Easy Grilled Pizza

One of the things I quickly realized during our last (first!) Italy vacation was the beauty of food’s simplicity. Quality ingredients can go a loooong way, and don’t need to be bogged down with superfluous oils and seasonings. If you use fresh ingredients, the natural taste of the food can truly shine. I learned a lot about the types of food I enjoy on that trip (in Italy this would be: all the foods) and new ways to enjoy and prepare certain dishes.

For example: pizza.

Nothing in the world will be as good as REAL Italian pizza, but I did learn that it’s more delicious at home with high-quality and simple ingredients.

I noticed that fellow diners would look at us kinda funny if we ordered a pizza to SHARE. (<– or maybe that was in my brain?) I guess you get your own pizza and nicely eat it with a fork and knife like a civilized person. My face plant probably alarmed some people.

Yesterday, the weather was beautiful, we knew we’d be enjoying some pizzas, and I cooked them on the grill. I suddenly decided I want to learn how to grill, so I’ve been all about testing the proverbial waters. Thank goodness the Pilot has been here to literally put out the fires.

Easy grilled pizza

Pizza is pretty amazing on its own, but cooked it on the grill with a cracked egg on top, and it’s kind of the best thing ever.

  • Cook Time: 20
  • Total Time: 80

Ingredients

Scale
  • Dough of choice, prepared and ready to go (on a cookie sheet or pizza stone, round, flat and lightly sprayed with olive oil on both sides).
  • 1 28-oz can San Marzano tomatoes: tomatoes roughly chopped and sauce reserved
  • Cheese of choice (mozzarella and goat cheese are lovely options)
  • Fresh basil
  • Peeled garlic 35 cloves), olive oil, salt and pepper
  • 2 eggs

Instructions

  1. Preheat the grill to medium high heat.
  2. Carefully slide the pizza dough onto the grill and shut the lid. Check on it in 5 minutes. The bottom should be nicely browned (<-- if not, put it back on the grill and check again in a couple of minutes). Using a large spatula, flip the dough onto a plate GRILLED SIDE UP. This is the side you're going to top.
  3. Lightly spray the grilled top with olive oil and rub the raw garlic cloves on the dough to give it a beautiful aroma and flavor.
  4. Top with tomato sauce, chopped tomatoes, cheese, salt and pepper. If you’d like, crack an egg into the middle of each pizza.
  5. Place the pizza(s) back on the grill (doughy uncooked side down) and shut the lid once more. Check on the pizzas in 5 minute intervals, until golden brown and the egg is cooked to your preference. (As you can see in the above picture… I kind of burnt the dough. Liv woke up from her nap and I spaced it. Good thing we all like toasty crust around here haha)
  6. Top with fresh hand-torn basil.

Notes

  • For a protein boost add some anchovies, prosciutto or sliced chicken

    YUM! I could dig into that pizza right now. My favourite thing to make on the grill is potatoes! Chopped potatoes and onions with garlic and butter, wrapped in foil, and grilled to perfection. A taste of summer! 😀

      i really like the bob’s red mill mix. i tried making one yesterday with tj’s gf flour and almond meal, but it wasn’t my fave

    I do about 95% of the cooking (in the kitchen) but 0% of the grilling. It just snowed in Chicago last night so it’ll be a while, but I can’t wait for grilled chicken and zucchini.

    I miss grilling days. Sadly, no grills are in my life in San Francisco city living. But, I enjoyed throwing big veggies on the grill. This pizza looks excellent. One day! 🙂

    I just loved this: foods “don’t need to be bogged down with superfluous oils and seasonings. If you use fresh ingredients, the natural taste of the food can truly shine”. It’s nice to step back and truly enjoy the food itself other than it’s seasoning!

