Chocolate Hangover

Morning friends! How are you? Thanks for the sweet comments on our Easter celebration– it was amazing, for sure <3

Anyone else nursing a chocolate egg hangover? Yeah, me too 🙂

To balance out some of the sweet treats we enjoyed yesterday, cheffer made us a healthy dinner.

It was SO delicious. My bro has been off work for a few weeks since he had knee surgery, but goes back this week. I told him that he if he wants to practice cooking a few more times before he goes back, I’m his girl 😉

Washed dinner down with two more dark chocolate eggs — Easter only comes once a year 🙂

After dinner, my mom, nana and I went to see Just Go With It. I was wondering if it would be any good because it was one of those movies that I didn’t hear a single thing about, but we loved it. Warm, fuzzy and funny.

As lovely as my Easter was, I’m thinking Viesa’s may have been even better.

Her family put together an egg hunt just for her 🙂

They taught her how to pop the eggs open with her teeth, so they fill them with treats and have her hunt for them.

It’s basically the coolest and cutest thing I’ve ever seen 😀

This morning, I was excited to try something new for b-fast:

crepes

Caprese crepes!

I used my standard crepe recipe with quinoa flour, and while the crepes cooked, I sautéed some onion and baby tomatoes.

Topped each crepe with sundried tomato goat cheese, the onion and tomato mixture + fresh basil

and rolled ‘em up!

Deeeeeelish.

Lot’s of to-dos today. I’m off to get crackalackin 😀

    I love that last pic of Vies lickin her chops!! that was the cutest idea. My dog loves to open nuts, she probably could have opened the plastic eggs…I’ll have to remember that for next year!

    Vies hunting the Easter Eggs is pretty much the cutest thing I’ve ever seen!

    Definitely having a chocolate hang over, especially since that’s what I gave up for Lent. I went nuts!

    Those crepes look amazing! I have a quick question. I am having ACL reconstructive surgery on June 30th. Do you know if your brother chose to use cadaver or his own hamstring to repair his ACL? I am trying to decide which option I should do. It seems like hamstring is favored but the recovery is more difficult.

    I love that first shot of your brother. The tattoo + the skilled care he is taking with the knife on the fish…sort of unexpected sight. Then again, many chefs are covered in sleeves. The artsy, creative set often times is 🙂 The first looks great but I love that shot! It reminds me of some of the shots in Sarma’s second book.

    That is really sweet for Viesa’s family to create an easter egg hunt for her – don’t you feel happy that she is so loved! We always wrap Christmas gifts for our puppy but he’s so good, he has a hard time destroying anything – even if we want him to! Crepes look amazing. Have a really nice evening – my husband did a bunch of laundry on his lunch hour so I get to have a sock matching party tonight! Take care.

    Our lab had her own egg hunt by robbing the kids baskets & helping herself to chew up plastic eggs! I’m addicted to the chocolate robin eggs. Salmon & crepes look tasty.

    I had a serious sugar hangover yesterday, but it was more due to the large amount of ice cream I consumed on Sunday night. A few of us girls decided to hang out after our church’s Sunday night service and play Apples to Apples…and eat ice cream. The resulting sugar high made the game hilarious, because we got LOUD. Haha.

    I love crepes – my grandmother used to make them (in a Scandinavian dish called lefsa) and I’ve never been brave enough to try to make them myself! She took a remarkably long time making them (all day, sometimes), and I think it totally intimidated me! Plus, her’s were always high in sugar and fat – I just assumed I couldn’t make a healthy version! These look amazing – and it looks like you make them in a “regular” pan? I think it’s time for me to give them a try!
