

    Going to try the kale chips next time I buy kale 🙂 I have been lurking and wondering why you use mesquite? Are there benefits I’m missing or is it simply a taste thing for you?

    I haven’t tried kale chips yet, either. I don’t have a dehydrator (can’t even imagine where I’d store it in this teeny kitchen), but I’ve heard you can make them in the oven…do you ever do that? Are they almost as good?

    Oh Gina one thing I was going to recommend for leg pain (or somewhere else pain–not just legs) is going to an acupuncturist–keep reading! I think I read before you’re not really big on needles, but they can use ear seeds (it’s a mustard seed on a sticky thing that they stick on strategic places in the ear) and it might help you. I wouldn’t say it if I didn’t have experience–my mom and family came to see me and we were doing a big day of tourism. she’s had knee pain for over 5 years from a car crash injury and she also was skittish of the needles so I palpated in her ear and placed a couple of seeds in places that might help and sure enough she was more than able to get around really well that day whereas before she would have been very restricted in her activity tolerance. Just a thought! Good luck with the seaweed. I’ll be interested to read all about it.

        LOL, I was going to say the same thing! I sure hope your legs feel better! I always feel better if I get some walks in when I’m really sore, it helps get the blood moving, but doesn’t overexert the muscles.

    I love, love kale chips 🙂 I only do mine up with a spray of olive oil and some sea salt, though. Yours look yummy!!

    Your shirt is so cute! I really want to run in a Disney marathon next year, but the full is too much in January as I would have to train my hardest in the Northeast outside in the cold in December. No thanks. But a princess half in March is doable! If only for an awesome shirt!

    Completely unrelated to this blog post but my dog just had a seizure today and I remember reading a little while back that Viesa (sp?) had a seizure! This if the first time its happened and it scared the HELL out of me…I really thought he was dying. Any advice you have?? He seems fine now…just a bit dazed and exhausted. Hope Viesa has been doing well!

    And I found various stores online that have the mesquite so I’m thinking I’ll be buying some of that soon. Just dying to try it out! Along with chia seeds, maca and the list goes on haha

    ugh I hate baths! so dirty, I think I would have to take a very thorough shower before a bath and clean the tub in order to enjoy it. I have to give the kids I babysit baths and the water is always so yucky, it makes me cringe to think about.

    congrats on your run! have you tried epsom salts? they are excellent for achy muscles! add at least 2 cups to your bath. you can find them at any drugstore.

        forgot to say-also add a few drops of essential oils to make it more yummy & enjoyable:). lavender, ylang ylang, geranium, grapefruit are some of my faves!

    Do you ever worry about what running will do to your knee joints in the long term? This has been the one thing that has kept me from giving running/jogging a big place in my workout regimen, even though I would like to do it more. Is it one of those things where the benefits outweigh the risks? What kinds of things can you do to reduce the risks?

      nahhh- especially since i don’t run very often. usually, i’ll just run once maybe twice a week.
      the main reasons why runners get injured is that they do too much, too soon, too often and don’t allow enough time for rest. i think that if you’re smart and add mileage and speed slowly, and give your body time to recover, running isn’t any more dangerous than any other sport.

    I made Averie’s cheezy nacho kale chips yesterday! Love them! I don’t dehydrate mine for that long (I do 8 hours on sheets, flip and go for 4 more hours). They’re wonderfully crunchy and cheezy today!
