Delicious Day

Hey everyone! Looks like ya’ll want a Flip cam! 😀 I love reading all of your comment entries– you guys have some hilarious, creative and awesome ideas. Especially the one about pulling Uncle Jesse from Full House out of the TV… Haha! Lurve. Keep those entries a-comin’ and I’ll announce the Flip winner in the morning 🙂

Today has been a delicious day.

I’ve been surrounded by glorious vegan treats!

To keep myself from too much “quality control” taste testing, I had a perfectly balanced b-fast.

Oat bran with bananner, blueberries, almond milk and Sun Warrior.

+ 2 egg whites and nutritional yeast

I had to pack up the ‘roons to send to Erin from Angela’s Shop 4 a Cause and I decided to make a batch of Supercharge Me cookies (from Eat, Drink and Be Vegan) to throw in the package 😉

I add goji berries, vegan dark chocolate, extra almond butter and lots of cinnamon

and make some HEFTY cookies! These things were massive – just the way a cookie should be 😉

I packed up the blonde macaroons, cacao almond butter stuffed macaroons, and 4 cookies (2 are for my boss –she loves vegan treats- and 2 are for Jeni and her pilot), for Erin, along with some other fun stuff.

Next, I made the tart shell for a raw strawberry tart and put it into the Excalibur to do it’s dehydration thang.

I used Matthew Kenney’s recipe and am hoping it looks just like the pic on the right when it’s finished 😉

And since it’s a day that ends in “y”, I had a chocolate cherry bomb with maca and spinach:

I’m off to INSANITIZE (haha) and then head back to work.

Today’s tip: Alternate the type of greens that you buy each week. It’s a great way to change things up and get different nutrients in your diet. My faves: swiss chard, spinach, arugula and kale (in raw chip form, haha).

    Your tart shell came out so perfect! Anytime I try to make a tart, my shells are a disaster. I’m calling you next time to make me one!

    i have organix swiss chard, arugula, spinach, and frisee last night! it was heaven. also – that box of goodies looks fantastic!! she is one lucky girl!

    OK I was gonna leave a comment about all the amazing food up in this post but then I got to the end when you said “Tonight is a GLEE night” and my brain went blank. Where is my mind!?!! I forgot it was Glee! So excited!

    U are quit the macaroon goddess!! Love it! Im sure the person who won purchased those for Angelas Shop for a cause are going to be in heaven after eating those, and how sweet the other goodies you put in there!!!! I spy a ginger chew!!!!! Ahhhhhhhhhhhh love those dang things!!!

    That’s so cool to dehydrate a tart crust – i never even thought of something like that. I am impressed if you didn’t do a lot of quality control with those delicious looking treats – I sure would have!

    What is different about millet bread? taste, texture? I’m curious, it’s pricer than others….wondering if it’s worth it for me to take the plunge. =)

    Have you ever given you recipe for the macaroons? I wouldn’t be surprised if it was top secret…. =) No worries if that’s the case…Just didn’t know if I missed it. lol

    I have a question about the elliptical machines. I just tried it out for the first tonight and I did your elliptical workout. But, when I tried to go super fast, I felt like I was about to fall off because my heels kept coming up. Also, are you supposed to straighten your knee or keep it bent because it felt kinda weird sometimes during the workout since it kept straightening out.

      try to always keep your knees slightly bent. if your legs are going too crazy when you speed up, you may need to add more resistance for more control- make sure to push down as you pedal
