Din for the win

Last night when the Pilot got home from work, I had showered and was wearing real, non-workout clothes

(a feat when you’re fighting fatigue)

and tonight, dinner was ready and waiting.

I’m on a roll, friends 😉

The Pilot LOVES pulled pork, but it’s one of those things that I don’t think to make until it’s too late, and it needs all day to cook. Since I planned out some dinners for this week and did a big grocery shop, I was prepared. Bonus: the slow cooker does all the work.

-1 pork tenderloin

-1/2 chopped sweet onion

-1.5 C veggie broth –Coke is actually best, which sounds weird, but we didn’t have any on hand

-BBQ sauce

-Cooked on low for 7 hours, shred the meat and add the BBQ sauce. Super easy, he loves it, and there’s always some leftover for him to take for lunch the next day.

He enjoyed his pulled pork sandwich with salad, broccolini (with garlic, sea salt, pepper, and grated goat gouda), and a sweet potato

and I munched the same sides, with a BBQ Sunshine burger.burger

Miss Bell even got her own sweet potato.. she was very happy.

The Pilot has been cooking a lot of our dinners lately, which I appreciate so much. The other night we had an awesome chicken meal, courtesy of his mad grill skillz.

Mine was stuffed with goat cheese and pesto, his was stuffed with cheddar and wrapped in bacon.

+ kale salads and grilled corn

It’s funny how I used to not like corn.. and then we got a grill. With butter, chili powder, garlic, lime juice and sea salt, it’s pretty much the best thing ever.

We just got home from class and are going to call it an early night <3

    I just got a little mini crockpot so now I want to try making my own pulled pork.
    Also, a friend of mine went on holidays and left me with her veggies which includes kale. I’ve never used kale before so may have to try making a salad with it. Hope it’s yummy!

    the sweet potatoes and broccolini look amazing! i’ve been struggling with making dinner recently when my guy is over, because he is not interested in eating only vegetarian, and i’m not really interested in cooking meat. :p

    You mentioned all the good stuff you put on your corn – how do you do it? Do you shake/squeeze each item on individually, or do you make a marinade/baste for it?

    The pulled pork does look tasty. I never think to make it but am a HUGE fan of crockpots. I need all the extra time I can get and late nights in the kitchen making dinner are too frequent lately. :\

    My BF is a big pulled pork fan too. And I have always heard my friends say they use various sodas to make it more moist in the crock pot. And I don’t think I’ve ever had broccolini, but it looks delish the way you prepared it ! Will have to look into finding some ! ^__^ The BF made backstrap last night (from his hunting catch this year) and I made a healthified version of honey walnut shrimp and snow peas. (: (After we got in an Insanity plyo disc workout ! d: )

    An idea you both might enjoy is pulled chicken – I put frozen chicken breasts in the crock pot cover with whatever bbq sauce you like and cook for 5 hours – drain off water sauce, shread and re-coat with sauce on high for 1-2 hours and then you have delish pulled chicken, which I like because I don’t eat pork!

    Have you ever made the slow cooker BBQ with chicken instead? We’re not really pork eaters, but having recently abandoned the South, I am seriously missing some BBQ in my life + I’m always on the hunt for an easy slow cooker recipe.