    Also, although I loooove hot sauce, I’ve been trying not to go to crazy with it. Sometimes all I can taste is hot sauce! LOL! This actually works in your favor if what you’re eating isn’t the best however 😉

    Mmm grilled pizza. That sounds amazing! I’ve never had an egg on top of my pizza, but I’d be willing to try it 🙂 My parents went to Italy a few years ago for their anniversary and they cycled through Tuscany. Ever since, they’ve been making homemade pizza and pasta, because apparently that’s just what happens when you come back from Italy! (I studied in Greece but didn’t make it to Italy, so I’m still ok with Dominos 😉 ). Have a great one!

    I have never had an egg on pizza. Not sure how I feel about it. But we definitely need to try grilled pizza this year!
    If it makes you feel any better, people looked at my husband funny (and even giggled) in Paris when he was eating French fries. We couldn’t figure out if it was because he was eating them with his fingers (vs. a fork) or because he had them with ketchup (vs. the more traditionally French mayo). Either way, I wanted to point out plenty of their silly eating habits as well. And I’m a Frenchie.

    Good timing. I asked for a pizza stone for the grill for xmas and noticed it unused in my pantry yesterday and wondered why the heck I wanted it.

    Grilled pizza is our Friday night staple! We even shoveled off our deck in the winter so that I could get to the grill, because it is SO WORTH IT! If you grill the dough with no toppings, it is perfect fake naan to go with Indian food too!

    I am so the grill master! My husband pretty much leaves it to me until he has to assert his manliness with steaks. I’m a little bummed that we won’t be doing much grilling this spring/summer as we are apartment dwellers with no outside space. Looking forward to closing on our new home and having the grill fired up again soon. I love to do kebabs on the grill. Healthy, quick cooking, and even faster clean up!

    Loving this pizza. I am all about different variations when it comes pizza. My husband loves pizza and I am always wanting to grill the pizza, I think this might just give me the push to try it out!

    I do most of the cooking inside, but yay for summer because my fiance is 100% the grill master! These pizzas look divine, but I’m just not sure about the egg on top! I love crispy crust pizza, so I’ll be leaving mine on longer on purpose 🙂 Which dough did you use?

    I think the egg on top of pizza idea is so interesting. I’ll have to try it out sometime to see how it tastes. Which reminds me that I should make homemade pizza more often, so good!

    We LOVE grilling pizzas! That’s the routine pretty much every Saturday over here. Its a fun tag-team dinner to switch it up since I normally cook solo. We had a pizza party for my birthday last year and grilled about 15 big pizzas. So. Fun.

    I lived in Florence, Italy for a year and YES it is strange to SHARE a pizza! True Italian pizza isn’t heavy, greasy, or laden with ridiculous amounts of meat and cheese. It is balanced and perfectly fit for one person! And people wonder how the Italians stay thin. You know the scene in Eat, Pray, Love where Julia Roberts eats a pizza in Napoli? That was me…almost every day. I would love to see the Italians react to our deep dish pizzas! I doubt they would even call that pizza, haha.

      Well, let’s say we call it…American-style pizza 😉
      Generally speaking, 1 pizza is for 1 person. If you’re not particularly hungry, you can either ask for a smaller one (called “baby”) or just leave/take home what you can’t eat. Doggy bags are not that common in Italy, but pizzerie typically have boxes because they usually offer also take-out service, so it’s a bit more frequent to see people taking home leftover pizza. It’s not comparable to the US, though!

    This looks really good! I’d like to add this recipe to our summer bbq rotation… I think it would be a hit! I’ve never heard of an egg on the top. What is your preference for the egg? Cooked all the way through or a little runny?

    I NEED to learn how to grill! I live on my own again, so it’s a must!! I love prawn-skewers on the grill or salmon.

    I love grilling pizza! I think it’s so much easier that way than in the oven too since I just put mine directly on the grill like you do. It’s always interesting to see what shape it ends up in–definitely never round!

    Grilled pizza sounds delicious! I love fresh basil. I currently don’t have a grill, but I always love to make marinated grilled chicken when I’m at my parents’ house. Next time I’ll be grilling pizzas 🙂
